I would classify this easy shepherd’s pie with Campbell’s soup as a 4-ingredient recipe, but making those mashed potatoes so silky and buttery is necessary!

Combine beef, 1/2 can soup,chili powder, cilantro, black pepper, corn and red and green peppers in 2 qt shallow baking dish. Stir remaining soup into potatoes. Spoon potato mixture over beef mixture. Bake at 400°F , uncovered, until vegetables are tender about 20 minutes.

Shepherds pie originated in Ireland sometime in the 18th century, probably. Theres no single person or event to trace its history to, but we know it came about in Ireland under British control. Traditionally, shepherds pie was leftover roast lamb or mutton repurposed with a top and bottom crust of mashed potatoes. This helped stretch the familys food supply when times were lean, which was pretty much the entire 18th, and 19th centuries if you were an Irish Catholic.

Shepherd’s Pie Daddy’s Way

This is a no nonsense approach to Shepherd’s pie with just the basics. Ground beef in a mushroom gravy, topped with cheese and mashed potatoes.

5 medium potatoes, peeled and chopped
1 pound ground beef
1 can condensed golden mushroom soup
3 teaspoons butter


  • Preheat the oven to 375 degrees F .
  • Place the potatoes into a large saucepan with enough water to cover. Bring to a boil, and cook for 8 to 10 minutes, or until tender. Drain, and mash.
  • While the potatoes are cooking, crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off the grease, then stir in the golden mushroom soup. Transfer to an 8 inch square baking dish, and place the slices of cheese over the meat. Spread the mashed potatoes evenly over the top. Dot with butter.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown.

  • Gradually stir remaining broth into pan stir in peas and carrots. Bring to a boil reduce heat to medium and cook, stirring often, for 5 minutes, or until thickened.
  • Preheat broiler.

I usually only eat Shepherds Pie when its on the menu at a restaurant, but this version is so quick and easy that I could make it at home. This is comfort food, and would definitely be welcome on the dinner table. When making this, I would use lean ground beef and Healthy Request cream of mushroom soup. Instead of using mashed potato flakes, I would make my own mashed potatoes.

Oh my word does this look delicious! Nothing screams comfort food like Shepherds Pie. This recipe sound very similar to the one I grew up eating. Im wondering if you could substitute any kind of cream soup instead of cream of mushroom? Im just not the biggest fan of mushrooms. Maybe a cream of cheddar? Something I like to do with my Shepherds Pie is to sprinkle a tiny bit of parmesan cheese on top of the potatoes. It gives the toppings a little bit of crunch. So good.
