How to make keto vegan carrot cake | Keto vegan gluten-free

You will find full instructions and measurements in the recipe card at the bottom of the post. This is a summary of the process to go along with the process photos.

  • Sift all purpose flour into a mixing bowl and add baking powder, baking soda, salt, cinnamon and nutmeg. Mix together.
  • Add light brown sugar and grated carrot to the mixing bowl.
  • Prepare your flax eggs by adding 2 tablespoons of ground flaxseed meal to a bowl with 6 tablespoons of hot water. Let it sit for a minute to become gloopy.
  • Add the flax eggs, oil, vanilla extract, apple cider vinegar and chopped walnuts to the mixing bowl.
  • Mix everything together. If it seems like it wont come together and the mix is too dry then step away from the bowl for a couple of minutes and then come back to it. The carrot will have released more moisture into the batter allowing it to come together into a thick batter.
  • Divide the batter evenly between two cake pans .
  • Bake at 350°F for 30 minutes or until a toothpick inserted into the center of one of the cakes comes out clean.
  • Let the cakes cool in the pans for a few minutes before transferring them to a wire cooling rack to cool completely before frosting.
  • When the cakes are cool, frost and decorate with crushed walnuts.

Vegan Cream Cheese Frosting

Beat room temperature 8 oz cream cheese or homemade Vegan Cream Cheese with 4 oz butter spread or coconut butter, 2 cups powdered sugar, and 1 tsp pure vanilla extract.

Add a little nondairy milk of choice as needed. For reference, this recipe yields about 2 cups of frosting, and I used about 1/2 cup of frosting on each of the layers of the carrot cake in the pictures.

Quick And Easy To Make

Incidentally, I think that this vegan carrot cake is really super quick and easy to make. All you have to do is grating the carrots and stir them together with the other few ingredients. Then it goes into the oven, which does the rest. Afterward, you can garnish or decorate the cake as desired. Of course, if you dont feel like that, you can just eat the cake without any toppings at all! Although, I honestly think that you should at least spread the creamy frosting on top because it tastes so good! Optionally, you can decorate the cake with a simple lemon icing glaze or a marzipan fondant. Just be creative!

For The Vegan Cream Cheese Frosting:

  • Vegan cream cheese Take it out of the refrigerator when youre ready to make the frosting.
  • Vegan butter The butter, on the other hand, should be room temperature.
  • Vanilla extract
  • Powdered sugar Sift the powdered sugar after you measure it to keep lumps out of your frosting.
  • Chopped walnuts These are for garnish, so you can leave them out if you prefer.

The Final Decorating Flourishes:

To finish off the cake I pressed some chopped walnuts into the bottom third. Youll want to do this while the frosting is still fresh and before it crusts.

Just cup some walnuts in your hand and gently press it into the sides of the cake. The more natural and haphazard this is done the better it looks in my opinion!

To finish off the decor I made marzipan carrots. I got store bought marzipan , mixed in orange food coloring while wearing food prep gloves to not stain my hands.

Then roll little carrot shaped pieces, and use a tooth pick to add texture to the carrots.

Make a depression in the top of the carrots and stick a small piece of parsley in the tops for the green flourish. Id remove the parrsley before eating or alternatively you can pipe the green top in with green frosting.

I only used 1/4 of the package of marzipan for these carrots and it made 2 dozen.

Note: Marzipan gets a big weepy when on the cake stored in a sealed container. To keep your decorations looking nice, do not add it until soon before you are ready to serve the cake!

You can make the carrots in advance and store in a plastic or parchment lined storage container, then plop them on the cake when ready to serve.
