How To Store Homemade Ice Cream Cake

Store this homemade Cookies and Cream Ice Cream Cake in the freezer, wrapped with plastic wrap, in an airtight container. This will keep it from getting freezer burned or forming crystals. It can be kept this way for 7-10 days.

Avoid letting the ice cream cake soften too much if you plan to re-freeze it.

If you want to make your ice cream cake ahead of time, it’s easiest to make it minus the whipped cream frosting and Oreo topping for storage, then make the frosting and decorate the cake the day you plan to serve it.

A disposable cake box or a plastic cake taker will be useful for storing your homemade ice cream cake in the freezer.

Need to take ice cream cake to someone else’s house? You can use a cooler with plenty of ice or ice packs to travel short distances with an ice cream cake.

Serve it right away when you get to your destination or put it back into a freezer for later.

How To Store Leftover Ice Cream Cake

I recommend storing the cake or any leftovers in a large cake carrier if space allows, or cut into slices and store in a sealed container. You can place pieces of parchment paper in between cake slices to keep them from freezing together.

Any leftover ice cream cake will last for up to 1 week in the freezer if uncovered. After this time the cake can start to crystalize and taste freezer burnt.

Pro Tips For Making This Recipe

Homemade Ice Cream Cake Recipe (Video)
  • Its best to slightly soften the ice cream before adding it to the cake pan so you can create a uniform layer, making it much easier to layer on top of the cake.
  • Be sure to press out any air pockets in the ice cream when adding it to the cake pan.
  • When lining the cake pan for the ice cream, be sure to leave some extra plastic wrap on the sides to make it easier to lift.
  • Try to have your kitchen as cold as possible to make sure the ice cream cake doesnt melt as you work with it. If your kitchen is on the warmer side, youll have to put your cake back into the freezer often in between steps.
  • To make cutting the cake easier, you can run your knife under hot water before slicing.

Tips For Making This Oreo Ice Cream Cake Recipe

Use quality ingredients âWhen making a homemade ice cream cake, you want to be sure that you’re using high-quality store-bought ice cream or fresh homemade ice cream for the best flavor and outcome.

Soften the Ice Cream – You need to let the ice cream soften a bit so that it’s spreadable, but you don’t want to let it melt. It should take 10-15 minutes to soften, but if it’s particularly hot in your house it may not take that long.

Chill out â This recipe has multiple chilling steps. You need to chill each layer of the ice cream cake so that the layers don’t melt or run together. Don’t skip or try to lessen the time of these chilling steps. Your patience will be rewarded, I promise!

Fudge Sauce – You can use homemade fudge sauce or store-bought. If needed, you can warm the fudge slightly so that it’s pourable, but avoid adding very hot fudge sauce to the cake or it will melt the ice cream.

Make it Gluten-Free – Gluten-free Oreos can be used to make this ice cream dessert gluten-free!

Serve Ice Cream Cake Easily – Make sure to let the cake thaw a bit before trying to cut it. 30 minutes in the refrigerator or 10-15 minutes on the counter will make it easy to slice.

Easily Cut Your Ice Cream Cake by running a large knife under hot water before each slice.

Ice Cream Cake Recipe

Once upon a time, my husband decided hed like to host a small 4th of July cookout Youd think I would have learned by now that my husband never does anything small. So I really shouldnt have been surprised when, what started as a guest list of about 25 friends and family, quickly spiraled to upwards of 50 people.

To say I was feeling a tad stressed out is an understatement. Luckily he asked everyone to bring a side or dessert, but wed already made two additional trips to Walmart for more meat, utensils, napkins, trash bags, etc Being a firm believer that you can just never have too many desserts, I also asked him to grab the ingredients for my favorite ice cream cake recipe on his last trip.

How To Make Homemade Chocolate Fudge

Making chocolate fudge from scratch is quick and easy and you only need a few pantry staples to make it.

  • Heavy cream: The cream is going to emulsify all of the fudge ingredients together and make it super smooth and creamy. Because it has a high fat content, the cream allows the fudge to stay soft even straight from the freezer.
  • Chocolate chips: You can use milk, semi-sweet, or dark chocolate chips for the fudge. This recipe uses semi-sweet which gives it a sweeter and less bitter flavor.
  • Butter and vanilla: The butter brings more richness to the fudge and helps it look shiny after it has set. The vanilla is for extra flavor!

    • Use any flavors you prefer. Know that if you use layers that have a slightly different consistency, such as the sherbet and vanilla ice cream shown here, one layer may be softer than the other.
    • Use smaller or larger cake pans if desired.
    • Use an offset spatula to frost the cake, or a regular butter knife or spatula.
    • You should have plenty of time to assemble and frost the cake before it starts to melt, so dont stress. It may melt faster if its humid or very warm in your kitchen.

  • Allow the Oreo ice cream to soften for 10-15 minutes while you line an 8-inch springform pan with parchment paper.
  • Crush 20 Oreos, and reserve 1 tablespoon of the crumbs for later. Combine the remaining crushed Oreo cookies and melted butter. Stir to combine.
  • Press the Oreo crust into the bottom of the prepared pan. Use your hands or a flat bottomed glass to get an even, smooth layer.
  • Spoon the softened ice cream on top of the Oreo crust in an even layer. Freeze for at least 4 hours, until it’s very firm.
  • Remove the ice cream cake from the springform pan and place it on a plate to decorate.
  • Pour the fudge sauce on top of the ice cream layer and carefully let it drip down slightly over the sides of the cake. Freeze for 30 minutes.

How To Make Homemade Whipped Cream

The taste of homemade whipped cream is far better than store bought which is why we are going to make it from scratch! If youve never made homemade whipped cream before, dont worry, its very simple. Here are some tips on making the best whipped cream.

Keep it chilled: Keep the cream in the fridge until right before you need to use it. and stick the bowl and whisk in the freezer for 10 minutes before mixing. If the cream is too warm, the fat becomes ineffective as a stabilizer, and the cream will fall flat.

Use a mixer: The easiest way to whip cream is in a stand mixer with a whisk attachment, or with an electric hand mixer. It should only take a few minutes of whipping to get a nice consistency. After it starts to form a soft peak where its barely hanging on to the whisk, watch it carefully. If the cream is overmixed, itll turn into butter!

How To Frost A Cake With Whipped Cream

You may think that frosting a cake with whipped cream is going to be more difficult than a buttercream, but its actually fairly easy to work with. These are my best tips for frosting the cake with whipped cream successfully:

    • Use a large offset spatula: A large offset spatula is designed to frost cakes with little effort and is my go-to tool of choice when frosting. If you dont have a large spatula you can also use a large butter knife, although the final texture wont be as smooth.
    • Use a piping bag: This is my favorite way to frost any kind of cake, but especially whipped cream as it has a much lighter texture and makes it easier to work with. You can fit the piping bag with a round tip, then pipe the whipped cream in a spiral over the top and on the sides of the cake, then use your spatula to smooth the lines out. If you prefer to not use a piping bag thats okay! You can transfer the whipped cream onto the cake using a large spoon and then use your knife or spatula to spread it around the cake.
    • Piping rosettes: If you dont have a piping bag you can also use a ziplock bag with the corner cut and then fit it with the star tip. You dont have to use a lot of pressure to create the rosettes as the whipped cream is very airy. To create perfect rosettes, hold the bag directly above the top of the cake and move it in a clockwise motion while squeezing with even continuous pressure.

You can crush Oreos in a few different ways.

The fastest way is to put them in your food processor. Pulse until you get fine crumbs.

Otherwise, place the cookies in a heavy zip-top bag, seal it, and use a meat mallet or a heavy rolling pin to beat them up until you have the right size crumbs. This method takes longer, but it’s kind of fun!

    How To Make Homemade Ice

    Classic Homemade Ice Cream Cake
  • To start making this Homemade Ice-Cream Cake Recipe, prep the Spring form baking pan with butter and flour, line the base with parchment paper Set aside. For an ice-cream cake, it is best to use a cake pan with a removable base. When the ice-cream cake is frozen, it can be removed easily.

  • Sift the baking powder, flour and salt together, set aside.

  • Preheat the oven at 375 degree F.

  • Whisk the eggs and sugar until light yellow and fluffy.

  • Add vanilla and oil beat on medium speed for about 3 minutes.

  • Pour flour, a little at a time, alternating with milk. Whisk on low speed until combined. Add strawberry flavour and combine.

  • Pour the cake batter into the prepared baking pan, bake for 25 to 28 minutes, or until a skewer inserted in the centre of the cake comes out clean.

  • Remove from the oven, and cool completely. Cut the top off, and divide the cake into two equal layers.

  • Work quickly while assembling the cake, else the ice-cream can melt right into the cake layer! Freeze the cake after every layer, if you live in warm temperatures. Also, I didnt ice the entire cake with frosting. I have applied frosting on top of the cake, mostly. This cake has enough calories already.

  • Cut the cake with a knife dipped in warm water, serve Homemade Ice-Cream Cake Recipe immediately.
