I had a whole lot of fun preparing these mini pumpkin pies. After I tried the pumpkin pie in a jar at Red Lobster, I set out to recreate the recipe myself. I would have licked that jar clean if I hadnt been in public! And once I perfected this make-at-home version, I did just that.

These are seriously easy to make and so much more fun to eat than your average pie. Nobodys complaining about the size of their piece or making a mess in the pie tin. Everyone just grabs a spoon and digs in until its all gone. And thats how dessert should be!

The crust layered into this pumpkin pie uses a combination of both graham crackers and gingersnap cookies. It truly gives you the best of both worlds. The mousse is extra soft and fluffy thanks to whipped egg whites and mini marshmallows. Then you have the creamy pumpkin filling in all its spiced-up glory. Can I get a show of hands for whos making a double batch?

Of course you havent. That’s a highly specific thought to have… unless youve been to the San Diego Chicken Pie Shop, in which case, that’s your nostalgia talking. The shop will gladly ship you an eight-pack of the show-stopping chicken pot pies for about $60, but might we recommend splitting that order to include four of the pitch-perfect chicken numbers and four of the carnitas version, which come packed with the succulent, fatty pork. Will it forever render a carnitas burrito insufficient? Nah. Will it make you ponder stuffing barbacoa, birria, or lengua into a crust? Absolutely.

Sweet Cherry Pie In A Jar

Cherry pie just got sweeter with this cute sweet cherry pie-in-a-jar recipe. These make great homemade gifts!

Prep Time: 1 hour

1 1/2 pounds fresh Stemilt cherries, stemmed, pitted, halved 1/2 cup water2 tablespoons freshly squeezed lemon juice3/4 cup granulated sugar

2 1/4 cups all-purpose flour8 ounces salted butter 1 to 2 teaspoons granulated sugar, as preferred , plus additional for dusting pies1/4 cup ice water1 teaspoon melted butter/vegan buttery stick , for brushing crusts

Special materials:

4 glass, home-canning jars with lids Fabric, ribbon, scissors, stickers, tags for packaging

Preparation:

Place a sheet of wax paper over prep board, to cover, and top with a couple layers of paper towel. Place halved cherries in a pot set over medium heat. Add water, lemon juice and sugar stir to combine. Bring to a simmer and let cook for about 3 minutes, until cherries have softened a bit and sugar has melted. Add cornstarch and bring mixture to a boil reduce heat and simmer for about 3 to 5 minutes, until thickened. Remove from heat and set aside.

Now, youll make the crust. Combine flour, butter and sugar in the bowl of a food processor. Pulse a few times to combine. Add water and pulse a few more times, until mixture begins to hold together.

Line your jars to just past what would be considered the top fill line so that you can more easily seal this edge to the top crust.

Serve warm, or cap with lids and keep for later. Enjoy!

Make The Crust & Assemble

I did change up the crust a bit from the Red Lobster pies. Instead of an all graham cracker crust, I added some chopped gingersnap cookies for a little extra flavor. But of course, you could go with all chopped graham crackers or all gingersnaps, if youd prefer.

  • Make Crust: Mix together the chopped graham crackers and gingersnap cookies until combined.
  • Start Layering: Add about 1 1/2 tablespoons of crust to the bottom of each jar. Add 2 tablespoons of pumpkin pie filling followed by 2 tablespoons of cream cheese mousse.
  • Finish Layering: Repeat layers 1-3. You should have 2 of each layer in every jar.
  • Garnish & Serve: Top the jars with a sprinkle of leftover crust, if desired. Keep them in the fridge until youre ready to serve them.
  • For The Pumpkin Pie Filling

    Pecan Pie In A Jar
    • Canned Pumpkin Puree:Not canned pumpkin pie filling.
    • Brown Sugar: To sweeten the puree.
    • Cinnamon: For warmth and flavor.
    • Pumpkin Pie Spice: This is used in addition to many of the same spices on their own for the ultimate pumpkin spice flavor!
    • Ground Ginger
    • Heavy Cream: For a smooth, creamy consistency.

    Make The Cream Cheese Mousse

    The meringue that goes into this cream cheese mousse is super easy. Just cook the egg whites over a double boiler to 160 degrees.

  • Cook Egg Whites: Combine the egg whites, cream of tartar and sugar in a large mixer bowl. Place the bowl over a saucepan or pot of simmering water. You can also use a double boiler.Whisk constantly until sugar is dissolved and egg whites are warm, to 160 degrees on a thermometer, about 4-6 minutes. Remove from heat.
  • Whip Egg Whites to Soft Peaks: Using the whisk attachment on your mixer, beat the egg white mixture on low speed, gradually increasing to high, until soft peaks form, 5 to 7 minutes. When done, set egg white mixture aside.
  • Combine Cream Cheese & Vanilla: In another bowl, mix together the softened cream cheese and the vanilla until the mixture is smooth.
  • Melt Marshmallows & Combine: Use a microwave-safe bowl to melt the marshmallows in the microwave, about 15-30 seconds. Add the melted marshmallows to the cream cheese mixture and stir until combined.
  • Slowly Add Meringue: Add a small amount of the meringue to your marshmallow mixture and fold to combine. Then, add the remaining meringue and carefully fold until well combined.
  • Chill: Refrigerate the mousse for an hour or so to let it set.

    For The Cream Cheese Mousse

    • Eggs: Youll just need the whites the yolks can be discarded.
    • Cream of tarter: To stabilize the egg whites.
    • Sugar: For sweetness.
    • Cream Cheese: Softened.
    • Vanilla: Use a high-quality extract for the best results.
    • Mini Marshmallows: If you only have regular-sized marshmallows, simply cut them up to help them melt more easily.

    Make The Pumpkin Pie Filling

    One of the things I loved about the original Red Lobster dessert was the texture of the pumpkin pie filling. It was super silky and smooth, yet it maintained some of the texture of the pumpkin puree. I really wanted mine to have that same consistency. If I do say so myself, I totally nailed it! The filling is so good, I literally ate some of it on its own with a spoon. No shame!

  • Transfer Puree to Bowl: Add the pumpkin puree to a medium-sized bowl.
  • Combine Ingredients: Add the brown sugar, cinnamon, pumpkin pie spice, cloves and heavy cream, stirring to combine. Set the filling aside.

    Totally! As long as you have enough of the mason jars for the amount of servings you need, you can just double the recipe as needed and make these ahead of time. They need to fully cool before serving anyway- just make sure you dont top with the whipped cream and cinnamon sugar until serving!

    To make these ahead, just whip them up the day before and stick them in the fridge- make sure to close the mason jar lid tightly to keep them fresh!

    Some Key Things To Keep In Mind:

    • Make sure you are using jars specifically designed for canning. Wide-mouth mason jars are the best choice. They are made with tempered glass and are sold with lids and rings.
    • Mason jars, rings, and lids must be washed before filling. You can wash them in the dishwasher or by hand with hot soapy water.
    • Just before your dessert is done baking, boil the lids for at least 5-10 minutes. The gummy ring on the lid needs to be softened in order for it to create an airtight seal. And dont forget about safety use tongs to remove hot lids and be sure to wear oven mitts.
