Must Try

One: Whisk The Dry Ingredients Together

Super Moist Chocolate Chip Banana Bread

So the dry ingredients are well combined, I like to whisk them together in a bowl before combining them with the other muffin ingredients. For the dry ingredients, you will need:

Flour I prefer to use all-purpose flour, but whole wheat works well in this recipe. You can also substitute your favorite gluten-free flour blend.

Brown sugar sugar adds moisture, sweetness and makes the muffins tender. If you only have white sugar, dont worry you can use it instead.

Baking powder and baking soda these are both leaveners and are what make the muffins rise.

Salt just a tiny bit of salt makes these muffins ultra-flavorful.

Pro Tips For Moist Banana Muffins

There are 3 key points for achieving moist and tender banana muffins:

  • Use very ripe or overripe bananas. Underripe bananas will be difficult to mash and wont incorporate into the batter well.
  • Do not skimp on the butter. Since there is no other liquid in this recipe, softened butter is needed for a soft and moist crumb.
  • Dont over-bake. Test for doneness by inserting a toothpick into the center after 25 minutes and continue baking only if you see wet batter on the toothpick.

What Should The Consistency Of The Muffin Batter Look Like

Dont be alarmed, but the batter will be very thick and hard to stir at first. Once you add the zucchini, it will loosen right back up, which means its then time to fold in your mix-in of choice. If youre at my house, you can expect each and every muffin to be thoroughly studded with mini chocolate chips. Most important of all: Be sure your zucchini is grated and rung out very well in a towel to remove any excess moisture. Zucchini hoards water, which we dont thinning out the batter and affecting the perfect light, fluffy consistency.

How To Make The Best Chocolate Chip Banana Bread From Scratch

Making banana bread is much easier than most people would believe. It’s all done in one bowl with really simple ingredients, and the results are perfect loaves every time. Here are some tips on ensuring you make phenomenal banana bread:

To ensure you have seriously moist banana bread, you need really overripe bananas. The ones that the kids look at and won’t eat because they’re not super yellow anymore but you know they’re still edible and you don’t want to waste them? Use those. They’re super sweet and add a ton of moisture to anything you add them to, so they’re perfect for banana bread.

Pro tip: if you end up only having 2 bananas to use, replace the missing banana with applesauce! Applesauce will not only give the moisture and sweetness in lieu of the missing banana but can be used in place of some of the butter too if you are low on butter!

For this recipe, all you need is one bowl, a hand mixer or whisk, and a wooden spoon or a spatula. Three tools that everyone has in the kitchen, right? The hand mixer is needed to cream the butter and brown sugar together.

Creaming the butter and sugar together makes the crumb of the banana bread light and fluffy, so you won’t have to worry about it being dense and heavy. The brown sugar also adds a deeper flavor than granulated sugar, since it has molasses in it, makes the bread softer, and it adds more moisture. We want this banana bread deeply moisturized, y’all.

It has taken me a few weeks to get this recipe absolutely perfect because we keep running out of bananas. Our boys are little monkeys and I cant keep enough bananas in the house to bake banana bread. Last week, I hid some bananas in the back of the pantry so the boys wouldnt find them. The bananas turned brown and I used them to make this EPIC loaf of Chocolate Banana Bread. I nailed the cocoa banana bread recipe this time. It is absolutely perfect!

So what makes this banana bread so special?

  • This recipe also calls for melted unsalted butter AND oil. The butter gives the bread a nice flavor and the oil keeps the bread extra moist. The combo produces a tender crumb with great flavor.
  • I used brown sugar and only brown sugar in this recipe because again, I wanted the bread to be super moist and brown sugar keeps baked goods more moist because of the molasses content. And I know, I have used the word moist a million times in this post and I am sorry, but the bread is really moist and I promise that is a really good thing.

Notes On Some Of The Ingredients

Bananas

You would like to use overripe bananas as they are much sweeter with more intense flavor. If you cannot wait for your bananas to ripen roll them in a paper bag and leave them in a warm area for a day or two. If you need them now then there is a hack. Line unpeeled bananas on a lined baking sheet and bake on a preheated oven at 150°C. The time may vary from 15 to 30 minutes. You know it is “ripe” when the skins turn brown.

Oil or Butter for Banana Bread?

There are several recipes out there that use butter in their banana bread recipe. This is a decision each one of us has to make and I for one am partial to using oil in this case. Butter will, of course, add that rich flavor to the bread. But you can only really achieve that moist but light texture when you use oil.

Nuts

Adding nuts is not a must but it certainly is very much recommended . It adds that bite and if added on top it gives an extra crunch when baked. The most popular choices are walnut and pecan. If you are in the mood to rebel, other nuts like pistachio, hazelnut, macadamia or cashew also go well with this bread.

Chocolate Chip Banana Bread Recipe: Frequently Asked Questions

Can I make this banana bread gluten free?

I have not tested this specific recipe, but I have a delicious recipe for gluten free banana bread thats just as moist! Just add chocolate chips.

Can I use plain yogurt instead?

If you dont have Greek yogurt or sour cream, you can also use plain unsweetened yogurt.

Can I use less sugar in this recipe?

Sugar plays a big role in the moist texture of this bread. Adjusting it will likely change the banana bread. For a refined sugar free option, try swapping all of the sugar with coconut sugar.

Why did my banana bread sink in the middle?

This is likely due to two missteps: 1. You over mixed the batter. Over mixing develops the gluten strands in the flour, creating a more dense and heavy batter. Mix just until the ingredients are combined. This is why its important to mix the batter by hand. 2. Your pan is too small. 9×5 loaf pans can vary in size, as mine is about 9.5x5x5 inches. If you have a smaller loaf pan, only fill the pan about 2/3 full. Any more than than and the center of the banana bread will have trouble baking all the way through.

Do I need to make this banana bread with chocolate chips?

If you just want plain banana bread, you can leave out the chocolate chips. Alternatively, you can add nuts instead.

How To Make This Banana Bread

This bread is a riff on Elises classic Banana Bread with just a few adjustments to accommodate the peanut butter.

I use a creamy, commercial brand of peanut butter here. I dont usually bake with natural peanut butter because it tends to take a little more finessing to incorporate. I beat the peanut butter a bit before mixing it into the batter, just like you often do with cream cheese. I want it to soften and smooth out so it will incorporate more easily.

You could use chunky, but I prefer creamy. It shouldnt cause any issues if you were to substitute one for the other.

Since peanut butter can weigh down a batter, I also added some milk to the recipe to keep the loaf from being too heavy.

You can use mini or regular chocolate chips here, or even chopped bar chocolate. Its really your preference. If you do use bar chocolate, just know it will melt more readily than chips . I avoid topping the batter with bar chocolate, because it can melt off and burn as it bakes. Just add some to the top when it comes out of the oven.

The Best Bananas For Chocolate Chip Banana Muffins

As is the case with most baked goods that have bananas in them, you want to use overripe bananas for this recipe. I like to use bananas that are just past their speckled state, almost entering totally browned territory, where the banana itself is still yellow inside but very soft and fragrant. You can also use speckled bananas with great results.

If you want to make these muffins at a moments notice but dont always have overripe bananas on hand, here is my advice: buy a bunch of bananas, let them get overripe, then peel them and transfer them to a resealable plastic food-storage bag. Freeze the bananas for up to 2 months. When youve got a hankering for banana muffins or banana bread, remove however many bananas you need from the bag, let them come to room temperature, then use them in your recipe.

  • Preheat oven to 375F/190C. Grease muffin pan cups or line them with liner papers.
  • In a large bowl mix together flour, baking soda, salt, and sugar.
  • In a medium bowl, whisk together egg, mashed bananas, and melted butter. Pour the egg mixture into the flour mixture and mix as little as possible, just until combined. Stir in chocolate chips.
  • Divide mixture between muffin cups, filling them about ¾ full. Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Transfer to a wire rack and let cool for 10 minutes before removing from pan.
  • How To Ripen Bananas For Chocolate Chip Banana Bread

Dont have ripe bananas on hand? There are a few ways you can speed up the ripening process to make your bananas perfect for banana bread!

  • The night before, break apart your bananas and place them in a brown paper bag. It blocks just enough oxygen which allows the bananas to release a chemical called ethylene. This is what speeds up the ripening process.
  • Place them on a baking sheet and bake for 15-20 minutes at 300F. Theyre ready when theyve turned COMPLETELY brown. Let them cool before using.
  • If youre in a pinch, you can microwave your bananas. Pierce the banana with a fork a few times and microwave it for 30 seconds 1 minute.
  • Lastly, your best bet to find already ripe bananas is to look for single bananas at the grocery store. They usually keep a pile at the bottom of the banana display.
  • And there you have it! Ripe bananas that are going to make your chocolate chip banana bread extra delicious.

If you already have frozen ripe bananas, you can also use those. Just leave them out for about 30 minutes to 1 hour in order to thaw before using.

    • Mash your bananas well with a fork. Its fine if there is a few lumps.
    • The batter should be thick and lumpy once all of the ingredients are mixed through. You may be tempted to add more liquid, but you wont need it. This banana bread is perfect.
    • Do not be tempted to over mix!
    • Use a pale coloured loaf pan light grey or white is ideal. Dark or black loaf pans are known to darken the bottom of cakes or loaves.
