DOOR COUNTY Although peak cherry picking season wrapped up in Door County by the end of July, there are still plenty of options if youd like to make your own cherry pie.

Perhaps you have already made a trip to Door County and have some hand-picked cherries in the freezer. Or, you can stop at one of the many farm markets and grab a jar of pie cherries.

Wisconsin orchards harvest 8-12 million pounds of cherries annually, and Door County is the fourth largest producer of cherries in the nation.

Heres what you need to know:

For cooking purposes, there are two kinds of cherries: sweet like the Bing cherry, or tart like the Montmorency.

Typically, the advice is to bake with a tart variety to which you will add sugar. If youre using sweet cherries, you dont need to add as much sugar. Either way, cherries make a delicious summer snack, rich in antioxidants and anti-inflammatory compounds.

So what are you going to make with your cherries? Pie is the quintessential summer dessert but making one doesnt always live up to the saying easy as pie, so here are a few tips.

First: Not all pie tins are the same size. A regular 9-inch tin will take 4 cups of fruit but my deep dish pie tin requires 6 cups, so pay attention to your proportionsif 4 cups of fruit requires 2 tablespoons of thickener, 6 cups will require one-and-a-half times that or 3 tablespoons of thickener.

1/2 cup regular rolled oats

1/4 cup brown sugar

Preheat oven to 375 F.

How To Make Sour Cherry Pie

Make the crust. Combine flour, sugar, salt and chilled shortening in a food processor. Process until a crumb forms and then slowly pour in 1/4 1/2 cup of ice water until a dough forms.

Divide the dough into two equal balls and flatten into discs. Cover and chill for at least 30 minutes.

Make the filling. Combine the filling ingredients in a large saucepan. Heat over medium until a sauce begins to form. Continue cooking, stirring until the sauce thickens. Remove from heat and let cool to room temperature.

Assemble the pie. Roll out 1 of the pie crusts and line your pie plate. Add the filling, leaving out any excess liquid.

There should be some sauce, but since the cherries may vary in water content, you might not want to use all the sauce. Use your best judgment and see the photo above.

Top with a second pie crust. You can do a lattice crust if you want, but its not necessary. Seal the edges and cut a few holes to vent the steam. You can use a knife, a fork or a small cookie cutter, whatever you feel like doing.

Bake the pie. Brush the top crust with an egg wash and pop your pie into the oven at 375F oven for 45 55 minutes.

The pie should be bubbling and the crust will be golden brown when its ready.

Let the pie rest. Remove it from the oven and let it sit until it reaches room temperature. This step is important to achieving a pie that doesnt flop when you slice it. It gives the cornstarch and the pectin in the fruit time to set.

Third Choice For Cherry Pie In Door County: Schartner’s Farm Market

We voted Schartner’s pie crust “the most authentically like Grandma’s” – and that’s a good thing because Grandma makes amazing pie!

The crust has nice, somewhat thinner and clearly visible layers layers which almost, but not quite, flake apart. The filling holds shape well, showcasing full, round cherries. They have an expected sweetness but with a fun, subtle zing of sharp tartness.

This is solidly good cherry pie that anyone would appreciate, cherry pie lover or not.

The place is very clean and spacious. The selection of product is large and the products are well stocked. I found this to be a pleasant experience but it is not your out of the way off the beaten path type store. It is not cheap but nor does it pretend to be. If you are looking for a unique Door County experience this is not the spot.

Seaquist Orchards Farm Market is a diamond among gems in the numerous farm markets in the Door County peninsula. The market offers a number of jams, home goods – but we believe that their bakery is the best on the Peninsula. Lots of variety, freshly baked goods every day. Their cherry donuts, pie slices, and cookies are the best. We try to visit here every time we visit. The Market closes for the winter, near the end of October. Make sure that you call them to make sure they are open for the season, though. We just visited this past Mother’s Day weekend to learn that the Market doesn’t open until May 18.

With 23+ years experience baking pies in the county, Sweetie Pies comes in at a very close second pick for cherry pie in Door County. Our team deliberated -and tasted and retasted!- long and hard, because this pie is so good, it’s difficult to not give it first place. And it’s a favorite among locals, too. Even Rachael Ray has touted Sweetie Pies’ pies as Top 10 in the country.

While we couldn’t hand out two first place awards, we absolutely love Sweetie Pies’ almost cookie-like crust. And their fully intact cherries make for a delicious, mouth-awakening burst. You definitely can’t go wrong with a slice of Sweetie Pie’s cherry pie!

Door County’s cooler spring months and unique soil composition make it an ideal spot for growing cherries. Early farmers in the county observed this and developed some of the earliest and largest fruit orchards in the state. Why I Love This Cherry Pie Recipe

Cherry pie had never been my thing until we went to Door County for the weekend a few years and had some as dessert with our fish boil.

It turns out, the majority of the cherries grown in Door County, Wisconsin which is about an hour north of us are Montmorency cherries, and that means theyre sour.

The combination of the tart cherry flavor combined with the sweetness of the sugar in the homemade filling makes for an amazing pie. Add some flaky vegan pie crust, and you have a perfect dairy free dessert.

Ingredient note: for this recipe I used cherries from this orchard that I found in my grocers freezer section. If you cant find Door County cherries near you, feel free to swap them out for another type of sour or tart cherries. You can also use sweet cherries if you want.

Door County Old Fashioned Cherry Crunch is the recipe for you. Made with only three ingredients, four if youre counting the vanilla ice cream. You will one package cherry crunch topping mix, one quart jar cherry pie filling and melted butter. The directions on the back of the package of crunch topping mix said to use 2 cups cherry pie filling and bake in an 8 x 8 or 9 x 9-inch square pan. I bought a large jar, 1-quart size cherry pie filling, therefore I made it in a 2 quart baking dish. It was so delicious, my hubby and I ate the whole thing in a 24 hour period!

The Best Cherry Pie In Door County: Bea’s Ho

What started as a dairy farm on a family homestead owned since 1884, Bea’s went through several iterations across generations, and eventually evolved into one of our favorite pie baking sites in the county!

Back in the ’60s, Bea’s young daughter began selling cherries and her grandmother’s jams from a picnic table on their dairy farm. When product sold out quickly , the family realized they had found a new venture.

We’ve been to Bea’s several times, each time with different people, all of whom have tried other pies in the county, and all of whom have declared Bea’s in their Top Two list. How do you keep a cherry pie crust from getting soggy?

You can keep a crust from getting soggy by doing a few things. First, make sure youre not rolling it to thick or too thin. Second, switch to a metal pie plate to get a better cook. Third, you can bake your pie on a lower rack to get the bottom crust crisper. Lastly, make sure youre properly venting your top crust to allow steam to escape.

Does cherry pie need to be refrigerated?

No. Cherry pie doesnt need to be refrigerated, but it will only last about 2 days at room temperature . To extend the life of the pie, place it in the fridge for 3 5 days.

What cherries are good for pie?

Sour or tart cherries, such as Montmorency cherries, are the best for pie because their flavor balance the sweetness of the sugar in cherry pie filling. To make this recipe easier, Ive used frozen pitted cherries, but you can also use fresh pitted sour cherries.

Can I use canned cherries instead of fresh?

While I havent tested this recipe with canned cherries, you should easily be able to use canned cherries instead of fresh or frozen, just make sure you drain and rinse off any liquid that they might be stored in.

How long can you keep a pie in the fridge?

A properly stored, baked cherry pie should last in the fridge for about 5 days. Always use your best judgment before consuming anything.

Door County Cherry Pie Filling

Serving Size: Makes enough filling for one 9- or 10-inch pie, about 2½ pints or just over 1 quart.


1 to 1 1/4 cup * Sugar

4 Tablespoons Cornstarch or tapioca flour

1/4 cup Pomesmart Tart Cherry Juice

5-6 cups, about 2 1/2 to 3 pounds Door County Pie Cherries- Fresh

pinch kosher salt

Youre going to need some vanilla ice cream to go with your pie.

PreparationIn a large saucepan, blend together sugar, tapioca flour/starch and salt using a whisk. Add cherry juice and stir until well blended add pitted cherries. Cook and stir over medium heat until mixture reaches a boil, about 2 to 3 minutes.

Remove from heat and stir in almond extract. Set aside to cool to room temperature. Use as a filling or topping immediately in recipes or store in jars with tight lids in refrigerator up to 2 days.


If storing pie filling in the refrigerator, it may separate. To thicken again, reheat filling in a saucepan over medium heat stirring frequently. Cool before using in recipes.

*If using our Sugared Door County Pie Cherries, cut the sugar back to 3/4 cup.
