How To Make Homemade Ice Cream Sandwiches

Whats great about these is you all you need is a mixer and a freezer. Well, and all the ingredientsand a spoonand some time

You mix up your ice cream/key lime filling, which is super easy. Heavy cream, Key Lime juice, sweetened condensed milk, sugarit just keeps getting better doesnt it?

The consistency will look like this:

Pour that into a plastic container and freeze it for 5-6 hours.

At that point it will be almost frozen, but still spreadable.

If you forget it and leave it in longer, its not a problem, just let it sit on the counter until it warms up to a spreadable consistency.

Then assemble your ice cream sandwiches using graham crackers!

Youll use about 1/4 cup of ice cream on each

Top the ice cream with another graham cracker and then you can individually wrap them in cling wrap and freeze until they are completely firm, about another hour or so.

You can make these days in advance, which is pretty awesome.

Theyre a little bit of a reminder of day from my childhood summers. For as long as I can remember, the freezer of my childhood home was stocked full with our familys favorite ice cream flavors.

Somewhere along the way someone made an ice cream sandwich out of the simplest of ingredients creamy, vanilla ice cream pressed between two graham crackers.

And though I cant remember which family member it was that first discovered this simple, way to eat ice cream, I do remember clearly its existence in my childhood, especially during our summers.

For more summers than I can remember Ive made a key lime dessert. Its a thing. Something I need to do. Those little tiny key limes call to me by name. While I adore key lime pie I thought it would be fun to bring the flavors of a pie to a frozen ice cream based treat that even my grandson would like Key Lime Pie ~ Ice Cream Sandwiches.

The key lime gelato is frozen in a flat baking dish lined with plastic wrap so it can be easily removed and cut with the cookie cutter used for the grahams. If you prefer a thinner dollop of gelato, feel free to spoon it on semi-soft then freeze again before serving.

Way back in the ancient times of the Sinful Nutrition youtube channel, I made an ice cream out of bananas and avocados, and fell in love in a hopeless place. So naturally, I made it into a sammich.

Now even though theres no sugar added to these babes, they are sweet as the dickens as is. Plus theyre dipped in white chocolateso theres that too.

BUT..since there isnt too much fat added to them, these freeze up mighty hard. Please for the sake of your front teeth and your eating pleasure..LET THEM THAW. A simple 10 minutes on the counter before you eat is all they need.

Which if you eat dinner like me, is just enough time to scarf down a meal, and get to the good stuff.

Key Lime Pie Comes From A Key

The first time I tried a real Key Lime Pie I was actually visiting the Key Islands in Florida, right after college, and was pretty impressed by their famed dessert. In fact, it might have been the first time Id ever tasted a lime! Any Key lime pies I tasted afterward were disappointing, jello-type wannabes.

Not this one, though. Ciao Bellas lime ice cream really comes through with the flavor, and there are tiny specks of graham cracker in the ice cream, too. Not only that, but the crusts themselves are also tasty and thick. Sort of like a small meal! I dont know how the crusts would taste separately concoctions like this are MEANT to meld, after all but the graham sweeter crust and the gelato are really a great combo. Cream is the 2nd ingredient in the ice cream and the box says it also has real lime juice although it does not say KEY lime juice.

Im surprised that Whole Foods highlights them its not exclusive with them, and I bought them at Vons. Customers at the Ciao Bella blog also seem to enjoy them. On Second Scoop says he had to put whipped cream on it to enjoy it, however. Scoopalicious is another fan. We all scream for lime ice cream.

This is one of the very rare actual product images that Im including. I like the color lime green. The original box is above: the current one here is not nearly as persuasive.

Vegan Key Lime Pie Ice Cream Sandwiches

Do you know what my favorite dessert is? It just so happens to be key lime pie! You may even say I love it so much I have a tattoo of a slice of key lime pie. I grew up in Miami and we used to go to the Keys all the time. Of course they have the best key lime pie, none of which is vegan. So, since Summer is almost here, I made you guys these vegan key lime pie ice cream sandwiches, and they are amazing! A perfect replacement!

These ice cream sandwiches are super easy, and they are the most amazing beach or poolside summer time treat! The ice cream is a super simple 4 ingredient no churn ice cream. Then the graham crackers that house the ice cream to make it into a sandwich are a softer version of a regular graham cracker so the ice cream doesnt shoot everywhere when you bite into it.

Super refreshing, and bright. These sandwiches are the only ice cream I want to eat in the heat. The ice cream is made with coconut cream which is really the best compliment to the lime juice and zest. Just coconut cream, sugar, lime juice and zest. That is it. Whipped together and then just place in the freezer until ready!

Once the ice cream is freezing, you can make the graham crackers. They are quick and easy, and ready in no time. By the time the crackers are done and cooled completely, you can check to see if the ice cream is frozen enough. It freezes really fast.

How To Make Key Lime Pie Ice Cream

Begin by making the crust. In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Using a spoon first and then your fingers, mix until evenly combined, making sure to break up any lumps of brown sugar.

Press the crust into an even 1/4-inch layer on the prepared baking sheet.

Bake until golden around the edges, 7 to 8 minutes.

Let cool, then use a spoon to break into chunks.

Set the crust aside while you make the filling. To start, zest and juice the limes.

In the bowl of an electric mixer, beat the cream cheese until light and creamy, about 1 minute.

Add the sweetened condensed milk and beat until completely smooth, 1 to 2 minutes.

Add the heavy cream, lime zest, lime juice and salt.

And beat until evenly combined, about 30 seconds.

Arrange half of the crust evenly over the bottom of an 8-by-4-inch loaf pan.

Pour the ice cream mixture over top.

Then cover with the remaining crust crumbles. Cover with plastic wrap and freeze until completely firm, at least 8 hours or overnight.
