Our easy keto apple pie crumble recipe has a savory filling with delicious almond flour crust! Youd never guess that the secret ingredient is actually zucchini! There are no apples in this healthier dessert, but no one will know it except you and me!

We decided to use zucchini instead of apples because theyre lower in carbs! We know you may be thinking,uh, thats weird! No way is this going to be good.

But we promise you this is a sneaky, delicious way to sneak in a low carb vegetable into an amazing dessert!

It really does taste like apple pie!

How To Vent A Pie Crust

When baking your pie crust first and then adding your filling, you can get cracks in your crust unless you properly vent it.

All you do is take a fork and simply poke some holes in the crust before putting it in the oven. Letting the airflow through the holes will prevent it from rising and cracking.

So whats so special about my recipe? Well

Its the addition of melted mozzarella cheese to the mix.

If you are familiar with the popular fat-head dough recipe you know that its uses melted mozzarella cheese to mimic the gluten that is missing in non-wheat flours.

I basically took that knowledge and played around in the kitchen until I created a brag-worthy option. The pie dough comes together easily by mixing the keto flours, adding melted butter, eggs, and melted mozzarella cheese.

Then its just a matter of kneading the dough well to incorporate all the ingredients. You can mix crust by hand or use an upright mixer with a hook attachment to make the process quicker.

The dough is then divided in half, wrapped in parchment or cling wrap, and allowed to rest in the refrigerator for 30 minutes. A step that is key to its success and similar to what is done with traditional pie crust recipes.

Once the pastry is chilled, then it can be rolled easily between two parchment sheets of paper. After its been rolled out I place it back in the refrigerator for another 15 minutes. This will make it easier to roll and ensure the flakiest crust once baked.

The absolute most important part of making this keto pie crust is processing the dough long enough in the food processor.

When you first start it looks like sand. After a minute or two of processing, it starts to come together in a ball. The food processor breaks down the almond flour further releasing the naturals oils from the almonds. This helps the pie crust dough stick together.

I’m going to repeat myself here. “The absolute most important part of making this low carb pie crust is processing the dough long enough in the food processor.” Over the years I’ve had several of my readers say that the dough was too crumbly. After troubleshooting with them the same conclusion has happened every time. The dough needs to be processed longer.

Almond Flour Vs Almond Meal

Both almond flour and almond meal are made from ground almonds, but there are two subtle differences of note. Almond flour is made from blanched almonds while almond meal includes almonds with skin, leaving dark flecks. Almond flour is also ground more finely than products labeled almond meal.

Almond flour is readily available in grocery stores in the baking aisle or gluten-free sections. However, it can sometimes be pricey, and making your own almond flour at home is easy. Place whole blanched almonds, about 1/4 cup at a time, in the food processor. Pulse until a flour-like consistency is achieved. Use a sifter to separate any larger pieces that remain and repeat until all of the almonds are transformed into flour. Whether store-bought or homemade, almond flour should be stored in an airtight container in the refrigerator.

Does Almond Flour Crust Get Crispy

Almond flour doesnt necessarily crisp on its own, but it does easily brown. Crispy, flaky pie crust actually comes from the cold butter and when moisture in the crust evaporates.

Keep your butter very cold and even let your crust set up in the pie plate in your freezer for 10-15 minutes before baking to ensure its cold. As the cold, solid bits of butter melt in the oven, they form little pockets and help create a crispier crust.

Keto Pie Crust Flour Options

The first question people often ask is whether they have to use super fine almond flour, or if almond meal would be okay.

The answer is, it depends. Super fine blanched almond flour is ideal, but its not an absolute must. Almond meal, which is more coarse, will still work. You wont get as fine a texture, though. In a nutshell, I recommend almond flour if you can get it, but if almond meal is what you have, you can still make this low carb pie crust with it.

If you need to avoid almond flour altogether, I do not recommend using coconut flour in this recipe. Make coconut flour pie crust like this instead.

Storing This Chocolate Keto Pie

How To Make Gluten Free Pie Crust | Easy Keto Almond Flour Pie Crust

So, this chocolate keto pie recipe will make 2 servings – each being one-half of the pie.

And, as I mentioned earlier, it is almost impossible not to finish off the entire thing after you make it, so you might not have any leftovers.

But if you do, you can cover the bowl tightly with plastic wrap and keep the pie in the fridge for up to 4 days.

Then, whenever you want to enjoy it, just take it right out of the fridge, and dig in! Personally, I think this keto pie tastes even better leftover and chilled.

Making Keto Pie Crust Without A Food Processor

The easiest way to make keto pie crust is with a food processor. However, you can achieve just as good results with a pastry blender or using a fork to help cut the cold butter into the ingredients for the pie crust. This method takes longer than using a food processor but it will get the job done.

One tip to make it easier to cut the cold butter into the pie crust ingredients is to grate frozen butter with a cheese grater. This will help break up the butter into small chunks.

How To Roll Out Pie Crust

To roll out pie crust, always make sure you dough has been chilled first. This will keep your crust flaky when its baking. Since this is not a traditional flour based pie dough and we are working with gluten free flours, its best to use parchment paper when rolling out the dough.

Place the keto pie dough between two sheets of parchment paper. This will prevent the dough from sticking to the counter and rolling pin. Starting from the center of the disc roll out using gentle force in all directions to achieve a flat circle. Continue rolling in all directions until your gluten free pie crust is about 1/8 to 1/4 inch thick and is at least 1 inch in diameter longer than your pie plate.

What Is Almond Flour

In the grocery store youll find several different variations of almond flour. To add, they may from brand to brand. In this recipe, I used fine blanched almond flour. But, what does that mean?

Blanched almond flour, this type of almond flour has the husk removed then ground into a fine or coarse flour. The finer the flour is ground the better the flour will perform during baking. Couple of brands I know are very good are Bobs, Kirklands and Natures Eats finely ground.

Almond meal, youll fine the whole almond ground into a flour. The husk and all! This type doesnt bake well due to the husk. Will it bake? Sure, but both the end results will be different. For example, the baked good would be a bit drier and more crumbly.

  • Use Cold Water: Not just any old water will do for this recipe- you will want to make sure it is ICE COLD for it to work out well!
  • Use Cold Butter: Its also important that you use cold butter instead of room temperature, softened or melted butter as cutting in the cold butter is an important step to achieve the right texture for the pie crust.

    • Make sure youre using almond flour and not almond meal. Theyre two separate products!

    Tips & Other Things To Keep In Mind

    • If youre using coconut oil make sure you grease your baking dish well before using.
    • Ideally you want to use a baking pie with a loose bottom that allows you to easily lift the pie out. For some reason that I cant yet figure out, whenever I make this with coconut oil the crust really wants to stick to the sides. Once its out the crust its fine, but getting it out without breaking can be tricky. If you use a loose bottom pan you can just run a knife around the edges and that will take care of the problem.
  • The egg free crust will be a little more crumbly without the egg for binding. If you dont need this to be a low carb crust you can replace 1/2 cup of the almond flour with tapioca flour or arrowroot starch. So that would mean you use 2 cups almond flour and 1/2 cup starch.
  • Almond flour crust tend to brown quickly so I recommend covering your crust with foil or baking paper after 20 minutes baking to prevent it from going too dark.
  • Freeze for later:
  • Freezing the dough as a ball: Wrap the dough up well in plastic wrap/foil, and store in a freezer safe bag. Make sure to label the bag and note the date. You can save this up to three months in the freezer. To use: Let the dough thaw in the fridge overnight and then use as you normally would.
  • Freezing the formed crust: You can also freeze the dough already pressed into your baking plate. Just make sure you wrap it up well to keep any air from getting to it.

    I dont recommend coconut flour to make a quiche crust. Coconut flour has a sweet flavor that doesnt go well with a savory quiche. However, this is my point of view, and we all have different taste buds and food allergies.

    How To Make The Almond Flour Crust:

    Youll want to blend all of the crust ingredients in a large bowl. Then pour out the bowl and mix until it a dough-like consistency is achieved.

    Press the dough evenly into a pie pan.
