My Love For Homemade Quick Bread

Ultimate Gluten Free Cornbread (Skillet or Muffins!)

Nothing beats baking a loaf of homemade bread and while I love baking yeast breads , there are days where I prefer to make a loaf of quick bread instead.

Quick breads use baking powder for leavening instead of yeast . This makes them great for throwing together when youre in a hurry or simply hungry for something delicious and dont want to wait long to eat.

Some of our favorite quick breads include this hugely popular honey oat quick bread, this low-carb almond bread, and this coconut flour bread.

Recently, Ive also been testing a quick bread recipe made with corn flour, since I had a half a packet of corn flour in my pantry

How To Make This Easy Gluten

  • Preheat the oven to 375 degrees F, and grease an 8×8 baking pan with cooking spray or line it with parchment paper.
  • In a large bowl, stir together cornmeal, baking soda, baking powder, and sea salt.
  • In another bowl, whisk together yogurt, honey, ghee, egg, and vanilla extract.
  • Add wet ingredients to dry, and mix until just combined.
  • OPTIONAL: If adding zucchini, wrap the shreds in a tea towel and squeeze out as much liquid as possible. Fold into the batter.
  • Pour the batter into the prepared baking pan. Bake for 35-40 minutes until golden brown and toothpick inserted in the center comes out clean.
  • Cool for 10 minutes, then slice and serve. You can serve with butter and more honey.
  • Polenta Corn Meal And Corn Flour

    To make this gluten free cornbread, I use Bobs Red Mill Gluten Free Corn Grits, aka Polenta. We eat polenta porridge for breakfast, so I simply use this instead of buying additional cornmeal. Please be aware that Bobs Red Mills sells two difference bags of polenta / corn grits, and one is gluten free and one is not.

    So how are these three types of corn meal different. As Epicurious explains their post about the difference between polenta and cornmeal, polenta is more coursely ground than cornmeal. In addition, true cornmeal for polenta is made from flint corn instead of dent corn. It is traditionally milled differently as well.

    Technically, this recipe calls for corn flour. However, I use corn masa flour. The difference? Corn masa flour, per Brass Brasserie, is cooked in a lime solution, and then ground.     How To Make Gluten Free Cornbread

  • Preheat the oven to 400°F. In a mixing bowl whisk together cornmeal and buttermilk. Let it sit for 10 minutes.
  • While the cornmeal soaks, in a separate bowl whisk together the gluten free flour, brown sugar, baking powder, baking soda, and salt.
  • Mix the cornmeal with the dry ingredients. Add the other wet ingredients , and mix everything together until well combined.
  • Add the cornbread batter to a seasoned cast iron skillet. Bake uncovered for 20-25 minutes, until the cornbread is golden brown or a toothpick comes out clean.

    How To Serve And Store

    We highly encourage eating this gluten free cornbread fresh out of the oven, but it can be stored as well. Store in an air tight container in the fridge for up to five days. We prefer reheating until warmed if serving as leftovers.

    This gluten free cornbread is delicious as is but we prefer a smear of butter on top. If looking for an extra decadent side, a drizzle of honey would be lovely. This cornbread makes a perfect side for any dish. Some of our favorite ways to serve it are alongside barbeque or a cozy bowl of soup, stew, or chili.

    Some Notes On Ingredients

    In addition to enjoying the taste and texture of this gluten free cornbread, I love that it uses ingredients that we always have on hand and are able to produce here on our homestead or source locally. That being said, this recipe is also very adaptable to whatever you have on hand.

    Cornmeal This recipe uses only cornmeal with no other flours. Since cornmeal is made of only corn, it is naturally gluten-free. If you are not concerned about gluten and would rather use a one-to-one combination of cornmeal with regular or whole wheat flour, that works as well.

    Yogurt The plain yogurt in the recipe could alternatively be substituted for kefir, buttermilk, or a combination of sour cream and milk.

    Butter While the butter is so tasty in this cornbread, it can also be substituted with melted coconut oil, lard, or even olive oil.

    Honey Honey is our go to sweetener in our baking and cooking and pairs so well in this cornbread. We only use two tablespoons but if you like it a bit sweeter, you could up that to a ¼ cup. Maple syrup or organic sugar can be substituted for honey.

    Can I Use Sugar Instead Of Honey

    You’ll need about cup sugar to replace the ¼ cup of honey, because the honey is sweeter.

    Because there is less than a cup of honey in the recipe, you shouldn’t need to add extra milk, unless your batter is very thick.

    You need a little honey or other sweetener, to balance he earthy flavors of the cornmeal. You can try using Monk fruit sweetener, coconut sugar, or maple syrup in your cornbread. But honey will always be my favorite!

    Corn itself does not have gluten in it, so its naturally gluten free. Cornmeal is made by simply grinding yellow corn into a coarse or fine grind.

    You first have to be careful about the cornmeal you buy to ensure that it isnt contaminated with gluten-containing grains during manufacturing.

    Bobs Red Mill brand has a certified gluten free cornmeal variety, so if you buy that brand be sure to pick up the right package.

    Most cornbread is made from cornmeal and wheat flour, so its not actually gluten free.

    The only flour in my original old fashioned cornbread recipe is coarsely ground yellow cornmeal. There’s no wheat flour, so its naturally gluten free.

    Using Cornbread To Make Stuffing

    To make gluten-free cornbread dressing omit the sugar from the recipe, or halve the amount. Bake the cornbread according to the recipe and let cool completely.Cut into small cubes and spread them on a large baking sheet. Leave it out for 1-2 days to dry out or bake 250°F oven for 30-45, tossing every 10 minutes. Use with your favorite stuffing recipe for a gluten-free version!

    What Pan Do You Need To Bake Gluten Free Cornbread

    I love baking my gluten free honey cornbread in a cast-iron skillet. It makes the edges so chewy and almost crispy.

    If you don’t have a cast-iron skillet you should go and buy one right now! It is my one of my favorites and is my most used pan in the entire kitchen.

    You can also use an 8×8 baking dish. You won’t get the buttery chewy edges, but it still bakes great and it makes 9 squares instead of 8 wedges.

    I love the way the wedges look and they go perfectly with a nice warm bowl of white bean chili. Or maybe a steaming bowl of gluten free chicken noodle soup.

    Or just by themselves with a nice pat of butter, and maybe an extra drizzle of honey.

    This recipe makes 8 wedges, but my family of 4 has no problem gobbling it all up. Yes we can really only eat half of it in one meal, but the other half is gone the next morning!

    Making Gluten Free Cornmeal Muffins

    For flourless cornbread muffins, I didn’t need a separate gluten free corn muffin recipe I used the same one.

    I lined the wells of the tin with greaseproof paper liners so the muffins didnt stick, and distributed the batter evenly among the wells. In my muffin tin, the wells were nearly full of batter.

    This isnt a high-rising cornbread, so I wasnt concerned that the gluten free corn muffins would overflow the pan. I made the variation with half coarsely ground yellow cornmeal and half corn flour, as discussed below.

    The muffins rose evenly, and they baked perfectly at 350°F in 18 minutes flat.

    I was considering adding another egg, since the batter is looser than an ideal muffin batter, but I wanted to see if it worked as written. And it did!

    Other Uses For Gluten Free Cornbread

    Gluten Free Jalapeno Cheddar Cornbread

    I use this recipe as the base for my gluten free cornbread stuffing. However, my husbands favorite use for this batter is my gluten free corn dog waffles.     Tips For Making Gf Cornbread

    Mix properly – Ensure you mix the wet and dry ingredients separately and then together

    Oven temperature – Make sure your oven temperature is correct. I like to use an oven thermometer.

    Don’t over bake it – It will be dry and not taste great.

    Use ingredients – Use ingredients as per the recipe card. Adding baking soda and not baking powder will not have the same result. As with the gluten-free flour. Use decent quality gluten-free flour blend.

    • Gluten free cornmeal: Use a fine or medium grain cornmeal for this recipeI use Bobs Red Mill Brand.
    • Gluten free 1-to-1 flour: Ive tested this recipe with Bobs Red Mill 1-to-1 Baking Flour, Cup 4 Cup Flour and King Arthur Measure-for-Measure Flour. All work great! If youre not gluten-free you can use regular all-purpose flour.
    • Sugar and salt: A touch of sugar gives this cornbread subtle sweetness. Feel free to cut back or add more to taste, depending on how sweet you like your cornbread. You can also swap out the sugar for honey or maple syrup .

    How To Make Gluten Free Cornbread Vegan

    To make gluten free vegan cornbread, use oil instead of the melted butter option, use dairy free milk in the batter, and use your favorite egg substitute.

    My go-to egg substitute is Bob’s Red Mill’s Egg Replacer. I prefer using 3 tablespoons of water, instead of the 2 tablespoons called for in the directions.

    You can also use a flax egg, which is essentially 1 tablespoon of ground flax meal mixed with 3 tablespoons of hot water. You can read more about how to make a flax egg if you have any questions.

    You can also use 3 tablespoons of pumpkin puree instead of an egg!

    Easy Corn Flour Bread

    Since this cornbread is made to be moist and soft, it’s best to store any leftovers airtight so it doesn’t dry out.

    I store mine at room temperature:
