First, I made the graham cracker crust and let it cool while I made the key lime filling. Then, when it was done baking and chilled, I cut it into eighths, added some popsicle sticks and dipped them into chocolate.

Have you ever heard of chocolate covered key lime pie? We hadnt either until we were on our Caribbean cruise last year. We had three ports of call and Key West was our final stop. I am a planner and I had researched each port we stopped at prior to leaving for our cruise, and I read that you cant go to Key West without getting a slice of chocolate covered key lime pie. First I have to say that Key West is awesome! We went on the cruise with four other couples and had a blast, but Key West was definitely the best stop. Our favorite picture of us from the trip was right before we went on a two hour jet ski tour. I also was still blonde back then. Im thinking of switching back. Anyway, back on track After our jet ski tour, we found the shop that everyone was talking about.

Can we just talk about how its August already?! Like, where did summer go? It went by in a blur. Its hard to believe that in just a couple short weeks one of my babies will be starting high school and the other will be starting kindergarten. We may be close to fall and heading back to school, but I am still baking up a storm with all the summer produce. My method for picking the best fruit for my next baking project is usually choosing what fruit I can smell when I first walk into the farmers market. Lately its been strawberries and peaches. ALL the peaches as you will see in my next post. Hint, hint, wink, wink.

But being a citrus lover as I am, I stopped short in my tracks earlier this week when I saw the bags and bags of tiny little key limes, and recalled a yummy treat I had while we were recently vacationing in Sarasota, Florida. While hanging out in a local ice cream shop, I noticed that one of their specialties was chocolate dipped key lime pie. Me being somewhat burned out on ice cream , I decided to try it and found that I very much enjoyed it. So I picked up a few bags of those little key limes and created something similar at home these chocolate dipped key lime pie pops.

Frozen Key Lime Pie On A Stick: The Swingle

You Havent Lived Until Youve Had a Swingle, the brainchild of Steves Authentic Key Lime Pies in Red Hook.

I walked through the outdoor Smith Street Market in Brooklyn Heights on Sunday and came upon a small stall selling only two things: Mini Key Lime Pies and Swingles. There is nothing like walking around an outdoor market, on a nice day, munching on the most filling and delectable popsicle of your life, aka the Swingle. If the Swingle is a mystery to you then prepare to be enlightened.

The Swingle: A frozen, mini key lime pie, dipped in dark chocolate, on a stick. While the name is bizarre and the creation quite inventive, the end product is something out of your wildest food fantasies. Strangely and aesthetically pleasing, the Swingle is straight from a post on one of those foodie instagrams that you live vicariously through while eating a pb& j alone at work. And it could all be yours for six American dollars!

How To Make Chocolate Dipped Key Lime Pie


So you’ve baked your key lime pie. It’s been chilling in the fridge and is ready to be sliced. Before you start slicing, line a cookie sheet with parchment paper. This way you can evenly space out the slices while they freeze. And, you can return them right to the cookie sheet once they’ve been dipped.

Slice the pie like you normally would. Place the slices on the cookie sheet and cover with plastic wrap. Place the cookie sheet in the freezer for 4 to 6 hours or up to overnight. When you’re ready to dip the slices, take then out of the freezer and stick a popsicle stick through the crust side of the slice and return the slices back to the freezer for 30 minutes.

Prepare the chocolate: For the recipe I highly recommend dark chocolate it compliments the tart of the key lime pie filling so well but you can use whatever you have. I think milk chocolate would be great with this too. Melt the chocolate in a glass, microwave safe bowl until it is silky smooth but before not to over do it – chocolate can burn easily. Once the chocolate is completely melted it’s time to dip!

Kermits Key West Key Lime Pie Shoppe

Kermits is a great spot for coffee or breakfast before heading out on a boat excursion. However, in addition to the cafe they also have a key lime pie shop featuring traditional, mango, strawberry, and my favorite, the chocolate-dipped key lime pie on a stick.

You will see frozen, chocolate covered key lime pie all throughout the Keys, but Kermits is one of the best. Their key lime pie is creamy and the chocolate is not too thick, making it easy to eat before it melts. By the way, the mango key lime pie isnt too shabby either!

Old Town Bakery, Key West

Located in Old Town, a little off-the-beaten path for those wandering Duval Street, you will find the cute, local Old Town Bakery. They offer coffee, pastries, breads, and a unique flavor to their key lime pie. Instead of the traditional graham cracker crust, they use a crushed gingersnap crust. The pie itself is nicely limey and tart, and it is also quite creamy.

If key lime pie isnt your thing, they also have a delicious brownie with a chocolate ganache center. Just be forewarned that it is big enough to share.

Let’s Start With The Pie

So for chocolate dipped key lime pie you need to start with a delicious key lime pie. I highly recommend this one. It’s super simple, and freezes wonderfully. The filling is sweet, creamy & tart essential for a traditional key lime pie. The graham cracker crust is thick and gives great texture to compliment the filling and goes well with chocolate.

The one thing about this recipe is that you have to wait between chilling the pie after it’s baked and then, freezing the slices. You definitely want to make sure the pie has had the right amount of time to chill and then you really want to slices to be frozen. The last thing you want is for the key lime pie slices to be falling apart when you dip them in chocolate. It’s worth the wait but it’s the one thing I wanted to mention before you get started.
