Grandma’s Sour Cream Banana Bread – How to Make

In our house, we tend to adhere 80% of the time to a paleo-style diet. No refined wheat flours, very light on the starch, heavy on pastured proteins, vegetables and fruits. This type of diet will change the way you look at added sugar. But it can also leave you feeling backed into a corner when it comes to baking.

Have no fear, I have a tip.

Heres A Few Reasons Why This Banana Bread Is Our Favorite

  • It only requires two bananas! Maybe three. Or two and a half. You only need one cup of mashed bananas, so its not super banana heavy. It also means you dont need a whole bunch of bananas in order for this to work!
  • The sour cream makes the bread super tender and moist. You can also use plain greek yogurt! Ive made it probably hundreds of times using both sour cream and greek yogurt. Its interchangeable!
  • The sprinkle of chocolate chips on top brings the perfect amount of chocolatey sweetness. I like it this way better than sprinkling chocolate chips in the batter. When they are on top like this, its almost like you get a chocolate crust on top of the bread. Just make sure they are in a single layer, otherwise they will mostly sink into the center!
  • This is a classic banana bread that isnt spiced at all. No nuts either. Im strictly team no nuts in desserts.

Is this a dessert though? Lets be real banana bread is just an excuse to eat cake and dessert for breakfast. And Im not mad about it.

Of course feel free to make this your own in a way that works for you. Add some nuts, leave the chocolate chips off or stir them right into the batter.

Its the perfect treat to make this weekend!

  • There’s a sweet and crunchy topping

How To Mash Bananas

Did you know you can use your electric mixer to mash bananas? Break or slice the spotty bananas into large pieces and place in the bowl of your stand mixer or use a regular mixing bowl and your hand mixer. Begin beating on low, then gradually increase to medium-high speed as the bananas break down into mashed banana. Transfer the bananas to another bowl and use the mixing bowl for the banana bread ingredients.

I do this when I mash bananas for banana muffins, too.

Faq: What You Need To Make The Recipe

Sour Cream Banana Bread Recipe

Can I make the recipe in an 8 x 4-inch loaf pan instead of a 9 x 5-inch loaf pan?

Yes, yes you can! Your loaf will come out even taller and more picturesque than mine. My only warning is that theres a higher risk of the batter overflowing out onto the oven floor. Thats because youre cramming the same amount of batter into a smaller cake pan. So be sure to set the loaf pan on top of a sheet pan to catch any potential batter spillage.

Can I make the recipe in a muffin pan to make banana bread muffins?

You can, but I wouldnt recommend it. Banana bread recipes are made specifically for loaf pans to produce thick and dense loaves. As a result, baking a banana bread recipe in a muffin pan will result in thick and dense muffins. Baking this recipe in a muffin pan could potentially result in muffins that are too greasy or heavy. Youd be better off finding a recipe thats specially for muffin pans that make soft and light muffins. In fact, I even have a recommendation! Check out this banana cinnamon muffin recipe .

The Role Of Baking Powder And Soda In Banana Bread

Worlds Best Sour Cream Banana Bread

Any reliable quick bread recipe will call for at least one teaspoon of baking powder per cup of flour. If a recipe doesn’t follow this textbook, proven ratio, click away.

Chemical leaveners give baked goods rise and if used correctly a beautiful crumb. Baking powder and soda get the job done when activated by acid and heat in the oven, minus all the time spent whipping air into select ingredients. #bakingisscience

What Causes The Speckles In Banana Bread

Have you ever wondered why some banana bread has dark speckles and others dont?

Ive done a lot of reading and testing to figure out why some banana bread loaves have a light-colored crumb and other recipes produce the dark speckles like you see in these pictures.

    The reason? Baking soda.

Banana bread recipes that have a larger amount of baking soda and less baking powder usually have a darker, more speckled crumb. This sour cream banana bread has a full teaspoon of baking soda and no baking powderand it clearly results in darker speckles.

This much lighter buttermilk banana bread only has 1/8 teaspoon baking soda .

The Super Moist Banana Bread Stores Well

There are several ingredients in this recipe like the sour cream that keep the banana bread moist and flavorful. Not only does this banana bread keep well at room temperature, it also stores wonderfully in both the fridge and the freezer. Can I make this recipe into muffins?

Many readers over the years have done just that. Theyve reported back with good results. The recipe will yield about 17-20 muffins .

Can I sub the sour cream with buttermilk or plain milk?

Buttermilk can be used in place of the sour cream . Subbing in dairy milk or non-dairy milk for the sour cream may affect the texture and overall end result of the bread because the recipe needs the acidity of the sour cream to turn out correctly.

Can I add nuts, chocolate chips or other add-ins?

Yes, that works great! Toss them in with the flour .

The Secrets To Make A Good Banana Bread:

There is banana bread, and there is banana bread made with sour cream. My favorite banana bread is made with sour cream, and there are only two secrets to making a great loaf: really ripe fruit and sour cream. Lets talk about each of them.

    Ripe bananas.

There is no question that the best banana bread is made with ripe bananas, usually the ones that have darker brown spots, and everyone avoids them.

Green-yellow bananas will add little or no flavor. A bright yellow banana that otherwise would be perfect for snacking would not do either. Can you use them in the recipe? Technically yes, but the results will be very boring.

You have to use only bananas that are past their eating prime- light brown with darker brown spots will have the moisture and rich taste necessary for a fine quick bread like this one.

Dont throw out those overripe bananas just place them in the refrigerator to stop the ripening process until you are ready to make your banana bread. You can also freeze them and use them later.

Ive tried many basic banana bread recipes and this one is my very favorite. Readers have fallen in love too! What makes this one so good? This banana bread has the most bananas out of any banana bread Ive ever made before. 2 whole cups of mashed banana, which is about 4 large bananas. More banana adds more moisture and flavor to the finished product.

How To Make Chocolate Banana Bread

    1. Preheat oven to 350°F. Lightly coat a 8½” x 4½” loaf pan with non-stick spray and line with parchment paper. Whisk the flour, baking soda, and salt together in a medium bowl.

    2. Place peeled bananas in microwave-safe bowl cover with plastic wrap and microwave on high power until bananas are soft and have released liquid, about 4 minutes.

    3. Transfer bananas to a fine-mesh strainer placed over medium bowl and allow to drain, pressing on bananas a couple times. Let cool for 5 minutes. Set liquid aside for glaze.

    4. Mash the bananas coarsely using a fork. Add butter, sour cream, brown sugar, eggs and vanilla extract and whisk together.

    5. Pour the banana mixture into the flour mixture and stir until just combined.

    6. Gently fold in the chopped dried bananas and chocolate chips.

    7. Scrape batter into the prepared pan. Bake for 30 minutes, then rotate pan 180 degrees.

    8. After about 45 minutes, keep your eye on the color of the top. If it is getting too brown, loosely tent it with foil. It should take about 55 to 75 minutes. The center of the loaf should read 200-205 F with a digital instant-read thermometer.

How Ripe Should Bananas Be For This Recipe For Banana Bread

Okay, word on the street is that the more ripe the banana, the better. Like one expression I stumbled on said, A banana bread banana isnt yellow its black.

I disagree. Ripe, yes. Spotted brown or streaks of black, definitely. Completely black, no. I dont enjoy the overripe smell, for one thing. This is a personal preference and smell might be your best bet for figuring out what you like. You want to use the bananas before they have that trace of smell your nose identifies as rotten. No thank you!

What Other Ingredients You Will Need For This Banana Bread:

    Sour Cream Banana Bread Recipe
    • Baking soda

Most baked goods that use sour cream also use baking soda. The acid in sour cream activates the baking soda, which acts as a leavening agent. The combination contributes to the softer texture of the bread.

    • Granulated sugar

My choice for this recipe is regular granulated sugar. You can replace it with other types of sugar if you want a different flavor, like coconut sugar or brown sugar.

If you want a more caramelized taste, use dark brown sugar that has more molasses. You can even use half regular sugar and half brown sugar.

    • Large eggs

Large eggs are standard in the US for baking, so this is what we will use.

    • All purpose flour
    • Chopped nuts

The nuts are optional, and my favorites are walnuts or pecans. However, you can replace them with macadamia nuts or even almonds. If you are allergic to nuts, feel free to skip them entirely.

    • Vanilla extract

Use the best vanilla you can get. I know vanilla is not a cheap ingredient anymore, but fake vanilla just doesnt taste good, and you might end up with a loaf of banana bread that has a weird chemical aftertaste.

    • Over ripe bananas

The Recipe Helps Prevent Food Waste

My future mother-in-law recently sent me this article from The Kitchn that described how many folks were baking banana bread during these current critical times. The article speculated that folks were stocking up on bundles of bananas during their weekly or bi-weekly shopping trip, only to find that they had too much of the fruit leftover and over ripened.

Its well known that the best banana breads are made with over ripened bananas. You know, the kind that are overly fragrant, and extremely spotty to the point of almost looking black? This banana bread recipe takes full advantage of those bananas.

How To Make The Best Banana Bread

Like I mentioned earlier, Im a little nuts for banana bread. Its one of my favorite things to bake!

Since Ive made what feels like thousands of loaves over the years, Ive discovered a few tips and tricks for making the very best moist banana bread every time:

    • Use very ripe bananas. Im talking over ripe, with lots of brown spots! You just cant get the same results from yellow bananas. . . and please dont try mashing green under ripe bananas for this recipe. Theyll be harder to mash and the bread wont taste as good.
    • Speaking of mashing, make sure to mash the bananas in a separate bowl before beginning the recipe. A potato masher or heavy fork both work well.
    • Dont over mix! For soft moist banana bread, mix the dry ingredients gently into the wet just until everything is combined.
