  • The sour cream makes the bread super tender and moist. You can also use plain greek yogurt! Ive made it probably hundreds of times using both sour cream and greek yogurt. Its interchangeable!
  • The sprinkle of chocolate chips on top brings the perfect amount of chocolatey sweetness. I like it this way better than sprinkling chocolate chips in the batter. When they are on top like this, its almost like you get a chocolate crust on top of the bread. Just make sure they are in a single layer, otherwise they will mostly sink into the center!
  • This is a classic banana bread that isnt spiced at all. No nuts either. Im strictly team no nuts in desserts.

Is this a dessert though? Lets be real banana bread is just an excuse to eat cake and dessert for breakfast. And Im not mad about it.

Did you know you can use your electric mixer to mash bananas? Break or slice the spotty bananas into large pieces and place in the bowl of your stand mixer or use a regular mixing bowl and your hand mixer. Begin beating on low, then gradually increase to medium-high speed as the bananas break down into mashed banana. Transfer the bananas to another bowl and use the mixing bowl for the banana bread ingredients.

Yes, yes you can! Your loaf will come out even taller and more picturesque than mine. My only warning is that theres a higher risk of the batter overflowing out onto the oven floor. Thats because youre cramming the same amount of batter into a smaller cake pan. So be sure to set the loaf pan on top of a sheet pan to catch any potential batter spillage.

Can I make the recipe in a muffin pan to make banana bread muffins?

You can, but I wouldnt recommend it. Banana bread recipes are made specifically for loaf pans to produce thick and dense loaves. As a result, baking a banana bread recipe in a muffin pan will result in thick and dense muffins. Baking this recipe in a muffin pan could potentially result in muffins that are too greasy or heavy.     Ripe bananas.

    There is no question that the best banana bread is made with ripe bananas, usually the ones that have darker brown spots, and everyone avoids them.

    Green-yellow bananas will add little or no flavor. A bright yellow banana that otherwise would be perfect for snacking would not do either. Can you use them in the recipe? Technically yes, but the results will be very boring.

    You have to use only bananas that are past their eating prime- light brown with darker brown spots will have the moisture and rich taste necessary for a fine quick bread like this one.

    Dont throw out those overripe bananas just place them in the refrigerator to stop the ripening process until you are ready to make your banana bread. You can also freeze them and use them later.

This banana bread has the most bananas out of any banana bread Ive ever made before. 2 whole cups of mashed banana, which is about 4 large bananas. More banana adds more moisture and flavor to the finished product.

    How To Make Chocolate Banana Bread

    1. Preheat oven to 350°F. Lightly coat a 8½” x 4½” loaf pan with non-stick spray and line with parchment paper. Whisk the flour, baking soda, and salt together in a medium bowl.

    2. Place peeled bananas in microwave-safe bowl cover with plastic wrap and microwave on high power until bananas are soft and have released liquid, about 4 minutes.

    3. Transfer bananas to a fine-mesh strainer placed over medium bowl and allow to drain, pressing on bananas a couple times. Let cool for 5 minutes. Set liquid aside for glaze.

    4. Mash the bananas coarsely using a fork. Add butter, sour cream, brown sugar, eggs and vanilla extract and whisk together.

    Okay, word on the street is that the more ripe the banana, the better. Like one expression I stumbled on said, A banana bread banana isnt yellow its black.

    I disagree. Ripe, yes. Spotted brown or streaks of black, definitely. Completely black, no. I dont enjoy the overripe smell, for one thing.     My choice for this recipe is regular granulated sugar. You can replace it with other types of sugar if you want a different flavor, like coconut sugar or brown sugar.

    • Dont over mix! For soft moist banana bread, mix the dry ingredients gently into the wet just until everything is combined.
