Yes! That this homemade chicken pot pie recipe is freezer friendly is one of the best things about it! You can enjoy this classic comfort food anytime.

There are a few ways that you can prep it for freezing. Often, I will make double or even triple batches of the filling. I like to use my 2-cup Souper Cubes to freeze the filling but any airtight container will work. You can freeze the filling for up to six months, just dont forget to date and label you container!

Freezing just the filling saves space in the freezer but also allows you to assemble the pot pies just before baking. The recipe card below has all the instructions on how to do that.

Another option is to assemble the whole pie, then wrap in foil or put in a zip top bag . This is a great option if you bring meals to others or have the space in your own freezer to store it. Instructions on how to bake the pie from frozen are in the recipe card below.

No matter what you choose, I love the flexibility of this recipe and of course its simplicity and great flavor. I hope you enjoy it too!

Savory Chicken Pocket Pies

Makes: 10 / Preparation time: 20 minutes / Total time: 2 hours, 20 minutes

1 heaping cup of shredded chicken from 1 chicken freeze remainder for other recipes

2 tablespoons unsalted butter

1/3 cup chopped carrot

1/2 teaspoon coarse salt

11/2 cups chicken broth

1/4 cup grated Parmesan cheese

1 recipe Cream Cheese Pastry

1 large egg, for egg wash

Place the chicken in a pot and add water to barely cover. Bring to a boil, reduce heat and simmer for 50 minutes. Skim and discard any foam as it rises to the surface. Remove the chicken to cool. Continue to boil the broth to reduce to about 1 quart. Remove the meat from the chicken and shred.

To make the filling, in a medium hot skillet, melt the butter and add the onion, celery and carrot. Sauté over medium heat for 2 to 3 minutes. Stir in the salt and flour and cook for 1 minute more. Add the chicken broth and stir until thickened, about 2 minutes. Stir in 1 heaping cup shredded chicken and the Parmesan cheese. Cool in the fridge.

Preheat the oven to 375 degrees. Butter or line a baking sheet.

Place the pocket pies on the prepared baking sheet and chill for a few minutes. Prick each pie on top twice with a fork. When ready to bake, beat the egg with 1 tablespoon water. Brush the egg wash over each pocket pie. Bake for 20 to 25 minutes, until golden brown. Let rest for 5 minutes before serving. The pies can be cooled and frozen to reheat in the microwave.

    This is a pretty straight forward recipe, especially when made you make individual Chicken Pot Pies like Ive done. I only have 2 tips to ensure you nail The Pot every single time:

    • Thicken filling to desired consistency before putting it in the pots. The sauce wont thicken at all once the lid is on. So keep cooking until the sauce is a nice creamy consistency and not watery. Nobody likes a watery pie filling!

    • Cool filling before topping with puff pastry. Hot filling = melts butter in pastry that creates layers = less puff.

    That moment with this Chicken Pot Pie comes out of the oven, all golden and puffed up, and you know that under that buttery lid the creamy filling is bubbling away with the tender chicken and the vegetables and it just smells so amazing
