  • Allow it to cool down first , THEN place it in your fridge.

My husband Jack and I have shared an obsession for Key Lime Pie ever since our early days of dating.

One year, because of work schedules, neither of us could travel to see family for the Thanksgiving holiday. Cool And Chill Before Serving

If you cut the pie when its warm, it will probably lose its shape and be like warm pudding. Not pretty.

Take the pie out of the oven when its done and allow it to cool to room temperature before refrigerating it.

After about an hour at room temp, the pie should be ready to go in the refrigerator. Its best if you can cover the pie to keep it safe from harm or odors.

Try to cover the key lime pie without touching the top. Its not like a pudding pie where plastic wrap can sit directly on the surface, it wont get a skin. A Pie Carrier or a Bakers Sheet with Lid will do.

The pie will need to be refrigerated for at least 4 hours and can even wait as long as 3 days to be served. I think the flavor of key lime pie is best on the 2nd day.

Zest your key limes before you make key lime juice. They are much easier to zest when they are whole and not all juicy.

When you zest the key limes, you need to be extremely careful not to get any of the pith into your zest. Key lime pith is very bitter, I think it tastes like bile. Not very appetizing.

Lightly rub your key lime across the microplane to scrape the green part off of the key lime rind. You only need a 1/4 of a teaspoon for this recipe, so about 2-3 key limes should do.

Ive had my fair share of key lime pies since I moved to LA, but none like the one youre about to read about.

Fat + Flour is a pie stand located inside the historic Grand Central Market. Founded by chef and author Nicole Rucker, who was the pastry chef at Gjelina and former owner of Fiona bakery on Fairfax Avenue. Nicole has won multiple awards like the National Pie Championship in 2012 and has recently been nominated for a James Beard Award, one of the most prestigious awards in the culinary industry. Shes also been featured in many TV show segments, among them, Late Night with Seth Meyers.

I found Fat + Flour because restaurants such as Woon Kitchen and Found Oyster shared her famous key lime pie on their Instagram stories, which instantly caught my attention.

When I saw the pictures on the website, I noticed an individual key lime pie, but when I called, they told me they dont make it anymore. So, you can either buy an individual slice for $6 or the whole pie for $36.

I highly suggest preordering the key lime pie on their website either the same day, or the day before. For whole pies, a 24-hour notice is required. Since they sell out of the key lime pie all the time, its much more convenient to place your order online the day before and pick it up the next day.

Whisk The Egg Yolks With The Key Lime Zest

After separating the eggs into the bowl, youll dump the lime zest into the eggs and whisk away until the eggs yolks are lemony yellow and the lime zest has been evenly distributed.

If any of the lime zest is clumping, smash it against the side of the bowl with the whisk and then whisk it some more. This takes 2-3 minutes. Its good for the arm muscles.

I dont use a mixer for it. Too many dishes for too little work.

If you have a physical condition where you cant whisk by hand for 2-3 minutes, use your mixer on a lower setting. We arent trying to whip it up too much.

Going into the challenge we all knew we had to make a Key Lime Pie. Of alllll the things I have made in my life, a Key Lime Pie wasnt one of them. So, a few days before the competition I made a few variations to see which my family enjoyed more.

We each were allowed to bring a secret ingredient to make our Key Lime Pie. My first thought was tequila, so I made one in my test run with that. My second thought was sour cream.

Garnish And Serve Or Just Dig In

Now that you have baked a wonderful key lime pie, you can slice it and serve it as it, or you can garnish it.

Everyone has their own personal preference for whipped cream or no whip cream, but I love it.

I dont bury the key lime pie in it but I love piping some whipped cream rosettes or ruffled dollops with my pastry tubes and piping bags. For the pie in the picture, I used my Ateco Decorating Tube #846. These XL decorating tubes are just perfect for pies! I really like these reusable Silicone Pastry Bags too!

  • Preheat the oven to 350°F with rack in the center position.

  • Place egg yolks in your non-reactive mixing bowl along with the key lime zest.

  • Whisk the egg yolks and key lime zest until the egg yolks are lightened and lemony in appearance and the key lime zest is evenly distributed throughout the yolks. The zest should look like tiny flecks of light green throughout the mixture.

  • Pour one whole can PLUS 2/3 cup of sweetened condensed milk into the egg yolk mixture.

  • Pour key lime juice into the egg yolk and sweetened condensed milk and stir until all of the ingredients are well mixed and there are no streaks. The key lime pie filling will be uniform in consistency and color.

  • Set the graham cracker crust in center of a baking sheet. Pour the key lime pie filling into the crust. The filling should be lower than the edge of the crust, do not overfill.

  • Baking and Serving

  • Remove the key lime pie from the oven and allow to cool for approximately 1 hour at room temperature.
