    Creamy Greek Yogurt Key Lime Cheesecake!!! Rich, decadent, and loaded with real key lime flavor this cheesecake deserves a top spot on your to-make list.

    Im sure by now your pretty little eyes are completely over reading the words OMG YOU GUYS THIS IS THE BEST RECIPE EVER But friend, seriously, from the bottom of my heart, this one right here really really really is the best thing ever. Well, as far as key lime cheesecakes go, that is.

    This decadent cheesecake is super rich , creamy, and bursting with a fresh kiss of key lime in every bite! And the graham cracker crust is so classic with its buttery crumbs and subtle sweetness. Top it with a swirl of whipped cream and I mean youre in heaven!

    Dont believe its the best?! Well, I guess youll just have to make it and judge for yourself But Im pretty sure youll agree this is one amazing cheesecake!

    P.S. This cheesecake freeze really really well , so dont be afraid to pop a few slices in the freezer for another time.     • Key lime pie isnt meant to be overly sweet. The sweetness in this pie comes from the sweetened condensed coconut milk. Additional sweetness can be found in any dairy-free whipped cream you use or the type of pie crust you pick! If you do want to make it super sweet, you can add some extra granulated sweetener to the filling when you are preparing it on the stove.
    • Dont skip the lime zest! It adds so much extra fresh citrus taste to your slice of pie!
    • I recommend using fresh key limes or bottled key lime juice. If you must use regular fresh limes or bottled regular lime juice, Id suggest adding extra sweetener to reduce any bitterness.
    • If youre not feeling the gluten-free graham cracker crust, you can prebake a standard gluten-free pie crust as well!
    • Depending on the brand of coconut milk and sweetened condensed coconut milk you use, you may need an extra tablespoon of starch. But, remember, that the filling will thicken further once its chilled.

    I have made this before, and instead of having a crust, I sprinkle crushed graham cracker crumbs on top. Just enough to get the taste and I dont even count the points , its so little to count

    Key Lime Pie is not at all well known here in South Africa but since I was first introduced to it about 10 years ago it has been one of my best delicious go to desserts and this recipe is particularly good! When I dont have any Cool Whip I replace it with fresh cream which is what I did for this recipe and it was very very yummy!
