Storing Freezing And Making Ahead

Since this crack pie recipe takes a bit of time to make you can do a few of the steps in advance to save on time as needed.

  • Store: Keep the pie wrapped in plastic wrap for up to 5 days in the refrigerator.
  • Freeze: Wrap the pie in plastic wrap and store for up to 1 month in the freezer. Transfer to the refrigerator at least 1 hour before you plan to serve it.
  • Make-Ahead the Crust: Make the cookie crust up to 2 weeks in advance. Wrap in plastic and refrigerate until you are ready to use.
  • Make-Ahead the Filling: Make the filling up to 1 week in advance and refrigerate in an airtight container.

Milk Bars Crack Pie is what dreams are made of: a giant cookie with an extremely gooey middle. All dusted in sugar. Think of the oat cookie crust as a thick and crispy vessel for a smooth and buttery filling. Extremely sweet and addictive, hence why the name. As mentioned, it was invented by the darling Christina Tosi while she was working as a chef for David Changs Momofuku restaurant in New York City. I have Momofuku on the list of places I have to dine at before I die. One day I should make this list a post on here. Until then, you have one revealed right here.

Ive been waiting to bake this pie ever since my mom gifted me the Momofuku Milk Bar baking book. This recipe calls for two 10-inch pies and I thought about splitting the recipe in half but nope. The more pie, the better. Bring it on.

The only issue is that I had an 8-inch pan and a 12-inch pan so I just had to make it work. I baked the larger pie for a couple minutes longer and they turned out the exact same. You can also use those disposal tin pie pans you can find at the grocery store if youre short on pans.

My husband and I recently had a weekend away and I read Momofuku Milk Bar by Christina Tosi. I bought the cookbook thinking that Id add it to my collection but that Id probably never actually make one of the recipes. You see the recipes are complex, have many steps and are all time consuming. However once I started reading the cookbook I was sucked in and by the time I finished the book there were many recipes that I knew I had to try!

The first recipe that Ive made it this one: Crack Pie. As the name implies, its a very addictive pie and I have to agree with Christina that its the corn powder thats the secret ingredient that completes the pie.

My biggest takeaway from making this was was to never throw cookies away! They make awesome pie crust. Im not sure why Ive never thought of this before but the next time I have cookies past their eating prime Im going to turn them into a crust!

If you have time to spend making this from scratch, I recommend doing so. Chances are that youll learn something along the way!

    Yes, in 2019 the Momofuku Milk Bar franchise changed the name of Crack Pie to Milk Bar Pie. The change was due to continued controversy over the name and what it alludes to. The pie has been on the Milk Bar menu since the stores opening so it seems like a good name change to me!

    The Milk Bar Crack Pie was invented by thequeen of desserts Christina Tosi. And the story about it its quite a funny one too gotta order your copy of Momofuku Milk Bar, methinks. If you dont want yet another book, I have the solution to it, I shall tell you the story. Or Netflix can help you too, in this episode which features her! Have you ever watched Chef Table? If so, you do really need to check the Pastry instalment of it, its my absolute favourite, of course! She is such a talented chef, you are bound to fall in love with her and her thoughts. I definitely am. Not a news, we all have a huge crush on her in this house!

    Also, just before we dive in, the pie itself has been renamed in 2019. And its definitely worth mentioning as you might find it under different names. This is because of the number of complaints they got from former addicts and such. Which, is completely understandable, as there is no way anyone should be glorifying drug use.     Do I Have To Use Corn Powder

    Because I was halving the Momofuku crack pie recipe, this meant 1/8th cup or 2 tablespoons corn powder and rather than ordering or sourcing it at Whole Paycheck, I simply used 1 1/2 tablespoon King Arthur all-purpose flour and things turned out just fine.

    It must be all the sugar and fat in this pie that kept me from missing those two tablespoons of corn powder because there is so much going on already. Butter in the cookie to make the crust, then more butter adding when crumbling and packing the crust down into the pie plate, more butter in the filling.

    And I sure wasnt complaining.

    In true Christina Tosi fashion, some of the ingredients are a recipe in and of itself. For the crust, you basically bake a big oat cookie so you can crumble it up later. I mean that on its own is so so good. Its chewy and sweet and everything you want in an oat cookie. I want to use it for every pie recipe from here on out!

  • Make oatmeal cookie crust: Bake an oatmeal cookie dough on a sheet, let it cool and then crumble it up. At this stage, its hard not to break off a piece of cookie for yourself! Mix the crumbs with butter and brown sugar, then press the mixture into a pie dish for the crust. The crust is the perfect cookie consistency to hold the gooey buttery filling.
  • Prepare the filling: The filling is a mixture of sugar, milk powder, egg yolk, heavy cream, butter and vanilla. This can be mixed together with a whisk by hand or by using the whisk attachment for your stand mixer. Pour this liquid filling into the cookie crust and bake.
  • Bake the pie: The baking process can be finicky. Ive made this pie a few times and I have learned to let the pie bubble and use the full baking time. The pie will still jiggle in the center and it may still be bubbling when time is up. Thats okay! Remove the pie from the oven and it will solidify as it cools.

    How To Make Milk Bar Chess Pie

  • Preheat oven to 350°F.
  • Mix the oatmeal cookie mix: Stir 1 stick softened butter, 1 Tbsp. water, and 1 egg in a medium bowl. Stir in the cookie mix until you have a stiff dough.
  • Press the dough flat into a greased 9×13 baking dish and bake for 25-30 minutes or until baked through. Remove from the oven.
  • Let the oatmeal cookies cool completely, then crumble them. Add 2 cups of the crumbled cookie mix with 3 tablespoons of softened butter and 1 ½ tablespoon brown sugar to a food processor, and process until you have a fine crumble.
  • Grease an 8×8 baking dish and press the oatmeal crumble mix into the bottom of the pan.
  • In a large bowl, whisk together ¾ cup granulated sugar, ½ cup brown sugar, 2 Tbsp. nonfat milk powder, ¼ tsp. salt, ½ cup unsalted softened butter, cup heavy cream, 1 tsp. vanilla extract, and 2 Tbsp. corn starch until well-combined.
  • Pour the pie filling mixture over the oatmeal crust. Bake for 30 minutes at 350°F.
  • Reduce heat down to 325°F and bake for an additional 20 minutes until the edges are set and the center is almost set. The center will be slightly jiggly.
  • Remove from the oven and let cool at room temperature. Refrigerate overnight before serving.
  • When ready to serve, sprinkle with powdered sugar, cut into square bars, and enjoy!

    What Ingredients Do I Need To Make The Crack Pie From Milk Bar

    Sugar is the actual main ingredient here. Both granulated sugar and light brown sugar will be required. Then you will need milk powder and corn powder, but also butter and cream. And egg yolks! So, aside possibly from the corn powder, you should have everything in your pantry. And you should be able to make this pie as soon as possible! Why am I so pushy, you ask? Because you have to try this pie before telling me I was absolutely right.

    It goes without saying, but the best egg yolks, butter and cream you can get your hands on, the better. The quality of ingredients does affect a bake and its taste, and you might know that already. So this is the one thing I would recommend over and over for everything and every dish or bake. Check the fat content in that butter you always pick up! Make sure your eggs are fresh! Pick the cream you like to work with! It is all worth the extra pennies at the end, when savouring your creation.
