Before I completely jump into the pie-lovin, I have a bit of a personal update, so feel free to skip ahead to PIE if thats more your speed right now. I totally wont know the difference.

Okay, so truth be told, I havent really cooked in almost 2 months now. Its been a whirlwind kind of time for me.

Ive been completely consumed with grad school and practically living in the lab, trying to finish up. And the stress in my life has once again got the best of my health and so I needed to take a step back and sort of recuperate and take care of myself again.

Anyone with an autoimmune disease knows exactly what I mean when I say that stress is the strongest and quickest way to trigger inflammation and illness.

Needless to say, I didnt have the time or leftover energy to cookand much less, blog about my cooking. But now that Im taking somewhat of a breather for myself, Im so happy that I can get right back into cooking and blogging again.

Something about it gives me so much energy, instead of taking any. Honestly, I could be up all night working on editing videos and writing up posts and recipes, and the next day Ill be totally filled with a sunshine-y energy.

Graham Cracker Macadamia Nut Crust

Key lime pie is traditionally made with graham cracker crust. Its the most wonderful crunchy, sweet, and buttery bed for the fresh key lime filling. But hey, how about getting a little nutty? You wont believe the difference macadamia nuts make. I use about 1/2 cup of macadamia nuts in place of some of the graham cracker crumbs and the result is pure bliss. Macadamia nuts are a gem and, as it turns out, often overlooked in the baking world. Why though? Theyre so good.

You only need 4 ingredients for this awesomely thick crust.

  • Macadamia Nuts
  • Graham Crackers
  • Melted Butter
  • Sugar
  • Pulse the macadamia nuts with graham crackers, then mix with melted butter and sugar. Because key limes are a little sweeter than regular limes, you will love the sweet/tangy key lime filling with the salty graham cracker macadamia nut crust.

    Start with a Graham Cracker Crust

  • Lightly spray a 8 9.5 pie pan with cooking spray. Set aside.
  • Mix graham cracker crumbs, sugar, and butter in a small bowl. Press the crumb mixture into the prepared pie pan. Use the bottom of a measuring cup to really press the crust down. Chill pie crust for at least 30 minutes before filling.
  • You can also use a store bought graham cracker crust if youre looking to save some time!

    Next Make the Lemon Pie Filling

  • Beat cream cheese until smooth. Add pudding mix and beat well until creamy and combined.
  • Add milk, beating in increments until creamy, thick and smooth.
  • Beat in lemon zest. Pour mixture into prepared pie shell.
  • Chill for at least 3 hours. The pie will set up firmly during this time.
  • Finish With Whipped Cream

  • In a large cold bowl, whip heavy whipping cream until soft peaks form. Add in sugar and vanilla extract and continue whipping until stiff peaks form.
  • Spread whipped cream on top of chilled pie. Top with additional lemon zest.
  • Garnish with lemons, mint, and raspberries before serving, if desired.

    This recipe calls for four different forms of coconut:

    • Coconut flakes are the dried, shaved, unsweetened meat of the coconut. Toasted, they make a pretty garnish for desserts they are also delicious in granola. Most large supermarkets carry them but you can always find them in organic markets.

  • Graham Cracker Crust: We use my favorite graham cracker crust for the base of todays pies. I use this crust recipe for pies, cakes, cheesecakes, and more. The buttery and slightly crisp texture is the exact contrast I want with these little key lime pies. You only need 3 ingredients butter, graham crackers, and sugar so you know its good. To ensure a compact crust, make sure you press the mixture tightly into each individual muffin cup. Youll use a little over 1 Tablespoon of crust in each individual pie.
  • Key Lime Pie Filling: Our key lime pie filling is tart, sweet, and creamy exactly as key lime pie should be. Cream cheese acts as the base of the filling, providing a little structure and a subtle cheesecake flavor. Also adding a little structure, as well as a rich texture, are egg yolks. To those, well add sweetened condensed milk and key lime juice. For best flavor make sure you use key lime juice, though regular lime juice works in a pinch.

    Today, 12 days before Sallys Candy Addiction Cookbooks manuscript is due, Im going to show you exactly how to make one of my favorite truffle recipes. Ive been surrounded by truffles for the past three months and have about 1 billion truffle recipe ideas in my head!

    Youd think Id be sick of truffles by now. But, common. Bring on the chocolate!

    Here is exactly where this recipe idea came from. About 10 years ago, my friend Amy was telling me about these incredible dark chocolate covered key lime pie treats she had in Florida one time. Key lime pie is her favorite dessert. Instead of birthday cake each year, she has key lime pie.

    Back to those dark chocolate key lime pie treats. The slices of pie are frozen and sold on a stick. Yes, frozen key lime pie slices on a stick covered in chocolate. Have mercy. Amy says they are the ridiculously good. Uh, I can imagine. Naturally, the thought of them hasnt escaped my mind in 10 years. So I recreated them. Sorta.

    Key lime pie truffles the centers are made from white chocolate and lime infused cream. Citrus-y tart lime pairs wonderfully with sweet white chocolate, no? To avoid a sugar rush , I cover the key lime truffles in dark chocolate. A little white chocolate drizzle, tinted very light green, is the perfect finishing touch.

    Extra Tart Key Lime Pie

    The Best Key Lime Pie Recipe
    • 2 14-ounce cans sweetened condensed milk
    • 1 cup freshly squeezed or bottled key lime juice
    • 1 tablespoon finely grated lime zest
    • 1 prepared 9-inch graham cracker crust, refrigerated
    • 2 to 3 cups lightly sweetened whipped cream, for topping

    Directions

    • In a mixing bowl, beat yolks until thick, about three minutes. Add condensed milk, lime juice and lime zest. Beat again until well blended, about one minute. Pour into the pie shell, filling it to the brim and mounding slightly on top.
    • Cover with plastic wrap, stretching wrap tightly across the surface. Freeze until firm, at least three hours.
    • Just before serving, remove from the freezer and discard plastic wrap. Allow it to rest for five minutes, then spread with whipped cream and serve.

    Your Key Lime Pie: Tips

    • We suppose we dont need to say this but we will just say it: Fresh is better. For ingredients, use key limes if you can get them, otherwise use fresh limes, but many use bottled juice, or in a pinch, a combination of key limes and limes. If you like your pie tart, fresh is the way to go.
    • Also, homemade is better especially the crust. But if you dont have time, dont fret, its the filling that really makes the difference.
    • One tip we learned on our sampling tour, by increasing the egg yolks or juice, makes the pie lighter. But, it is all about personal preference.
    • Use the zest from the limes it will make the pie tarter.
    • A hand press works best for squeezing the limes.
    • Use a glass pan, not aluminum. Key limes react to aluminum.
