Dairy Free Cream Cheese Frosting
If you want to use vegan cream cheese, I recommend Kite Hill Almond Milk Plain Cream Cheese. Its the best option in terms of flavor.
Because all dairy free cream cheeses are sold as spreadable cream cheese in a tub, its going to be much softer than block cream cheese. Carrot cake is very dense and heavy, so you will need to be more patient and careful when frosting your cake.
Dairy free cream cheese frosting tends to squeeze out of the layers when assembling the cake. To combat this, I recommend only doing a two-layer cake, and chilling the frosting overnight before assembly so it firms up. Whip the frosting again in the mixer for about a minute before assembling the cake. Use a thin layer in between cake layers, and chill the cake to let the layers set if needed before frosting the top and outside of the whole cake. You can also just put the frosting in between the two cake layers and on top of the cake and leave the sides exposed.

Easy Carrot Cake Recipe Variations
Jack is a true carrot cake enthusiast, and if hes taught me anything, its that carrot cake can be a personal thing. If you like yours with chopped walnuts or raisins, feel free to fold ½-1 cup into the cake batter. If you like yours with coconut, fold ½ cup into the batter or sprinkle shredded coconut over the frosted cake. I like mine plain, although I think its pretty with a few chopped pecans sprinkled on top.
You can also choose your cake size and shape! The recipe below makes any of these:
- one 9-inch round cake
- one square 8×8-inch cake
- a 2-layer cake using two 6-inch cake pans
Finally, choose your favorite frosting. You can make the cream cheese frosting recipe below with regular or dairy-free cream cheese , though the regular version will be stiffer and better for slathering between the cake layers if youre making a layer cake. A lighter frosting option would be the cashew maple frosting from this recipe, which is more of a glaze. You could also leave the cake plain or serve it with a dusting of powdered sugar.

How To Make The Dairy
If you really want to take this recipe to the next level, then I highly recommend making this cream cheese frosting. Not only is it totally dairy-free, but it is so delicious and takes only a few minutes to make!
To make this frosting, simply beat together the dairy-free cream cheese and the vegan butter together in a bowl. I use a hand mixer to do this, but you can also do it in a stand mixer or by hand! Scrape down the sides of the bowl, as needed, as youre mixing.
Next, slowly add in the powdered sugar, about 1/4 cup at a time, until well combined. It might look dry at first, but the more you beat it, the creamier it will become. I promise!
Finally, add the vanilla extract and the lemon juice and beat all of the ingredients together until they are soft, fluffy, and fully smooth. Thats it! So simple and easy.
Of course, if you dont want to make your own frosting, you can also use a store-bought cream cheese frosting. Do what works for you!
Easy And Healthy Carrot Cake
This healthy carrot cake recipe is delicious and super easy to make! Growing up, one of my fondest memories of Easter besides the Easter baskets and the Easter egg hunts was my mothers amazing carrot cake. I knew her carrot cake would be my inspiration behind this lightened-up version of her original carrot cake. So, I called her for the recipe and I jotted it down knowing that I was going to have to revamp the 2 cups of sugar, oil, and 2 sticks of butter! Use Room Temperature Eggs
If you pull your eggs out right from the fridge, the cold temperature will harden the melted coconut oil and you may end up with oil chunks in the batter.
If you let them sit on the counter for a length of time to reach room temperature, the histamine levels will be higher.
But heres what you can do. You can put the un-cracked eggs into a bowl of warm water for 5 minutes so the eggs arent as cold.
TIP: In some recipes that call for chicken eggs, Ive used a combo of homemade applesauce and flax eggs instead. But I havent tried that with this recipe to see if it works here. If you try it, please let me know how it turns out!

How To Make The Carrot Cake Layers:
Preheat the Oven to 350 F. Butter and flour 2 round cake pans.
1. In a medium bowl, whisk together 2 cups flour, 1 tsp baking soda, 1 1/2 tsp baking powder, 1/2 tsp salt and 1 1/2 tsp cinnamon.
2. In a large bowl beat eggs on high speed until foamy , Add 1 cup honey and beat on high another 4 min. Blend in 1/2 cup canola oil, 2 tsp vanilla and applesauce.
3. Add the flour mixture about 1/2 cup at a time and mix until it is just incorporated into the batter.
4. Use a spatula to fold in the grated carrots and walnuts just until combined.
5. Divide the batter equally among the two cake pans and bake at 350 F for 28-32 minutes or until a toothpick inserted in the center comes out clean .
Tip: While cakes are in the oven make your frosting and refrigerate it until ready to use.
Remove cakes from the oven and once they are cool enough to handle, remove from cake molds and let them cool completely to room temp before assembling and frosting your cake. Note: if the cakes are still warm, your frosting will melt.

Why Is This Carrot Cake Healthy
The ingredients in this gluten-free carrot cake are fresh, natural, and all real food. Thats why I feel good when Im eating it! Instead of using butter, white flour, and traditional sugar, I use coconut oil, almond flour, and maple syrup.
I even gave this cake to my parents who love traditional baked goods, and they both thought it was so good!
Ingredients For Healthy Carrot Cake:
Almond Flour the only flour you need for this cake is almond flour! It makes a perfectly fluffy texture, and keeps the whole cake low-carb if youre watching your carbs! Almond flour is one of my favorite gluten-free flours to bake with.
Pumpkin pumpkin doesnt have much of a strong flavor but adds in beautiful color and makes the cake perfectly moist and fluffy. This time of year you can find canned pumpkin in the baking aisle of your grocery store.
Eggs I havent tried this with any egg replacer and I sadly dont have faith that it would work without eggs! You really need them to hold this cake together!
Almond Butter helps keep this cake nice and moist! I use regular unsalted almond butter for this recipe, but if you use salted, just use a little bit less salt in the overall recipe
Coconut oil my favorite oil for baking, in place of traditional vegetable oil or butter!
Grated Carrots quickly grated up some big carrot sticks in my food processor.
Raisins + Walnuts these are optional, but highly suggested! You can also use pecans if you dont have walnuts.
+ spices like cinnamon, nutmeg, and ginger.
I top this cake with a homemade healthier cream cheese frosting, and it uses ingredients like cream cheese, powdered sugar, a little bit of butter. You can easily swap this out for my cashew cream cheese frosting if you are dairy free.

How To Store + Freeze Leftovers
Unlike most cakes, you need to store carrot cake in the refrigerator. I recommend storing the whole cake in an airtight cake container in the refrigerator before serving. Store any leftover cake in an airtight container in the fridge for about a week.
If you have some extra cake and want to make it last longer, store it in the freezer! Simply cut the remaining cake into slices and wrap each slice in parchment paper or food storage wrap. Then, put your slices in a freezer-friendly resealable bag. It will last in the freezer for up to three months. To thaw, lay out a slice at room temperature for a few hours.

Best Tips For Success
- I like to use golden raisins because the flavor and color is nice here, but regular ones work just fine.
- For best results, grate the carrots yourself. OR use kitchen shears to roughly chop store-bought grated carrots into slightly smaller pieces.
- Dice into smaller pieces for babies or 1-year-olds.
- Be sure to grease the pan well and use a paring knife around the edges as needed to prevent the muffins from sticking to the pan.
- These work best as mini muffins.
- When checking for doneness, look for the edges to be golden brown, the tops of the muffins to be firm to the touch, and a cake tester inserted into the center of a muffin to come out cleannot with wet batter stuck to it.
- You can omit the brown sugar and use 2 tablespoons maple syrup or honey instead.
