Bundt Cake Week: Key Lime Bundt Cake

Oh yeah! Bundt cakes! Time to get my granny on! This idea spawned from the purchase of a new bundt pan combined with a bundt cake article in Southern Living magazine . I think of bundt cakes as totally granny style, but I suppose they fit in with the deep south image as well. Either way, they are totally underrated if you ask me. The outside of a bundt cake is always so crumbly while the inside stays moist..yummmmmmmmm.

Anyway, strap yourself in, because youre in for a fattening week full of bundt cakes. If you are my client, and we have an appointment this week, youd better believe youve got a bundt cake coming your way!

First up, the always delicious and tropical key lime bundt cake. Most of the recipe inspirations I get stem from a photo. This was no exception. The photo in the magazine looked so delectable it made me instantly crave key lime anything. Whenever I see a food photo and continue to think about it for several days, I know its a must make.

True story: I began really cooking several years ago because of a photo of a lemon cake I saw on the cover of Cooking Light magazine. I couldnt get that cake out of my mind! I still make the recipe today, and its still one of my favorites. I FREQUENTLY buy cooking magazines because of the cover photo. The reason I love writing betsylife so much is because I get to combine cooking and art each day, which are two things that make me super happy. Perhaps food styling is in my blood or something.

Tips For Removing A Bundt Cake From Pan

  • Bundt Pan Here is the bundt pan I use.
  • Non Stick Spray My best tip is to use this spray. Ive tried all different sprays and this one never fails me! After spraying my pan with it I also coat the pan with flour . My cake comes out perfectly every time. And make sure the spray gets into all the nooks of your pan. Use a pastry brush if you need to.
  • Batter Make sure your batter is evenly distributed in the pan. Give the pan a few taps if needed to help the batter even out.
  • Oven I always place my oven rack in the bottom third of the oven so my bundt pan is in the middle of my oven for even baking. Use a cake tester or a long bamboo skewer to make sure the cake is done.
  • Cool Time After removing the pan from the oven let it cool in the pan on a baking rack for about 25 minutes. Trying to remove the cake while it is too warm from the pan can cause problems.

Three years ago, I landed an interview for a project I really wanted. Determined to stamp a strong impression, I went to the fanciest cupcake shop in Washington D.C. and picked up a small box to bring with me. Key limes are smaller, seedier and more aromatic than standard Persian limes. Their skins are more yellow than green and are considerably thinner than regular limes. Lessons Learned is a series where we ask ecommerce business owners to share their experiences and advice. For this installment, we interviewed Lori Karmel, owner of We Take The Cake, a bakery located in Ft. Lauderdale, Fla. We Take The Cakes gourmet creations have been featured on Food Network and The Oprah Show. The company expects to gross around $1.2 million in 2009, with around 25 to 30 percent coming from online sales.

In 2002, Karmel purchased a then-floundering bakery. We struggled for two years before the company began turning a profit, said Karmel. But, I was persistent in getting samples out to the public, and in November 2004 my company experienced a bump of huge proportions when our Key Lime Bundt Cake was chosen as one of Oprah Winfreys favorite things. The show sparked a tsunami of online orders that knocked out our websites server, causing us to upgrade our online operations and expand its scope.

Karmel has learned many valuable lessons bringing her company to its current financial success, and she offers the benefit of her experiences in ecommerce below.

What Does Key Lime Bundt Cake Taste Like

It tastes like WOW! This lime cake is super moist, tender, buttery and delicious. The rum is soft, but noticeable and theres a perky lime flavor from the zest and juice. Most of all its a rich lime cake, I mean, hello2 sticks of butter.

This key lime cake is decadent enough that you dont need a big slice to satisfy your sweet tooth, but so good that my tasters went back for seconds. Seriously delicious.

How To Make The Best Key Lime Cake :

  • Whip oil, eggs, whole milk, lime juice, and lemon zest for about 2-3 minutes. I would highly suggest using FRESH lime juice for this cake. It makes such a difference in the flavor. Also, zest the limes first before juicing since it is much easier to zest while the limes are hard and round.
  • Fold in dry ingredients. Pour into greased cake pans. It is so important to grease the cake pans well so the cakes easily come out of the pans. You can choose to use two 9-inch cake pans or three 8-inch cake pans, depending on preference. If you use three 8-inch pans, the layers will be thinner and will need less baking time. This can also be made in a 9 x 13 pan.
  • After cakes have baked, set aside to cool. Make frosting by whipping softened cream cheese and butter for 4 minutes until light and fluffy. This makes the frosting extra light. Add powdered sugar and whip for 1 minute. If you want a stiffer frosting, add more powdered sugar. Fold in lime juice and lime zest.
  • Remove cakes from pan. Spread frosting on top of one cooled cake layer. Place the other cooled cake layer on top and spread frosting all over. I use this angled spatula to spread frosting all over the cake layers. Garnish with freshly sliced limes.
