Quick and Easy Flatbread Recipe (No Yeast)

This flatbread recipe is made with no yeast. It is very easy to make, requiring just a minute or two of kneading.

And it honestly is beautifully soft and pliable. So soft you can use it as a wrap and it wont crack.

And of course, it is perfect to be used as pita bread, for things like Greek Gyros and Greek Chicken Souvlaki.

And here I have used it as naan as a side for Butter Chicken. When I make it to be like naan, I cook it on a slightly higher heat to get larger and more brown bits on it just like real naan! The crust gets slightly crispier so its not as suited to use as a wrap, like in the above photo.

If youve never tried homemade bread before, this flatbread recipe is a great one to start with because it really is that easy. The worst that can happen with this flatbread recipe is that the heat is too high when you cook it so the exterior ends up a bit too crunchy and cracks when you roll it. If that happens, just spray it with olive oil or brush lightly with oil or butter and it will moisten the surface.

Because this bread has no yeast or other raising agents like baking powder or baking soda in the ingredients, it is characterised as being unleavened bread. This has the advantage of being quick to make as there is no resting period for the dough to rise.

Is Flatbread The Same As Naan Bread

Normally naan is made using yeast and egg, so technically flatbread is different. Naan is much thicker than this flatbread but does have the same soft but chewy texture.

The flavour is certainly similar and you can use this flatbread the same way you would use a naan bread but the wonderful thing about this recipe is its versatility. You can use this to wrap up fillings, mop up sauces or even use it as a base for your favourite pizza toppings.

Ways To Make Bread Without Yeast

This no yeast bread recipe is pretty much easy and simple. All you need to do is to mix all the flour, baking powder, sugar, and salt in a large bowl. Then add the wet ingredients, and whisk with a spatula, fork or wooden spoon.

On a flat surface, sprinkle some flour, then place the dough and start kneading until the texture smoothens.

Form the dough into an oval shape using your hand, fold it into an envelope shape, and sprinkle a little flour. .

Afterwards, form the dough into your desired shape. Place on a parchment paper or a baking sheet, and bake it for at least 25 minutes or until its color becomes golden brown.

Once done, place the baked bread on a wire rack, and wait until it cools down before slicing with a sharp knife, and serving the bread.

If you are making your own homemade flatbread, you may be wondering why you cant just add the pizza toppings to the flatbread dough.

Well, you can, but after trying it both ways , weve found that we prefer the texture when we add the pizza toppings to cooked flatbread. The bottom of the flatbread gets a little crisp and the middle stays soft.

I also love the fact that since we are calling for cooked flatbread, if you do plan to make your own bread, you can do so a day or two in advance.

To make the pizza, simply lay flatbread out onto a baking sheet and top with your desired pizza toppings. Slide the baking sheet into a 425 degree Fahrenheit oven and bake until the toppings are heated through and if you have added cheese, its bubbly and melted. This usually takes between 10 and 15 minutes.

    You can use plain or all purpose flour, whichever is available. If neither is on hand, try whole wheat flour, baking powder, or any gluten free flour.

    SUGAR

    Easy Soft Flatbread Recipe (No Yeast)

    Serves

    • 1/3 cup / 45g gluten-free all purpose flour, plus more for dusting
    • 3/4 tsp baking powder
    • 1/4 cup / 60ml / 54g thick Greek yoghurt
    • Pinch of sea salt

    Method

    • 1Mix the flour, baking powder and salt in a bowl. Add the yoghurt and mix well with a spoon until it forms a dough.
    • 2Lightly sprinkle some extra flour on a clean surface and knead the dough until smooth. Split the dough into two portions and roll into balls. Press each ball out into a thin round using your fingers. If the dough gets too sticky, lightly sprinkle over some extra flour. .
    • 3Heat a frypan over a medium-high heat. Dont add any oil. Fry each flatbread for about 1 minute each side or until lightly browned in patches. Stack the flatbreads on top of each other and cover with a clean tea towel to keep them warm until ready to serve.

    Notes

    1. Flour Buckwheat flour also works. Buckwheat flour gives a more earthy flavor and slightly less pliable flatbread. You can also use regular all purpose flour, wholewheat flour or spelt flour if you dont need the flatbread to be gluten-free.

    2. Yogurt Thick Greek yogurt works best in this recipe. For a vegan, dairy-free option you can use plant-based Greek yoghurt alternatives.

    3. Storage The flatbreads are best served warm shortly after cooking. They become less flexible as they get cold, but you can easily re-heat them in a microwave, oven or hot pan. Leftovers can be frozen between pieces of baking paper and re-heated when ready to serve.

  • Combine Dry Ingredients: First, in the bowl of your mixer combine the flour, baking powder and salt.

  • Combine Dry & Wet Ingredients: Finally, add the milk mixture to the bowl of flour and mix on low using the dough hook attachment, until the dough is smooth and elastic. It should come clean from the sides of the bowl. If dough is too sticky add extra flour as needed. If dough is too dry add a bit more milk.
  • Rest: Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 10 minutes.
  • Divide & Roll Dough: Divide the dough into 8 equal pieces. Roll out each piece so that its about ¼ inch in thickness.
  • Cook Flatbread: Heat about ½ tbsp of olive oil in a large skillet over medium low heat. Place a flatbread in the skillet and cook for about 1 to 1½ minutes per side. Youll notice it bubble up. The flatbread is done when you see golden brown spots on both sides. Repeat with remaining flatbreads.
  • Stack & Cool: Stack cooked flatbreads covered with a clean kitchen towel, this should make them more pliable and soften them.

    Notes About The Ingredients:

    • The ingredients are very simple and you probably already have all of this in your kitchen. Make sure you use kosher salt in the recipe if possible.
    • If you do not have kosher salt, you can use regular table salt but make sure you half the amount called for in the recipe.
    • The sugar helps balance out the flavor of the dough and it actually adds to the structure so do not leave that out.
    • You can use whatever vegetable oil you have on hand. I used canola oil for the recipe but any vegetable oil will work fine.

    To make flatbread, add milk and butter to a small saucepan. Heat mixture over low-medium heat until butter is melted. Remove the saucepan from the heat.

    Next, add flour and salt to a medium-size bowl and mix well. A KitchenAid mixer is handy if you have one.

    Add the warmed milk and butter mixture, and mix well with the flour until the dough forms a smooth, round ball.

    Divide the dough in half. Then, cut each half in half. Divide each half into 4 balls. You will have 16 balls of dough. Cover with plastic wrap to keep the dough warm.

    On a floured work surface, spread out extra flour, and roll out each ball of dough until it just starts to become translucent, about ” thickness. If you are quite particular with the appearance of your flatbread, lay a 9″ plate or bowl on the rolled out dough and use a butter knife to cut around it. This will give you a perfect circle. If you aren’t particular about it, don’t bother.

    After the flatbread is rolled out, stack them in 2 stacks with no more than 8 flatbreads in each stack, with plastic wrap between each flatbread to prevent them from sticking together.

    Preheat a skillet over medium heat and add 1 or 2 tablespoons of olive oil to grease the pan to prevent sticking. Next, cook each flatbread just until it gets golden brown spots, about 1-2 minutes. Flip the flatbread and cook for 1 minute on the other side. Remove to a plate and cover with a tea towel to keep warm. Repeat for remaining flatbreads.
