  • Preheat oven to 375°F. Line baking sheet with parchment.
  • Cream together butter and sugars. Add egg, vanilla, honey.
  • In separate bowl, whisk flour, baking soda, salt, spices and oats.
  • Combine dry ingredients with wet ingredients.
  • Scoop dough balls onto baking sheet.
  • Bake 10 minutes, let cool completely.

    How To Make Homemade Oatmeal Cream Pies

    It is so easy to recreate these soft and chewy oatmeal cream pies. Just like Little Debbie made them, but even better!

  • Beat together butter, shortening, brown sugar, and white sugar until light and fluffy.
  • Add eggs and vanilla extract and beat until fully combined.
  • In a separate bowl, whisk together flour, baking soda, allspice and the oats.
  • Add flour mixture to the mixer and beat until all ingredients are combined.
  • Scoop cookie batter onto parchment paper-lined sheet pan.Pro-Tip: Make sure to leave about 2 inches of space between each cookie. We want the oatmeal cookies to spread into a thin cookie, so dont chill the dough. If you must make the dough ahead of time, you can refrigerate it, but then let dough come to room temperature before baking.
  • Bake cookies and let them cool before assembling.Pro-Tip: You can control how big your cookies are by using a round cookie cutter, slightly larger than the cookie itself, to gently push the warm cookie into a uniform circle size. Cool your oatmeal cookies completely before frosting otherwise they will fall apart and the frosting will melt.
  • While cookies are cooling, make the filling. Beat together butter, powdered sugar and milk until it turns light and fluffy. Fold in the marshmallow creme.

    Soft-baked and delicious Oatmeal Creme Pies are easy to make at home!

    Im feeling sort of nostalgic today. I remember eating Little Debbie Oatmeal Creme Pies when I was younger. Unwrapping and crumpling the wrapper between my fingers, trying desperately to stuff the whole squishy soft cookie sandwich into my mouth all at once. I LOVED oatmeal creme pies! And still have a giant oatmeal creme pie size spot in my heart for them. As giant as my one giant oatmeal creme pie cookie.

    I havent had them in a long time homemade cookies and cupcakes have taken precedence over my favorite mass-produced packaged snack, but that doesnt mean I dont remember how incredible they are. So I set out to bake my own from scratch.

    I made oatmeal pumpkin creme pies last fall and adored them. The oatmeal cookies are tiny, puffy, and very chewy. They have texture. I filled them with a pumpkin cream cheese frosting, one of the frostings I developed in my pumpkin rampage last September. This pumpkin version isnt particularly a copycat recipe to Little Debbie, as the cookies had some texture and chew and they were very small in size.

    Todays oatmeal cookies are made with super soft, large, and delicate oatmeal cookies full of brown sugar, molasses, and butter. The cookies melt in your mouth. I sandwiched them between a bright white vanilla creme center. They are much oat-ier than Little Debbies version. Sometimes I wonder where the oats are in hers!

    The Little Debbie story began during the Great Depression when entrepreneur O.D. McKee began selling five-cent snack cakes from the back of his car. He was just out of college, newly married and eager to get into the baking business. He and his wife, Ruth, bought a small, failing bakery and used the family car as collateral.     Super soft, chewy texture: I didnt just want to put frosting between two regular oatmeal cookies, I wanted to get a super soft, chewy texture just like the real thingand I think I did it!

    Easy filling: Ive included a recipe for a simple fluffy frosting using jarred marshmallow fluff but if you want to keep it super simple, you can use the fluff on its own or whip up my alternative vanilla buttercream frosting recipe without marshmallow fluff .

    Quick Oats: Old-fashioned whole rolled oats will not work in this recipe. You can make you own quick oats by measuring 3 cups of whole rolled oats and pulsing them in the food processor 4-5 times or until they resemble the consistency of quick oats.

    Mix by hand: Once you mix the wet and dry ingredients, the cookie dough will be quite thick and you will have to stop the mixer and mix by hand.

    Thin Cookies: We want the oatmeal cookies to spread into a thin cookie, so dont chill the dough. If you need to make the dough beforehand and chill and to make later, then let dough come to room temperature before rolling. If you want a thicker cookie , then you can chill the dough.

    Make Uniform cookie dough balls: We want the oatmeal cookies to be the same size because we are creating pies with two cookies so take care to use a cookies scoop or measure your dough so its the same size.

    Smaller Cookies: These Oatmeal Cream Pies are quite large like the originals. I dont suggest reducing the size or they will not be as chewy.

    Cool Cookies Completely: Cool your oatmeal cookies completely before frosting otherwise they will fall apart and the frosting will melt.

    Dont Microwave Butter!: Dont microwave the butter for the frosting to soften or else it will b too runny.

    Lets not bury the lead: were not off to a good start here at all. As you can see from the picture above, the mix-in density on this one is abysmal. Under the lid and through the first serving of Little Debbie Oatmeal Creme Pies Ice Cream, all I had was a vast sea of vanilla ice cream with merely a couple oatmeal cookie pieces swimming about. It got a little better as I worked further down the pint, but not nearly enough to redeem itself.

    When you do get them, the oatmeal cookie pieces have a nice brown sugar & spice flavor with a decent chewy texture.

    Its worth mentioning again that these pints are only $2.50 a pop, and as such you need to lower your expectations since youre only getting a lighter, fluffier ice cream. On the plus side, the entire pint is less than 700 calories. But unfortunately, you wont be tempted to eat this entire thing in one sitting since its basically just mediocre light vanilla ice cream with barely any oatmeal cookie pieces.

    When I read the description for Little Debbie Oatmeal Creme Pies Ice Cream, I had a pretty strong feeling that it would be the most disappointing of the entire bunch.

    I was right.

    Little Debbie Big Pack Oatmeal Creme Pies, 32 oz

    The other day I went to a local restaurant and they had homemade oatmeal cream pies. I got one to go and ate it while I did my carpools that afternoon. That same weekend my homemade Oreo cookie was blowing up. Everyone was making them. So I figured if that was a popular one with you all then you all would love this homemade oatmeal cream pie cookies.

    3/4 cup dark brown sugar

    1/2 cup sugar

    1/8 t cinnamon

    1/8 t nutmeg

    1 1/2 cups quick oats

    2 t very hot water

    1/4 t salt

    In a bowl add together the butter and sugars and mix.

    Then add the molasses, vanilla and eggs and mix.

    Then add the flour, salt, baking soda, cinnamon and nutmeg and then mix.

    Then gently mix in the oats. Drop 1 Tablespoon of the mixture onto a cookie sheet and then bake at 350 degrees for 9-11 minutes.

    While the cookies are baking make the cream filling. In a bowl dissolve the salt into the hot water. Then set aside to cool.

    Combine marshmallow cream, shortening, powdered sugar, and vanilla in a bowl and mix together until fluffy. Then add the cooled water and mix.

    Then when the cookies are cooled spread it on one side and then top with the other side!

    • egg: one large egg to bind the ingredients together.
    • vanilla extract: use quality extract for the best flavor.
    • molasses: there are both light and dark molasses. Light molasses is only boiled once and is more mild and sweeter because only a small percentage of the sugar has been extracted. Dark molasses is created from boiling twice and is less sweet with a hint of bitterness. Go for dark molasses if you can, but you may sub light.
    • flour: all purpose flour or your favorite baking gluten free flour such as Bobs Red Mill 1 to 1 Baking Flour.
    • baking soda: helps create creates a softer, fluffier cookie. Make sure your baking soda is fresh so it works!
    • salt: balances and enhances the flavors
