What Youll Need To Make Coconut Cream Pie
This recipe calls for four different forms of coconut:
- Sweetened flaked coconut is the most common form of coconut used in baking. Typically sold in plastic bags in the baking aisle, it is the dried, shredded and sweetened meat of the coconut.
- Coconut milk is made from shredded coconut flesh puréed with water. It has the consistency of cows milk and is unsweetened.
- Cream of coconut is thicker and richer than coconut milk with a higher fat content, and it is sweetened. It is often sold with the drink/cocktail mixers at the supermarket.
- Coconut flakes are the dried, shaved, unsweetened meat of the coconut. Toasted, they make a pretty garnish for desserts they are also delicious in granola. Most large supermarkets carry them but you can always find them in organic markets.
Campfire Cheese Cake Dip
Mix Seasoning into cream cheese and place on square of tin foil. On top of cream cheese add chocolate chunks. Wrap up into a tin foil packet. Place on grill over campfire or BBQ for approx. 15-20 minutes. Open up packet and stir with a spoon until blended. Open tin foil packet like a bowl and serve with fresh fruit or graham crackers.

I dont know how to explain this heat to you, except to say, that boob sweat has become the newest fashion trend with all women and a few unfortunate men. I havent turned on my stove or oven in over a week I seriously fear I may die of heat exhaustion if I do. So for fear of my life, all of my meals have been salads, sandwiches, and ice cream. You know, cold stuff.
This FroYo is the perfect summer treat because it requires no heat and barely any mixing. Which if you are dealing with any of this heat, you know is a god send. And while it is delicious on its own, once you add a layer of graham cracker crumbs and whipped cream it truly tastes like a fresh, amazing, frozen key lime pie!

Should I Use Greek Yogurt Or Sour Cream
I opted for Greek yogurt for this key lime pie because it has no saturated fat and fewer calories than sour cream. I also like how greek yogurt comes in single one-cup servings so there is no fuss trying to get the correct amount into a measuring cup. Both sour cream and greek yogurt add creaminess to the pie.

The Motive: Ive been wanting to post a Key Lime Pie recipe on this blog forever and finally found a terrific on-the-side recipe from Chobani.
The Opportunity: Its Pie Day!
I am guilty of pie!
Honestly, it doesnt take a lot to convince me to make pie. But in this particular case the stars did align in such a way that making this particular Key Lime Greek Yogurt Pie at this point in time just seemed like the perfect thing to do.
If you love the mouthwatering tartness of a traditional Key Lime Pie like I do, youll find the addition of yogurt here to be especially refreshing. Yogurt is mixed into the key lime custard itself and its also used for the topping, sweetened with a little confectioners sugar . One important thing to keep in mind when using yogurt as a topping, however, is that it does tend to separate after a while. So if youre planning to serve just a few slices at a time, its best to dollop your slices individually rather than the pie as a whole. Take three guesses as to how I know this!

Yes, absolutely! Graham cracker crust is really easy to make at home but if you’re in a hurry store bought will work too.
How can I top my pie?
I like to keep it simple with a dusting of lime zest and a little bit of whipped cream and a lime twist. You can also cover the whole pie with a thick layer of whipped cream or meringue if you prefer. Lime slices on each slice are also a nice touch if you don’t want whipped cream.
How do I make a lime twist garnish?
To make a lime twist, just cut a thin slice of lime. Then cut from the center point of the lime to one edge of the peel. Then take the two free corners at the peel and pull them in opposite directions, being careful not to pull apart the uncut half of the lime slice.
Can I juice my own limes and how many will I need?
Yes, this recipe will also work perfectly well if you want to use fresh squeezed lime juice. For key limes you will need around 12-15. For Persian limes you’ll need around 4 or 5.
What type of pie dish should I use?
For this key lime pie I recommend using a standard 9 inch glass pie dish. Metal will work but you will get more even heating with a glass dish. Do not use a deep dish pie dish for this one.

How To Make Key Lime Pie Ice Cream
Begin by making the crust. In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Using a spoon first and then your fingers, mix until evenly combined, making sure to break up any lumps of brown sugar.
Press the crust into an even 1/4-inch layer on the prepared baking sheet.
Bake until golden around the edges, 7 to 8 minutes.
Let cool, then use a spoon to break into chunks.
Set the crust aside while you make the filling. To start, zest and juice the limes.
In the bowl of an electric mixer, beat the cream cheese until light and creamy, about 1 minute.
Add the sweetened condensed milk and beat until completely smooth, 1 to 2 minutes.
Add the heavy cream, lime zest, lime juice and salt.
And beat until evenly combined, about 30 seconds.
Arrange half of the crust evenly over the bottom of an 8-by-4-inch loaf pan.
Pour the ice cream mixture over top.
Then cover with the remaining crust crumbles. Cover with plastic wrap and freeze until completely firm, at least 8 hours or overnight.
Can You Use Regular Limes In A Key Lime Pie
Yep! Key limes can be tricky to find in regular supermarkets if you dont live in Florida, California, Texas in the states, or in Mexico, Central America, and South America. Regular limes will work just fine. I found that about 4 to 5 limes make about ¾ cup lime juice. If you can find key limes, it will take around 20 limes because they are much smaller.
Tip: Skip the prepackaged lime or key lime juice. Although tempting, bottled lime juice contains chemicals and additives that make it taste off.

Its Victoria Day here in Canada a perfect excuse for a special dessert, so were celebrating with a Trim Healthy Mama-friendly, low-carb Key Lime Pie! Made from a base of Greek yogurt, its smooth and creamy, and high in protein.
Sweetened with xylitol , this Key Lime Pie is also sugar-free. Its soft green color comes from blending a handful of fresh spinach leaves together with 2 tablespoons of water and pressing the mixture through a fine sieve! The small bit of dark green spinach juice gives the whole pie a lovely shade of lime when mixed with the other filling ingredients, except you dont taste spinach! No need for artificial colors in this one.
Knox, Great Lakes, or Just Gelatin, either brand will set the Key Lime filling, but Great Lakes and Just Gelatin are purer forms of beef-based protein.
