How to Make Pecan Pie | Pie Recipes | Allrecipes.com

As far as Thanksgiving pies go, this is one of the easiest. Theres no pre-baking the crust or pre-cooking the filling. Grandma, though no longer with us, always knows whats best! Heres an overview of the process.

  • Make the pie crust. As always, use my favorite homemade pie crust.
  • Roll out the pie crust. Youre aiming for a pie dough circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish.
  • Spread the pecans inside pie crust.
  • Whisk together remaining ingredients. Pour over pecans.
  • Bake. I like to place a pie crust shield on top of the pie edges to prevent them from browning too quickly. If you find the whole pie is browning too quickly, tent a piece of aluminum foil over the whole pie.
  • Slice and serve. The pie is delicious warm or at room temperature. Top with whipped cream, ice cream, and/or a sprinkle of cinnamon-sugar.
  • How To Make A Pecan Pie

  • Preheat the Oven: Allow the oven to warm up while you prepare the pie.
  • Whisk the Eggs: In a medium bowl, whisk the eggs.
  • Add Filling Ingredients: Add in white sugar, brown sugar, salt, vanilla extract, corn syrup, and melted butter. Whisk until well combined.
  • Prepare Crust: Gently transfer the unbaked pie crust to the pie dish. Fold the edge under and crimp it. Use a fork to prick holes in the bottom of the pie crust.
  • Add Chopped Pecans: Spread chopped pecans evenly over the bottom of the pie crust.
  • Pour In The Filling: Pour the filling over the pecans. Slowly the pecans will rise to the surface.
  • Arrange the whole pecans in concentric circles over the wet mixture in a decorative way.
  • Bake: Cover the pie with aluminum foil and bake as directed in the recipe card below. After 30 minutes, uncover and continue baking until the filling is completely set in the center.
  • Cool: Once done, place the pie dish on a wire rack and allow the pie to rest for at least two hours before slicing.
  • Serve: Serve the pecan pie with whipped cream on top.
  • Tips For Making The Best Pecan Pie

    • Bake the pie on a rack in the center of your oven to ensure even cooking.
    • Be sure to cover the pie with foil for the first half of the baking time so that the edges of the crust dont burn. The cover also helps the filling cook more quickly.
    • Take your time arranging the pecans on top of the pie, but dont worry if they arent perfect! The pie will still taste delicious no matter what it looks like.
    • You can replace the light corn syrup with dark corn syrup if you like. This will give the pie an even richer flavor and darker color.

    Pecan Pie Filling Ingredients

Since its made with few ingredients, its imperative to use high quality nuts and spices. I genuinely love Diamond of California pecans and McCormick pure vanilla extract . For the BEST pecan pie filling, use these ingredients:

  • Pecans: Cant prepare this filling without pecans!
  • Eggs: Eggs hold the filling together.
  • Corn Syrup: Sweetens and helps prevent crystallization while the pie bakes. I prefer dark corn syrup for intensified flavor. See below if youre interested in pie without corn syrup.
  • Brown Sugar: Theres 1 and 1/2 cups total sugar in this pie, which includes the brown sugar and corn syrup . Typically this pie has around 2 full cups, but I find that much too sweet.
  • Salt + Butter + Vanilla Extract: Each give pecan pie its traditional flavor.
  • Cinnamon: Cinnamon adds an extra layer of flavor! I dont see many pecan pies with cinnamon so thank you, grandma, for giving me the opportunity to present a slightly unique pecan pie on our Thanksgiving tables.

It is a famous South American dessert. This pie is sweet and nutty like all the other pecan pies. But butternut pecan pie is much creamier than any other pecan pies. The tang because of the buttermilk in it will bring a whole new flavor to the pie.

Buttermilk pecan pie is baked in a preheated oven, so set that first. Till then, whip butter and sugar in a bowl until it is light and fluffy. Add one egg at a time and beat them well. Add flour, lemon juice and vanilla to make dough out of it. Roll this dough and trim the crust beyond the rim, then flute the edges. Add filling and bake it. Cool it down and refrigerate it before serving.

You can also add a little Greek yogurt to the mix. If you dont have Greek yogurt, here is a list of Greek yogurt substitutes in baking.

You will know more details in the recipe further. You can even make a pie crust the night before. This will take some load off the day you are going to serve the pie. But first, Ive mentioned some other cherry pie recipes that I think you should definitely try at your home.

Light Karo Syrup Or Dark Karo For Pecan Pie

Dark all the way! The darker syrup gives it a fuller, richer taste. Pecan pie is known for being rich and this helps accomplish that. However, light corn syrup can be used if thats all you have on hand. Its a great pie to bring to a party because since its so rich, people only want a little slice. Top it off with some whipped cream or ice cream and one pie will serve a crowd! Now, a lot of people ask what they can substitute for Karo syrup in pecan pie and there are recipes out there that offer other ingredients but they just arent as good. Sorry. But you know what, we dont eat pecan pie every day so I dont mind using it in holiday recipes! Plus, Im not eating the entire pie by myself. At least, I never plan on that!

CAN I MAKE PECAN PIE THE DAY BEFORE?

You absolutely can. Bake the pie completely and then let it cool down to room temperature before putting it an airtight container and storing it in the fridge. To warm it up, put it in your oven at 200 degrees F for about ten minutes, or until warmed through.

Whats the difference between light corn syrup and dark corn syrup?

According to Karos website, there are a few key differences between light and dark corn syrup that are important to keep in mind.

    • Light corn syrup: you use light corn syrup when you want a less pronounced flavor. To substitute, for 1 cup light corn syrup, use ¼ cup water and 1 cup sugar.
    • Dark corn syrup: thicker, more flavorful, dark corn syrup is made from molasses. To substitute, use ¼ cup water and 1 cup brown sugar.

    LEFTOVERS

    • Serve: pecan pie is different from cream pies, in that you can store it covered at room temperature for up to 2 days.
    • Store: once in the fridge, your pecan pie will last up to 4 days.
    • Freeze: to freeze your pie, let it cool to room temperature and put it in an airtight container. It will last up to 2 months.

    HOW DO I STORE PECANS?

If you end up with extra pecans, you can keep them for future use by sealing them in an airtight container and keeping them in a dry place. Storing them like this will keep them good for up to a year, which means that your future pies are in luck.

    Equipment Needed For Making Pie

Preheat your oven to 350°F .

Make the Pie Crust: Use a half recipe of my all-butter pie crust, OR a frozen unbaked 9″ pie crust from the store. If making your own, roll the dough to a â” thickness and line a 9″ pie plate. Press the edges with a fork and poke holes in the center.

Pecan Pie Filling: Spread the pecans into the unbaked pie crust. In a large bowl, whisk together the eggs, corn syrup, sugar, melted butter, vanilla extract and flour. Pour the filling over the pecans.

Bake the pie at 350°F for 70-75 minutes. You’ll know the pie is done when the edges are set and the center is slightly jiggly. Make sure to let the pie cool completely before slicing!

TIP: If the crust and pecans are browning too fast, tent a piece of foil over the top of the pie during the last 10-15 minutes of baking.

    Helpful Tips Tricks & Equipment

    • I flute the edges of my pie by pressing the thumb of my left hand into the edge of the crust pushing outward, and using the thumb and pointer finger from my right hand to mold the crust around my left thumb. I repeat this all the way around the crust to give it a “ruffled” edge. Alternatively, you can press the tines of a fork against the dough all the way around the pie to flatten it against the pie plate.
    • If you don’t have metal or ceramic pie weights to help your crust hold its shape while partially baking, you can use a bunch of dried beans. I have a big bag of dried black beans that I reuse every time I bake a pie because I never can remember to buy pie weights. Just be sure the fill the pie all the way to the top if using dried beans since they don’t weigh as much as pie weights.
