Mixing The Crab Cakes

The first thing to do is to gather all of your ingredients.

Get a large bowl and the first thing that goes in that bowl is the crabmeat.

The next thing to add are the eggs.

Put the spices, the salt, pepper, and old bay seasoning in the bowl next.

And the last thing is to add the peppers, scallions, parsley, and garlic.

Once all of your ingredients are in the bowl you can take a large fork or spoon and mix it up completely until everything is thoroughly mixed.

After that, melt the bacon grease in the microwave and while it is hot you can pour it all over the mixture and blend well.

The next step is making up the low-carb mixture into patties. Place them on a plate or platter and refrigerate them for at least 30 minutes before cooking which will help hold them together better during the frying process.

Can I Use Imitation Crab

Do NOT use imitation crab! If you cant afford to buy the real thing then dont make them at all. You have to have the real crab meat in order to get the true flavor.

Imitation crab meat has sugar and wheat flour in it, hence the reason for the 11 carbs per half-cup. Its definitely not Keto or gluten-free for that matter.

But what you may not know is that you dont need the bread crumbs to hold the cakes together.

When my husband makes Keto crab cakes he also makes a sauce to go along with it, which I can also share with you too.

Its a sauce made from only 3 ingredients:

  • Mustard The best one for this sauce is stone-ground mustard if you have one. Yellow mustard is not good with this dip. The taste is totally different.
  • Mayonaise The best mayo is Hellmans, with the best taste and texture and its rich and creamy.
  • Dill Fresh is always better but if you dont have fresh you can also use dried.

Just blend 1 cup of mayo and ½ cup of mustard until evenly blended and add 1 teaspoon of dill at a time to taste.

  • As mentioned above, my favorite way to serve these is with my keto red pepper sauce.
  • The recipe makes 4 servings as an appetizer, or 2 servings as a main course.
  • For a lunch or brunch portion, these work really well with a simple salad of arugula or spring greens dressed with my keto lemon vinaigrette and save a splash of the vinaigrette to drizzle over the crab cakes as well.
  • If youre serving these keto crab cakes for a cocktail party or event, you can make the cakes even smaller as a bite-sized portion of about 1-inch in diameter and pass them on a platter with just a dot of sauce on the top. This recipe should make about 24 cakes in miniature.

Once you form them, place them on a lined baking sheet with foil or parchment paper and freeze them until solid enough to wrap them individually, which will just take a few hours. When you want to make them take out as many as you need to at one time. Place into the refrigerator overnight and then pan fry them according to previous instructions.

Boil water, vinegar, and seafood seasoning. Then, layer the crabs in the steamer insert, generously sprinkling the salt and remaining seafood seasoning on each layer of crabs. Cover the pot and steam for about 30 minutes.

When it is fully cooked, set it aside.

Variations And Substitutions For This Recipe

  • For different crab meat options see the notes above on what type of crab meat to use.
  • Dijon mustard contains trace amounts of white wine, if doing the Whole30 or if strictly avoiding alcohol for any other reason, replace the dijon mustard with another yellow mustard. If doing Squeaky Clean Keto, the dijon mustard is acceptable because the amounts of wine are so slight.
  • Worcestershire sauce contains small amounts of molasses and sugar, so if doing the Whole30 or Squeaky Clean Keto you can replace it with Coconut Aminos to stay compliant.
  • If coconut flour is a problem for you, it can be replaced with almond flour as a binder. Crushed pork rinds can also be used, but may impact the flavor negatively so it should be a last resort.
  • The mayonnaise can be replaced with 2 tablespoons of beaten egg, but I prefer the mayonnaise because it holds the crab cakes together better in my opinion.

We made a zesty chipotle lime sauce to dip our crab cakes in and it contains mayonnaise, sour cream, lime zest, juice and chipotle mayo to add a bit of a kick. Lets Make Some Low Carb Crab Cakes

These crab cakes are a little messy to handle but trust me they will be delicious. Start by beating an egg in a large bowl and then add the diced jalapeno, cilantro, green onions, mayo and lime juice. Next fold in the crab until well combined.

Next get a skillet nice and hot with the olive oil and butter. Then form the crab mixture into 4 patties and add to the pan. Turn the heat down a bit and let them sit there for 3-4 minutes until they are nice and brown. Carefully flip them and cook for another 3-4 minutes.

Thats all there is to it! I had mine after I cleaned up my mess and took pictures so it was cold but I still loved it. So that got me to thinking that these would also be good as an appetizer if you make smaller patties.

You are probably familiar with panko style breadcrumbs. These breadcrumbs are different than normal breadcrumbs because they are made from bread without crust and they have signature large, airy flakes. Of course traditional panko bread crumbs are off limits on a keto diet. But pork rind panko is an excellent substitute!

To make pork rind panko you need one ingredient, pork rinds. Now if this sounds strange to you, it did to me too. I am not a fan of pork rinds and the thought of using them as bread crumbs was honestly a little off putting. However, I do not find any pork taste in my dishes. It just provides a light and crunchy texture that Ive been missing while on keto!

    • You could also take some of your crab cake mixture and stuff it inside of raw mushrooms and then bake them in the oven.
    • They are really good on top of a green salad.
    • As the main course, they go well with just about anything that you serve alongside other meat or fish, like for instance any roasted vegetables, like roasted broccoli with garlic or green beans with bacon.
