This recipes comes together easily. Be sure to follow the recipe as specified, including using both granulated sugar AND brown sugar. The brown sugar really enhances the flavor of the bread. Also ensure that your eggs are at room temperature and your butter is softened.

  • Step 1: Mash the bananas. Be sure to use overripe bananas. The bananas should be mostly brown to yield the best flavor. Mash until smooth. Do not leave chunks of bananas.
  • Step 2: Prepare the pan. Grease a 9×5 metal loaf pan and set aside. Use butter or a nonstick cooking spray to grease the sides.
  • Step 3: Make the batter. Cream together the butter and sugars. Then add the eggs, mashed bananas and vanilla. Stir in the flour, baking powder, baking soda and salt. Fold until just combined. Do not overmix the batter.
  • Step 4: Add the chocolate chips. Gently fold in 3/4 cup of the chocolate chips until combined. After pouring the batter into the loaf pan, sprinkle the remaining 1/4 chips on top.
  • Step 5: Bake at 350 degrees F for 50 to 60 minutes, or until the bread is set and a knife inserted into the center comes out clean.

Chocolate Banana Bread Tips

The bananas matter: The riper the banana, the sweeter. They are also easier to mash. One thing weve learned is that if you dont mash your bananas enough, they will sink to the bottom, so just make sure you get in there and mash them well.

The pan you use matters, too! There is no wrong answer, but if you use a metal loaf pan, it distributes the heat more evenly, where there is more of a chance of uneven cooking in a ceramic pan.

Add the coconut oil last: I know I mentioned this once before, but its the best tip I ever received. Make sure that you add the coconut oil last so that it doesnt firm up when it mixes with the other cold, wet ingredients.

Dont over cook: Make sure to keep an eye on the center of your loaf. If you overcook your bread, it will end up tough and crumbly.

How To Keep Chocolate Chip Banana Bread Moist

Banana bread stays moist mostly because of the bananas. But the sourness from the buttermilk and the fat also helps keep it moist. It will stay that way for a few days, if it lasts that long.

Another important tip is to not over bake it. Take it right out as soon as its done and itll be a moist bread, otherwise it can dry out.

Did you know you can freeze your overripe bananas? I always tend to over buy bananas and they go brown before I eat them. I always freeze them so I can make banana bread whenever I want.

Tips For Recipe Success

This chocolate chip banana bread is super simple to make, but here are some tips to make sure its perfect every time!

  • Use extra ripe bananas. For the perfect amount of sweetness use bananas that are very ripe. The more brown spots the better! You can ripen them quickly by wrapping them in foil and popping them in a 350°F oven for 10-15 minutes.
  • Measure the flour correctly. Too much flour can cause bread to be dry and crumbly. Whisk the flour first, then spoon it into a dry measuring cup and level off the top .
  • Do NOT over-mix batter. Stir the wet and dry ingredients together by gently folding them with a large spoon or spatula and mix just until moistened. Do not use a whisk. Over-mixing the batter can produce tough bread.
  • Do not over bake the bread. Ovens can vary so be sure to check the bread after about 50 to 55 minutes. The bread is done baking when a skewer, butter knife or toothpick inserted into the center comes out clean or with just a few moist crumbs.
  • Baking bread. After 35 minutes of baking, I suggest lightly covering the bread with foil, to avoid the top from getting too brown.

How To Make This Banana Bread

Healthy Oatmeal Chocolate Chip Banana Bread

This bread is a riff on Elises classic Banana Bread with just a few adjustments to accommodate the peanut butter.

I use a creamy, commercial brand of peanut butter here. I dont usually bake with natural peanut butter because it tends to take a little more finessing to incorporate. I beat the peanut butter a bit before mixing it into the batter, just like you often do with cream cheese. I want it to soften and smooth out so it will incorporate more easily.

You could use chunky, but I prefer creamy. It shouldnt cause any issues if you were to substitute one for the other.

Since peanut butter can weigh down a batter, I also added some milk to the recipe to keep the loaf from being too heavy.

You can use mini or regular chocolate chips here, or even chopped bar chocolate. Its really your preference. If you do use bar chocolate, just know it will melt more readily than chips . I avoid topping the batter with bar chocolate, because it can melt off and burn as it bakes. Just add some to the top when it comes out of the oven.

Tips To Get The Best Whole Wheat Banana Bread:

  • Make sure your bananas are ripe when making this recipe because brown bananas are sweeter than the green ones.
  • You can mash the bananas well if you want a smooth and moist banana bread or you can leave them a bit chunky too.
  • You can use agave syrup in place of maple syrup too.
  • It is best to have all the ingredients be at room temperature before you start mixing.
  • Once you have added the dry ingredients, do not mix too much. Just fold in the flour gently.
  • I have used semi-sweet mini chocolate chips for this banana bread recipe, but you can use normal sized chocolate chips as well.
  • To keep your banana bread moist, wrap it in a plastic wrap and store it your kitchen counter or refrigerator.

Oh…and I love to spread some peanut butter on a slice of banana bread. So good!

What Is The Best Way To Store Banana Bread

CHOCOLATE BANANA BREAD | healthy, paleo recipe

Storing moist, fluffy banana bread in an airtight container or in plastic wrap at room temperature is where it will be happiest. However, if you wont be eating it within 3 to 4 days, your bread will be safest in the freezer. Let the loaf cool completely then wrap it tightly in plastic wrap. Place in an airtight, sealed plastic bag or wrap it in aluminum foil. It will keep between 2 to 4 months in the freezer, although likely way less time once you remember you can make Banana Bread French Toast!

Make Ahead And Freezing Tips

  • If you do want to make this bread in advance, you can mix the wet mix and store it in the fridge a day ahead. The dry mix can be mixed and covered and left on the counter up to a day ahead.
  • Leftover bread can be wrapped up in plastic or foil and left on the counter for two days.
  • It can be frozen for 1 month. Wrap in two layers of foil and set in a plastic resealable freezer bag.
  • Banana Muffin Recipe Ingredients

The recipe calls for mashed banana, pure vanilla extract, white or apple cider vinegar, optional oil, flour, salt, sugar, baking soda, and baking powder.

Types of flour that work include spelt flour, oat flour, and gluten free or white all purpose flour. I have not tried almond flour, whole wheat flour, or coconut flour here. Be sure to report back if you experiment with one of those options.

When combined with the liquid ingredients, the white vinegar or apple cider vinegar acts like a homemade buttermilk substitute.

Almost any all purpose granulated sweetener can be substituted for the sugar, including unrefined coconut sugar or date sugar, raw cane sugar, or xylitol or granular erythritol for added sugar free banana muffins.

To make muffins without oil, you can replace the three tablespoons with an equal amount of additional banana, Greek yogurt, or roasted mashed sweet potato.

For chocolate chip banana muffins: stir half a cup of regular or mini chocolate chips in with the dry ingredients. Press a few additional chips into the top of each muffin for presentation, just before baking.

You can also stir half a teaspoon of cinnamon and up to half a cup of crushed walnuts, almonds, or pecans into the batter before baking the muffins.

    • bananas of course. The spottier, the better in this case.
    • oat flour oats blended in a blender or food processor until you reach a flour-like consistency. If you dont have a blender, you can buy oat flour at most grocery stores or order it online.
    • eggs as a binder and to make this bread nice and fluffy!
    • coconut sugar I love using coconut sugar as an unrefined sweetener and also love the rich caramely taste it adds. You can swap this out for regular sugar if you prefer.
    • oil I used avocado oil but you can also use melted coocnut oil. I recommend avoiding vegetable oils as they are highly processed and can be inflammatory.
    • cinnamon I love a cinnamon-y flavor with my banana bread. So yummy!
    • chocolate chips

Can The Healthy Banana Bread Recipe Be Vegan

As long as you use nondairy yogurt, the recipe is naturally vegan.

I often use my own vegan homemade Greek yogurt when I make this recipe, but it works fine with non-Greek plain yogurt as well.

Readers have successfully used coconutmilk yogurt, cashew yogurt, soy yogurt, and almondmilk yogurt. So feel free to use whatever type you wish.

You can even change up the flavor if you want. Try strawberry, peach, or even blueberry yogurt for a fun and subtle flavor twist.

Or if you dont have yogurt or prefer not to use it, just increase the banana to two cups and omit the yogurt completely.

Secrets To Make A Moist Banana Bread

Some useful information to succeed in the recipe of the best banana bread with a soft and moist texture.

  • Use overripe bananas : Use bananas, not necessarily overripe or completely black ones. Ripe bananas are much sweeter and have an even softer texture and are easier to reduce to a puree.
  • Room temperature ingredients : For a smooth texture use room temperature ingredients, they will mix better together and your batter will be perfect.
  • Buttermilk : Buttermilk is a wonderful ingredient in many cake recipes, such as muffins, cupcakes and layer cakes, and it is even more so here in the banana cake. It helps to balance the taste with its acidity and allows for a light and well soft texture.
  • Do not over mix : Avoid over-mixing after adding the flour to keep the texture soft and moist.
  • Pay attention to the baking process : Perfect baking will also contribute to the success of your cake. If it is overcooked, it will be too dry in the mouth. To keep its softness and moisture, you will have to pay attention to the cooking time, depending on the power of your oven, and also check the baking with a toothpick that you will stick in the cakes center and that will help you know if the center is cooked enough.

How To Know When Banana Bread Is Done

Banana bread can be undercooked easily, and unfortunately, once the loaf has cooled, even if it is gooey in the middle you cannot put it back into the oven.

    • You can tell banana bread is done when a butter knife inserted in several places in the whole loaf comes out with a few crumbs clinging, but no wet batter. It can be very hard to judge.
    • My favorite way to know when banana bread is done is to use an instant read thermometer. Once banana bread reaches 200 degrees F in the center, it is fully baked.

Why Is This The Best Banana Bread

Let me explain why this is the last banana bread recipe youll ever need. First off, its outrageously moist . This recipe has butter as well as sour cream, which not only make it unbelievably soft, they also give great flavor, as opposed to a lot of banana bread recipes that are made with oil. Of course I use walnuts in this recipe, that you can omit if you must, but I urge you not to, at least the first time you make this recipe.

BUT the real secret to this recipe on supreme moistness and banana flavor iswait for itSLICED BANANAS. You add some mashed and some thinly sliced. Is your mind blown yet?

Adding the sliced bananas into the bread leaves little pockets of banana that you wouldnt normally have when its mashed. Not enough that it is mushy, that wouldnt be good just the exact perfect thing your banana bread has been missing all along. Im telling you, this is legit.

How Many Cups Is 1 Mashed Banana

This can be tricky! If a recipe calls for 3 bananas, how much is that? We all know that measurements are important in baking, so the difference between a very small banana and a very large banana can be significant when baking a loaf of banana bread.

My recipe calls for 1 ½ cups of mashed banana. One large banana yields about ½ cup mashed, so I used 3 large bananas for a total of about 1 ½ cups. If youre working with small bananas, youll need at least 4 . Measuring is always the safest way to make sure that your banana bread turns out perfectly moist, sweet, and delicious!
