  • Cream the butter and sugar at low speed for about 3 minutes. Creaming at high speeds or for long periods will result in gluey streaks in your finished pound cake.
  • Dont overmix the eggs. Once you start adding eggs to the batter, you want to mix them just until combined. Do you hear me? Yes, Im using a bossy tone because I want you to be great! Once you cant see them in the batter then move along to the next egg. Overbeating will cause the bottom crust to separate from the cake. This isnt really a huge deal, since it often settles back down as it cools. But if you want a perfect pound cake then you want to avoid this.

I dont think Ive ever met a Southerner whos never had pound cake. Pound Cakes is about as Southern as Fried Chicken, but it didnt originate from the South. Its believed that pound cake originated from Northern Europe in the early 1700s and consisted of a pound of butter, sugar, flour, and eggs. There was no leaving, liquid, or extract in the original pound cake recipe. Resulting in a heavy, dense cake that was sweet and somewhat dry in texture.

As pound cake made its way throughout the world the classic pound cake got several makeovers. I like to believe the South is responsible for upgrading it to the dense yet moist, velvety soft classic pound cake that we know and love today.

  • Can I use a different flavored cake mix? Yes you probably can. I like using the butter cake mix because it gives it a more buttery taste.
  • What if I dont have the extracts? Youll really want to try to get them if you can. It really gives it a nice flavor, but if you absolutely cannot, then you can omit them.
  • Do I have to add in the pudding mix? I added in the dry cheesecake pudding mix because it adds a little extra flavor and helps with stability. You can probably omit it, although I havent tested this recipe out without the pudding mix. If you cant find the cheesecake pudding mix, you can just substitute with another flavor, like vanilla. Just make sure when you add it, to add it dryâ¦not prepared.
  • Make sure to get your butter and cream cheese close to room temperature, so theyll cream together easily.
  • I used a hand mixer, but you can also use a stand mixer if you have one.
  • I have not tested this out in a different sized pan other than a bundt pan.
  • Be aware that the batter for this cake is quite thick. Dont fight it. Just go with it. Once you add it to your pan, just smooth it before putting it into the oven.
