How To Make Key Lime Pie No Bake

The hardest part of making this no bake pie is letting this set in the fridge. Be patient. It is so worth it!! Key lime pie is one of our family favorites and it is simple to make but does take time setting up in the refrigerator.

  • The Crust: Mix together the graham crumbs, butter, and sugar. Press into a 9-inch pie pan and use the bottom of a flat glass or a flat measuring cup to evenly press along the bottom and use your fingers to press evenly along the sides. Set in the fridge until the filling is ready.
  • Beat Whip cream to stiff peaks and set aside.
  • Combine: In another bowl, use the paddle attachment to beat the cream cheese until smooth. Add sweetened condensed milk, lime juice, and lime zest and mix using the whisk attachment.
  • Gently: Fold in the whipped cream.
  • Refrigerate: Pour into chilled crust and set in the fridge for at least 3 hours, or overnight.
  • Topping with Cream: Whip cream and powdered sugar together until medium-stiff peaks form. You can use a piping bag and star tip to pipe a design on top, or just spread it across with a spatula. Add fresh lime zest, if desired.
  • Dig In: Serve and enjoy!

    Preheat the oven to 375F degrees. Prepare the crust adding the graham cracker crumbs, granulated sugar, and butter to bowl.

    Mix together until combined.

    Press it into a 9-inch pie plate and bake the crust for 10 minute, remove and set aside.

    Make the filling by adding key lime juice, key lime zest, sweetened condensed milk, sour cream, and egg yolks to a bowl.

    Using a hand mixer, blend together the mixture until combined.

    Pour the filling into the crust.

    Bake the pie for 15 minutes. .

    Once the pie has cooled to room temperature, chill for 3 hours or more.

    My easy key lime pie gives the classic recipe a much-needed makeover. Just like the classic, my best Key lime pie starts with delicious Graham Cracker crust. Made by combining butter and Graham Cracker crumbs, this crust requires no baking instead it sets in the fridge.

    While the crust is setting up I whip up the filling in no time. I like to make all my pies in my Good Cook 9 Pie Pan, which serves as a pie plate or a tart pan, is a perfect size and always ensures I can get my pie out of the tin easily.

    What You Need To Make This Key Lime Pie

    • Pie Plate I made this pie in my 9.5 inch Pyrex pie plate. You can use a smaller pie plate no problem. Youll either have a little extra crust or just make it extra thick. The filling does not expand when baking so go ahead and pour as much of it into your crust as you can.
    • Key Lime Juice or Key Limes I used key lime juice. I actually order mine on Amazon. Im a big fan of reading reviews to make sure I get the very best product. This is the one Im currently crushing on. Truth time. This pie can be made with regular limes if you cant find key lime or key lime juice. Just sayin.
    • Youre going to need a zester for this pie. The key lime zest adds SO much flavor to this key lime pie and looks so pretty on top!

    The truth is, Im not much of a decorator when it comes to pies and cakes. Im all about simple, easy, get-it-in-my-mouth-as-quick-as-possible. You too? Good. Then youll like my no-nonsense whipped cream topping.

    If you are in a hurry, and I mean, a BIG HURRY, I would perhaps allow you to use a store bought pie crust and a can of whipped cream. This pie would still be heavenly. No doubt.

    Will This Work With Regular Lime Juice

    You can certainly use regular limes to prepare key lime pie simply use an equal amount of regular fresh lime juice. Do not use bottled regular lime juice it leaves a bad aftertaste. Use freshly juiced limes.

    The only bottled lime juice I currently recommend is actually a bottled key lime juice. We used this brand in culinary school as well at one of the fine dining restaurant where I worked as a pastry chef. Everyone loved the pie.

    Crush the pretzels into small pieces with a food processor. Then, in a medium bowl, combine the pretzels, vanilla, brown sugar, and flour, mixing well until combined. Next, melt the butter and add it to the pretzel mixture. Spread the mixture into an 8×8 square pan or 9×13 baking dish sprayed with nonstick cooking spray and bake for 10 minutes at 375 degrees.     As Ive already noted, this is a super easy process. To make it as easy as possible, you can purchase graham cracker crumbs .

    If you cant find them, regular graham crackers work fine. Either pulse them in a food processor, or place them in a bag and smack it with a rolling pin or the bottom of a pan until you get have crumbs.

    Stir the graham cracker crumbs, salt, and sugar together in a small bowl, then add the melted butter and stir again until evenly combined.

    Next, press the crust evenly into a regular 9-inch pie pan, pressing up the side. Remove any crumbs that wind up on the top lip for a tidy presentation.

    I like to do this using my hands and kitchen-safe gloves, which gives me total control without getting the buttery crust stuck to my hands. However, you can also press with the bottom of a glass.

    Bake the crust for around 15 minutes, then allow it to cool to room temperature. While the crust is baking, whisk together the filling ingredients.

    If youre hesitant to add the zest to the filling mixture, you can omit it, but I promise it wont create any noticeable texture in the final pie. It simply adds flavor!

    You can tell the crust is ready when its slightly darker in color and smells fragrant. It wont darken up much more than this, even when it goes back into the oven with the filling.
