I went to Walmart this week to get organized with school supplies and recipe ingredients. I was specifically looking for Campbell Soup Company products to make back-to-school recipes. For easy weeknights and recipe essentials.

And really, its already back-to-school time. This has been our quickest summer vacation I think I can ever recall. My kids were still in school until the end of June and this is the first time that theyll go back to school BEFORE Labor Day. Its unheard of in New England! Weve been passing every milestone from June until now. Des graduated preschool, hot on the heels of his fifth birthday. Scarlet celebrated her eighth birthday, and then we headed to Cape Cod for our summer trip.

And this is our special recipe. Who doesnt love pot pie?? Plus, you get to have your individual ones for the family, really with minimal extra effort. This is a recipe we all four get excited for every time.

How Are Biscuits Made

Its really simple. I know that using a mix is easy but I promise homemade biscuits are just as easy and taste even better.

There are just a couple things to remember when youre making biscuit dough:

  • Cold ingredients
  • Use a light touch

Start by mixing your dry ingredients. Then you cut-in cold Challenge Butter thats diced. When I say cut-in I mean use a fork or pastry cutter to disperse the butter through the dry ingredients. Lastly, you stir in your buttermilk with a light touch, meaning that you stop when its just mixed and use your hands to gently finish the process.

Since were making a casserole, I just dropped the biscuit mixture on top the filling, like a chicken pot pie cobbler!

Once the casserole is baked the filling is bubbly and creamy and the biscuits are light and fluffy with crusty edges. This really is the perfect comfort food!

What Chicken Is Best

I highly recommend chicken thighs for this chicken pot pie soup recipe. I didnt always use chicken thighs for my soup recipes, but once I started, there was NO going back. Chicken thighs are dark meat which means they are inherently juicier, richer tasting and produce far more tender chicken than chicken breasts. They are also harder to overcook and stay tender for days with a more palate pleasing texture, even when reheated for leftovers.

In addition, chicken thighs are browned first which adds an important layer of flavor to the overall soup as all those golden, flavorful bits become part of the broth.
