What Should I Use For The Pot Pie Topping

Standard pot pie has pie crust, and we arent going in that direction. The slow cooker cant brown crust, so we must make our crust another way.

  • 2 Ingredient Biscuits These are SO easy and delicious! You just need self-rising flour and heavy cream. I keep self-rising flour on hand JUST for this recipe.
  • Canned Biscuits Pilsbury Grands are my go-to. These are in the refridgerated section of the store. If you cant find biscuits, the cresent dough is wonderful too.
  • Puff Pastry Cut into squares and bake puff pastry is very flakey and goes great with pot pie filling.

If you prepared your own chicken, make sure it is well shredded or chunked and place the chicken in a large mixing bowl. Note: Using the slow cooker method for the chicken makes it fall apart easily.

Substitutions And Serving Size

My family felt that using the cream of chicken soup made the flavour “too chickeny”, so I substitute a can of cream of celery soup. I also added salt & pepper to taste and about 1 tbsp each of oregano and parsley. We eliminated the cheese altogether. The suggested serving size would only be accurate for toddlers or as an appetizer. Using a common refigerated biscuit dough, the recipe does indeed make 10 mini pot-pies, however a grown person would likely want 3-4, plus a side salad. Kids would eat about 2-3. With the substitutions above, we make this on a regular basis.

Can I Freeze This Casserole

You can absolutely prepare this casserole as a freezer meal. There are a couple of ways to do it. You can either freeze only the chicken mixture in a baking dish and add the biscuits the day you bake the casserole, or you can add the biscuits before freezing. If you do add the biscuits before freezing, be sure to thaw the casserole completely before baking.

Nate, Colby and I just got back from a long and wonderful vacation to Virginia to spend time with Nates family for Christmas. We came home to a freezing cold Utah with a few inches of snow. Here in Utah winter lasts waaayy too long for my liking. We dont always have snow, but we have very cold days for months and months and it feels like it will never end. Which means every day I want to eat something hot and comforting and delicious for dinner.

So, the other day I wanted something nice and easy too, so I decided to go with chicken pot pie, but instead of a traditional pie I used biscuits as my crust and to make it extra easy I used Campbells® Oven Chicken Pot Pie Sauce.

This sauce gave me the perfect break from everything thats been going on for the holidays, with only 5 minutes of prep for a warm and delicious meal from scratch baked and ready about 40 minutes later. All I had to do for this perfect comfort meal was cut up some raw chicken, mix it in with some vegetables and stir it in with the sauce and pop it in my oven. I baked it for 25 minutes, put some canned biscuits on top and baked for an additional 15 minutes and then voila.

How To Make Chicken Pot Pie Casserole Using Canned Biscuits For A Crowd

  • 10 ¾ oz Campbell’s Condensed Cream of Chicken Soup
  • 9 oz mixed vegetables
  • 1 cup chicken
  • 1 pkg Pillsbury biscuits
  • Preheat the oven to 400°F.

  • Stir the soup, vegetables and chicken in a 9-inch pie plate.

  • Cut each biscuit in half and spread out evenly on top of the mix.

  • Bake for 30 minutes or until the biscuit top crust turns golden brown. Serve.

    This Chicken Pot Pie Biscuit Casserole Is The Classic Pot Pie Made Into A Casserole

    Makes 6 servings

    For this Chicken Pot Pie Casserole, you can use 1 tube of reduced fat refrigerated biscuits or my homemade biscuit dough. My homemade biscuit dough is similar to the Two Ingredient Dough . However I like to add an egg and reduce the non fat Greek yogurt amount which makes the dough less sticky and easier to work with.

    How do I make this Chicken Pot Pie Biscuit Casserole?

    Preheat oven to 350 degrees.

    Spray a 9 x 13 baking dish with non stick cooking spray.

    In a large bowl, add non fat Greek yogurt, egg, and self-rising flour.

    Use a rubber spatula to mix together. It will be crumbly at first which is totally normal.

    Flour your hands and place dough on counter that has been lightly floured and begin kneading.

    Knead until you can easily form a ball, about 10 turns. Press gently down to flatten dough.

    Use a knife to cut small pieces of the dough ball.

    Place dough pieces into a medium bowl. Drizzle with 1 tablespoons melted butter toss to coat butter.

    In a large mixing bowl, combine the remaining ingredients. Stir until all ingredients are well combined.

    Pour chicken and vegetable mixture into baking dish

    spread in even layer.

    Place dough pieces over the top of the mixture.

    Cover with foil and bake for 30 minutes.

    Remove foil after 30 minutes and continue cooking for additional 10-15 minutes or until biscuit pieces are thoroughly baked or until center of casserole is bubbly.
