Homemade Peach Pie Filling In Minutes
Heck, it would have taken me much longer to run to the store to buy it than the few minutes it took to actually make it from scratch.
This will be perfect! That lowly can of peaches made 1.5 cups of peach pie filling.
My homemade pie filling was ready to be used. I stored it in the fridge until our dinner gathering.
When I was ready to serve dessert I brought the pie filling out and spooned some on top of the slices of homemade cheesecake. Then I garnished the whole shebangie with some of the reserved peach slices, just for pretty.
Mama always says Presentation is half the meal and mamas always right!
How To Make Pecan Praline Peach Pie
- 1Heat oven to 425F.
- 2Prepare the praline topping by combining the brown sugar and flour, and cutting in the butter with a pastry blender, until mixture has a crumbly texture. Stir in the chopped pecans.
- 3Sprinkle one-third of the mixture in the bottom of the unbaked pie shell.
- 4Combine the sliced peaches, flour, sugar, cinnamon or cardmom and lemon juice, and pour into pie shell over praline mixture.
- 5Cube the 1/4 cup butter into small pieces and evenly place on top of peach filling.

Can I Omit The Cornflour / Cornstarch
For clarification, cornflour and cornstarch are the same thing. They are used as a thickening agent to make sauces etc a denser consistency.
In the American South the term corn flour is used to describe a finely ground cornmeal – this is not what is needed in this recipe!
I use cornflour / cornstarch in this recipe to thicken up the filling for these pies. It prevents the filling oozing out of the pies when baking.

When Are They In Season
Mid May through September. Peak season mid July to mid August.
To determine the season, I look at the availability a couple of my favorite stone fruit growers.
Kingsburg Orchards calls them Flying Saucer peaches. These are white fleshed donut peaches. Their earliest ones are available at the month of May. Then there is a gap all the way until August when their next couple varieties are ripe.
Kingsburg also have a yellow flesh variety called Golden Moon, which comes out in July.
Another of my favorite growers is Family Tree Farms. Their donut peaches, called Saturn peaches are available from the end of May through the end of June and then again around the end of July to late August.
Final crops for Family Tree Farms are between early September and mid October – although I think by then you don’t seen most stores carrying them as they have moved onto to larger displays of apples and pears.

White Or Yellow Flesh
The answer is both.
However, The majority of donut peaches will you find in stores are going to be the white flesh varieties, known for their incredibly sweetness and lower acid.
I will mention some yellow fleshed varieties below. Actually these are my favorite flat peaches.
To tell whether the color on the inside look at the color of the skin that is not the red blush. If it’s more yellowish, than the inside will be so, but if it’s more white, the inside will be white.
Using Peach Pie With Canned Peaches
Though many people prefer to use fresh peaches, canned peaches can be a great option for making desserts. Most canned peaches can last for up to two years unopened, whereas fresh peaches normally last around four days. Using canned peaches gives you the ability to make peach pie several months after you bought the canned peaches.
When using canned peaches, many recipes will call for you to drain the peaches first. This is because leaving the juices in will lead to too much liquid which can cause soggy desserts. The peaches will maintain moisture from sitting in the juice, so you will still get a juicy peach dessert.

How Do You Store Fresh Peach Pie
You can store the homemade peach pie in the refrigerator for 4-5 days loosely covered with plastic wrap. Or it can even set in the counter for 2-3 days. The peach filling will cause the crust to get soggy faster if its on the counter, but it will still taste great. You can serve it at room temperature, cold from the fridge, or toss it in the microwave for a few seconds. If you choose the microwave, you have to add a spoonful of ice cream too! Okay, you dont have to, but man its good!

You are going to feel like a professional southern baker when you make this easy peach pie recipe! There arent tons of steps, and you wont have to devote a bunch of hands-on time making it. Plus, the flavor is seriously out of this world.
First Step: Begin making the crust. Pulse the flour, sugar, and salt in a food processor.
Second Step: Add some cold butter that has been cut into small chunks to the flour mixture. Once the chunks are pea-sized, then you can start adding a little bit of water at a time.
Third Step: Take the dough out of the food processor and knead together with your hands form two 4-5 inch discs with the dough. Then wrap the dough with plastic wrap and refrigerate. You can refrigerate it for 1 hour up to overnight.
Fourth Step: Once its time to bake the pie, you will want to preheat the oven to 375 degrees F.
Fifth Step: Carefully roll out each dough ball until you have a circle pie crust. Place one rolled dough into the bottom of a pie pan.
Sixth Step: Cut the peaches into slices and place them into a medium-sized bowl. Sprinkle in the flour, sugar, cinnamon, nutmeg, and cloves. Stir until the peaches are coated well.
Seventh Step: Place peach mix into the prepared pie crust.
Eighth Step: Add the slices of butter and cover with the second crust.
Ninth Step: Bake for 1 hour until the crust is golden brown.

Occasionally, you will make a pie and be super excited to bite into it only to figure out the crust is soggy. There are a few things you can try to prevent this from being a problem. With this peach pie recipe, it shouldnt be an issue because it happens more with custards and stuff like that.
