Homemade Peach Pie Filling In Minutes

#306 How to Can Peach Pie Filling

Heck, it would have taken me much longer to run to the store to buy it than the few minutes it took to actually make it from scratch.

This will be perfect! That lowly can of peaches made 1.5 cups of peach pie filling.

My homemade pie filling was ready to be used. I stored it in the fridge until our dinner gathering.

When I was ready to serve dessert I brought the pie filling out and spooned some on top of the slices of homemade cheesecake. Then I garnished the whole shebangie with some of the reserved peach slices, just for pretty.

How To Pick And Prepare Peaches

The perfect ripe peach is like delectable gold. Sweet, tender and juicy! This peach pie will make all the difference with what peaches you have in the filling.

  • Variety: Peaches come in all different varieties and flavors. Their colors range from white to dark reddish-orange and all taste amazing. Many will be labeled as freestone or clingstone peaches. This refers to how the flesh sticks to the pit. Look for freestone peaches, they will come away cleanly and easily from the pit.
  • What to Look For: When buying or picking peaches there are a few things to look for. Look for firm peaches that give slightly under light pressure. They should be free from bruises, soft spots, and wrinkles. A ripe peach will also be fragrant.
  • How to Ripen Peaches: Often stores and markets will sell peaches that are slightly underripe so that they transport better and will ripen at the store or in your home. If all you can find are under-ripe peaches, pick the best ones you can find. They should still be blemish-free and peach-colored, not green. Place the peaches in a paper bag and place them on your counter till ripe.
  • Store: Keep all ripe peaches in the fridge till ready to use.

Frequently Asked Questions And Answers

What are people saying about bakeries in Los Angeles, CA?

This is a review for bakeries in Los Angeles, CA:

“Worst pie ever. We ordered the key lime and the cereal killer. They were out of the pie we wanted and had been for two months but were just getting around to updating the sign. The key lime pie filling was very light and had a strange savory aftertaste. The cereal killer contained slightly soggy fruit loops in a cheesecake. Good idea. Poor execution. The crust left much to be desired. It tasted stale. We also got peach “enpienadas” that were supposed to have cream cheese in them. Spoiler alert: they didn’t. They dumped peach pie slices in a grocery store frozen crust with rock sugar and charged a premium for this experience. You would get better pie at McDonald’s. Give this one a miss.”

Can I Omit The Cornflour / Cornstarch

Peach Pie Season in Amish Country

For clarification, cornflour and cornstarch are the same thing. They are used as a thickening agent to make sauces etc a denser consistency.

In the American South the term corn flour is used to describe a finely ground cornmeal – this is not what is needed in this recipe!

I use cornflour / cornstarch in this recipe to thicken up the filling for these pies. It prevents the filling oozing out of the pies when baking.

    When Are They In Season

Mid May through September. Peak season mid July to mid August.

To determine the season, I look at the availability a couple of my favorite stone fruit growers.

Kingsburg Orchards calls them Flying Saucer peaches. These are white fleshed donut peaches. Their earliest ones are available at the month of May. Then there is a gap all the way until August when their next couple varieties are ripe.

Kingsburg also have a yellow flesh variety called Golden Moon, which comes out in July.

Another of my favorite growers is Family Tree Farms. Their donut peaches, called Saturn peaches are available from the end of May through the end of June and then again around the end of July to late August.

Final crops for Family Tree Farms are between early September and mid October – although I think by then you don’t seen most stores carrying them as they have moved onto to larger displays of apples and pears.

    White Or Yellow Flesh

    The answer is both.

However, The majority of donut peaches will you find in stores are going to be the white flesh varieties, known for their incredibly sweetness and lower acid.

I will mention some yellow fleshed varieties below. Actually these are my favorite flat peaches.

To tell whether the color on the inside look at the color of the skin that is not the red blush. If it’s more yellowish, than the inside will be so, but if it’s more white, the inside will be white.

Using Peach Pie With Canned Peaches

How to make a peach pie in a cast iron skillet

Though many people prefer to use fresh peaches, canned peaches can be a great option for making desserts. Most canned peaches can last for up to two years unopened, whereas fresh peaches normally last around four days. Using canned peaches gives you the ability to make peach pie several months after you bought the canned peaches.

When using canned peaches, many recipes will call for you to drain the peaches first. This is because leaving the juices in will lead to too much liquid which can cause soggy desserts. The peaches will maintain moisture from sitting in the juice, so you will still get a juicy peach dessert.

How Do You Store Fresh Peach Pie

You can store the homemade peach pie in the refrigerator for 4-5 days loosely covered with plastic wrap. Or it can even set in the counter for 2-3 days. The peach filling will cause the crust to get soggy faster if its on the counter, but it will still taste great. You can serve it at room temperature, cold from the fridge, or toss it in the microwave for a few seconds. If you choose the microwave, you have to add a spoonful of ice cream too! How Do You Prevent Soggy Pie Crust

Occasionally, you will make a pie and be super excited to bite into it only to figure out the crust is soggy. There are a few things you can try to prevent this from being a problem. With this peach pie recipe, it shouldnt be an issue because it happens more with custards and stuff like that.

    • Blind BakingThis means that you poke holes in the bottom of the crust and bake it without the fillings. Then add the filling and finish baking as you normally would. It keeps the filling liquid from making the crust mushy.
    • Add Chocolate Layer Okay, this is not a good idea for this peach pie recipe because the flavors will not go well, but with some pies, you can paint on a layer of chocolate! This provides a barrier between the pie crust and fillings.
    • Drain Moisture Its a good idea to mix fruit and sugars together. Then allow them to sit for 10-15 minutes, so the juices flow. Then drain any of that moisture off before adding it to the pie crust.
    • Egg Wash Put an egg wash on the bottom crust. Bake it for a few minutes, and it will become a barrier.
