I looked through a ton of Indiana Sugar Cream Pie Recipes. Some used cream and half and half, a couple used whole milk .

A couple of fillings were cooked on the stove top and then poured into the pre-baked crust to set up in the fridge. There were a lot of variations. Believe it or not, the one I followed most closely is from Dan Quayle. Yes, that Dan Quayle.

Sugar Cream Pie slices like a dream and would be a pie to serve fo the holidays, especially when dusted with nutmeg.

This sugar cream pie recipe was originally published in the Greenwood Daily Journal, Saturday August 6, 2011.

There are many things that Indiana is known for. Basketball, Corn, tenderloin sandwiches and the Indianapolis 500. I am not sure many of you know that another is the Hoosier Sugar Cream Pie. Go to any potluck or church pitch-in and you are bound to see this pie gracing the dessert table.

Creamy, white and sugary-sweet, this pie is known in my family as Grandma Kings Pie. Every year for Christmas my Grandmother would bring this pie to our family gathering. I was never very interested in trying it as a child. It was just so blank looking. Where was the pretty lattice top, where were the apples..the chocolate? I, the pie fan that I am, turned my nose up at this Indiana classic. I admit though, I became a bit intrigued as I got older. I knew that my entire family liked it but still I was a little put off by its blase look.

When I met my husband 17 years ago, he mentioned to my Grandmother how much he liked sugar cream pie and low and behold, the next time we saw her she was toting a freshly baked pie.

I decided to finally break down and ask her for the recipe of her sainted pie. I expected her to bristle at my request as it is one of the many things she is known for, at least in my lifetime it has been.

Who Invented Sugar Cream Pie

History. The dish is the unofficial state pie of Indiana, where it is believed to have originated with Quaker settlers who came from North Carolina in the early 19th century, and thereafter settled in east-central Indiana, particularly around the cities of New Castle, Portland, Richmond, and Winchester.

Can You Use Half And Half Instead Of Cream

Just because its called sugar cream pie doesnt mean you have to make it with all cream. This recipe contains both cream and milk. Some other dairy options are:

  • light creamyour results will be pretty similar to this recipe
  • half and halfditto
  • whole milkyour pie will be a bit less rich than this recipe
  • evaporated milkI have not tried with evaporated milk, but my bet is youll have to reduce the amount of flour since there is less liquid in evaporated milk. The flavor will be very different, and you really wont be able to call it sugar cream pie, but if its all you have, its worth a shot.
  • Buttermilkif you use buttermilk, youll be making buttermilk pie. Since most commercial buttermilk is lowfat, I would add an egg for richness. Again, I havent tried to make sugar cream pie with any other dairy substitutes, so Im giving you my best guess.

What Does It Taste Like

Knowing what I know about use what you have pies, Id have to say that lots of folks in Indiana had year-round access to cream and sugar. Im almost a little surprised theres no egg in it since I figure if youve got access to cows, you probably have access to chickens.

Egg lends richness and also tends to add their own mellow yet distinctive taste, but it can muddy the taste of the cream.

With eggs out of the picture, Indiana Sugar Cream Pie tastes of sweetened cream. Do use the best cream you can find because the flavor will shine through. Now is not the time for generic store brand cream since it is the predominant flavor. Splurge on the organic stuff for this guy.

Can I Make This A Gluten

Yes, aside from needing a gluten-free crust recipe or store bought gluten free crust, all you will need to do is substitute 1/3 cup of potato starch for the 1/2 cup flour in the recipe.

You could use cornstarch, but it needs a higher temperature to thicken. If you want to substitute cornstarch, I would cook the filling on the stove top like a pudding, allow it to boil for 2 full minutes, stirring all the while, and then pour it into a fully baked crust to cool. Chill in the fridge to set up completely.

  • Yield:one 9-inch pie

Flaky Pie Dough for a 1-crust pie, below

Filling:

4 tablespoons unsalted butter, softened

2 teaspoons vanilla extract

Flakey pie dough for one-rust pie, about 10 ounces:

1 1/4 cups all-purpose bleached flour

1/4 teaspoon salt

8 tablespoons cold unsalted butter

2 to 3 tablespoons cold water

Flakey pie dough for two-crust pie, about 1 1/4 pounds dough:

2 1/2 cups all-purpose bleached flour

1/2 teaspoon salt

16 tablespoons cold unsalted butter

4 to 6 tablespoons cold water

  • Prepare and bake the crust.
  • To make the filling, combine 2 cups milk, sugar and salt in a non-reactive saucepan whisk once to mix and bring to a boil over low heat. Place remaining 1/2 cup milk in a mixing bowl and whisk in cornstarch, then eggs. Return milk and sugar mixture to a boil over low heat then whisk about a third of it into the egg mixture. Return milk and sugar mixture to a boil once more and whisk in the egg mixture, whisking constantly until the filling thickens and comes to a boil. Allow to boil, whisking constantly, for about 30 seconds. Remove from heat, whisk in butter and vanilla pour into a non-reactive bowl. Press plastic wrap against the surface of the filling and chill until it is approximately 75 degrees. Fold the bananas into the cooled filling and spread it evenly in the cooled crust.

    Like most desperation pies, the ingredient list is very straightforward.

    Heres what youll need:

    • single pie crust: This can be homemade or store bought. And if you need gluten free, you can use a gf crust as well
    • heavy cream
    • whole milk: You can also substitute half and half for the milk/cream combination
    • sugar: You could potentially use light brown sugar here for more flavor, but I do love the color of this pie when made with granulated
    • all purpose flour: provides the thickening. Substitute corn starch or another gf starch for the AP if you need gluten free. To use cornstarch, see the section below called Can I Make This a Gluten Free Pie?
    • fine sea salt: regular table salt is fine here too. If you use kosher salt, youll have to increase the amount by a touch since fine salt is saltier per teaspoon
    • butter: because who doesnt want an extra touch of richness?
    • vanilla: vanilla and cream are the main flavorings in this pie, so be sure to use your best vanilla here. The flavor will shine through.
    • nutmeg: I like freshly grated. If you dont like nutmeg, you may use ground cinnamon instead
