How to Make an Easy Chicken Pot Pie

Frozen pies should be frozen before heating, so use a rapid method. Pies will be delicious as soon as they are in the oven on a microwave-safe plate. You can adjust your temperature by pressing the crisping button on the bottom of the tray. If you have to vent your pie, cut a small slit in the middle and let it breathe. For a large pie, let it sit for 3 to 4 minutes.

  • Place butter and flour in a medium-sized saucepan over medium-high heat.
  • Stir the butter and flour together and cook until it begins to become fragrant like pie crust.
  • Add a cup of chicken stock and poultry seasoning. Stir until this becomes thick.
  • Add in half of the remaining stock and stir until the gravy becomes thick.
  • Add in remaining stock. Place vegetables and cooked chicken into the pan and stir to combine.
  • Place one crust in the bottom of a 2-quart casserole dish.
  • Spoon filling mixture into the dish.
  • Top with the remaining top crust.
  • Brush egg wash over the top of the crust and sprinkle with kosher salt and fresh cracked pepper.
  • Cut two or three slits in the top of the crust.
  • Bake at 375 degrees for about 1 hour or until the top is golden brown and the inside is bubbling hot.

    Now that the Fall season is right upon us, I have been trading my grilling recipes for more oven baked meals. Call me crazy but when the time permits, I love spending time in my kitchen preparing ingredients for hearty meals. Creamy chicken pot pie is a meal that has only recently been added to my rotating meal schedule because I finally perfected a delicious rendition of it.

    Yes, I do use Pillsbury frozen crust for my chicken pot pie recipe, but everything else is prepared, chopped, diced, and cooked by me.

    Most chicken pot pie recipes call for boiled chicken meat, but I am totally not into that! I love to an fry my chicken tender pieces with lots of spices to make them flavorful. No one wants a boring pie with bland flavors so this helps spruce it up!

    I cut my own carrots, celery, and onion fresh, but do add in frozen peas. I cooked them in a shallow pot of water with butter to keep them flavored and fork-tender before adding in my flour, and broth.

    I find cooking my veggies give the pie an even better flavor, and keeps the veggies in tact and not mushy.

    I used my largest Pyrex glass pie plate which worked out well and kept the crust from over browning.

    • You can use a 2-quart casserole dish or deep-dish pie plate to bake your pot pie, or you can use a 2-quart oven-safe skillet. Using the oven-safe cast iron skillet cuts down on the dishes because the pot pie becomes a one-pot meal!
    • Do not thaw the frozen peas before adding them to the filling. This helps them stay bright green, rather than turning brown and mushy after baking.
