Best Practices For Making Flaky Gluten Free Pie Crust
Always begin with cold ingredients. Dice chilled unsalted butter, and then place it back in the refrigerator to chill again. Begin with cold water, and then add ice to the water. Ice water is colder than cold water, and even colder than ice.
Do not chop up the butter into super small pieces or process them until theyre the size of small peas. That may be a common instruction in pie crust-making, but I am anti-small-peas in all pastry-making for one reason.
Very small pieces of butter not only melt too easily when they meet with the heat of your hands , but they melt right into the dough, so even rechilling the dough wont help once the butter in the raw dough has melted. Using butter in larger chunks, and then flattening them between your thumb and forefinger, solves all of those problems.
Handle the dough as little as possible when making the dough, but dont drive yourself crazy. Since we are working with larger pieces of butter than small peas, we can always re-chill the dough if it becomes too soft or difficult to handle.
If you are making a dairy-free gluten free pie crust by replacing the butter with Spectrum nonhydrogenated vegetable shortening, dont chill the chopped shortening for too long, or it will freeze and be difficult to flatten and roll out properly.

Pro Tips And Recipe Notes
- I used Granny Smith apples in this recipe. Theyre tart and tangy. Generally, we want firm apples. Honeycrisp and Braeburn are sweeter yet firm. But, I have even used Delicious apples with this recipe.
- If your frozen pie shell is broken, thaw the shell. Then dampen the crack with water, and use your finger to seal the crack together by lightly pinching and pressing the dough.
- I served this pie with homemade whipped cream. You might even like to top it with a scoop of vanilla ice cream dusted with cinnamon. Or just have it plain. Its up to you.

This is the Safeway grocery store generic version of the Pillsbury Pie Crust. By the way, many national grocery chains make generic versions of national brands. You can tell which brand they are imitating by looking at the ingredient list.

Tasting notes: A little less flavorful than the Pillsbury Pie Crust it is imitating. A little less yellow and a little more red in color. The flavor and consistency reminds me more of a cracker than a pie crust. Edible.
Structure notes: Unrolls easily and presses into the pie pan easily. A little cracking at the very end of the unrolling. Bakes up well without cracking.
OKAY. Similar enough to the Pillsbury brand, not quite as flavorful. Edible, nothing special. Uses preservatives and food dyes.
Shortening In Gluten Free Pie Crust
Yes. I use palm shortening to keep my gluten-free pie crusts dairy-free and vegan. You can use butter or regular shortening in this gluten-free pie crust recipe. I havent personally tried dairy-free butter in this recipe.
This gluten-free pie crust recipe is the go-to recipe for all things pie in our house. I like to use Bobs Red Mill 1-to-1 gluten-free flour blend when making pies, but you can also use a similar blend, or my gluten-free flour blend.
