Chocolate Chip Cheesecake Cookie Recipe

  • 1/2 cup of whipped cream

  • Preheat the oven to 350F.
  • In a medium bowl, combine the cookie mix, butter, and water. Weve found that its best to use a kitchen mixer with a wide paddle if you dont have one, use your hands to blend everything together.
  • Make 2-inch balls of cookie dough and hollow out the center, creating a bowl-like shape. Set these cookie dough bowls on a greased or lined cookie sheet.
  • In a separate small bowl, add the cream cheese, powdered sugar, Greek yogurt, vanilla, and salt. Whip until smooth, and add in the whipped cream.
  • Spoon a dollop of the cheesecake filling into the center of each cookie dough bowl. Add more cookie dough to cover and repeat until all the cookie dough is used.
  • Place cookie sheet in preheated oven and bake for 12 15 minutes.
  • Remove the chocolate chip cheesecake cookies and enjoy plain or with a glass of milk!
  • Can I Try Different Cake Mixes

Feel free to use whatever cake mix you have on hand or want to try with these cookies. Chocolate chip cake mix cookies work great with a vanilla or white cake mix but Im sure chocolate, fruit flavors, or even gluten free mixes would work well too!

As long as the ounces are similar to a regular boxed cake mix you wont have to adjust the other ingredients that were using. Also, keep in mind that you will just use the ingredients called for here and that you wont actually prepare the cake mix as written on the box.

    Chocolate Chip Cookie Mix Preferences

Although chocolate chip cookies have some features that appeal to everyone, some people may have particular tastes that others do not. A person could yearn for crispy, crunchy cookies while another yearns for soft, gooey chocolate chip cookies.

It seems most consumers favor semisweet chips because they have a soft melting texture that can provide a more addicting mouthfeel when combined with crunchy caramelized cookies. However, some people might prefer milk chocolate, while others would prefer the flavor of bittersweet chocolate in their cookies.

Its also a matter of taste when you consider how many chocolate chips to put in each cookie. Lehi Mills Chocolate Chip Cookie Mix offers optimum chocolate chips, but as we mentioned above, you can add more if you would like. If you are looking to make soft, chewy cake mix cookie bars, you start off by mixing your cake mix, vegetable oil, and eggs together. Leave the chocolate chips out for now. Combine with a mixer or by hand.

Once the cake mix, oil, and eggs are mixed, toss in the chocolate chips and manually combine.

Spray a 9×13 pan and place your batter evenly throughout. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in center comes out clean.

Cookie bars from cake mix are easier than you think! Like I said, in about 30 minutes and with just 4 ingredients your family will be all smiles and ready for some dessert.

    Recipe FAQ

Can you use different pan sizes? I used an 8 inch round cake pan, but you can use a similar sized square pan or even a pie plate. If you want to make a thinner more crispy cookie cake try using a slightly bigger pan and adjust the bake time.

When is it ready to come out? You are going to want to pull it out before you think it is ready. The outside will be set, but the middle will still be soft . It will continue to bake as it cools in the pan and the finished cookie cake will be perfectly set and delicious..

How to remove the cake from the pan? To help this cake come out of the pan easily you can line the bottom of the pan with parchment paper and grease the sides of the pan .

Kelly Senyeichef, founder of the Just a Taste blog and author of The Secret Ingredient Cookbookshares her quick and easy red velvet-flavored chocolate chip cookies made with a genius shortcut ingredient: box cake mix.

Box cake mix is the ultimate shortcut for cookies because it contains all the essential dry ingredients to form the base for those baked goods: flour, sugar and leavener. Simply add the wet ingredients. Another great thing is the variety of flavor combos. If it’s a box mix flavor, it can become a cookie or banana bread!

Kelly calls this cross between red velvet cake and everyone’s favorite cookie “the softest, chewiest, most chocolate chip-filled cookies to ever cross your lips.” So, preheat your oven, make sure the milk is ice cold and get baking!

Note: You can use any type of red velvet cake mixjust be sure the weight of the box cake mix is 15.25 ounces. Kelly prefers those that include pudding because the resulting cookies are even softer and chewier.

    Why Refrigerate Cookie Dough

While it is optional for most cookie recipes, refrigerating the dough gives you a few advantages. First, refrigerated dough will help produce a cookie that is perfectly crisp on the outside and soft and chewy on the inside.

Refrigerating dough will also make it much easier to form round, uniformly shaped cookies.
