Still a well-known island hangout, the Green Turtle has a key lime pie that we consider a chefs special on the fancier side. The macadamia nut crust is covered with a denser style filling topped with coconut whipped cream, berry syrup, and sprinkled with fruit.

- Youll need 8 to 10 limes total for this recipe. Choose plump limes that give a little when you squeeze them they will be easier to juice. You should get about 2 tablespoons of juice from each lime. Be sure to zest the limes before you squeeze the juice from them, as its near impossible to do afterward.
- Sweetened condensed milk is canned milk from which water has been removed, and sugar has been added. Be sure not to confuse it with evaporated milk, which is usually sold right alongside.

- Dont aim for stiff peaks. You want the whipped cream to keep its shape and be soft, billowing peaks. If by chance you OVERBEAT the whipped cream fixing it is actually very easy. Simply add in more fresh heavy whipping cream and whisk by hand. My life was changed when I found that out!
- Wait until peaks start to form before adding in the confectioners sugar. I much prefer confectioners sugar in this recipe, as it dissolves entirely and leaves a smooth texture. If you choose to use granulated sugar be sure to add it immediately at the beginning and whip it with the cream.
- Homemade whipped cream is best used immediately, but it can be stored for up to 10 hours if needed. After that, it may start to separate.
Top the chilled Key Lime Pie with the whipped cream and serve! If you would rather top this pie with a meringue topping, just use the meringue recipe in my Lemon Meringue Pie. Store the pie in the refrigerator, loosely covered with aluminum foil, for up to three days.
To freeze Key Lime Pie, freeze it without the added whipped topping. Place the pie in the freezer for a couple of hours before double wrapping it tightly in plastic wrap. Keep it in a heavy-duty freezer bag. Remember to label and date the wrapping the pie will last for up to a month in the freezer. Thaw the pie in the refrigerator.

How To Make Key Lime Pie
To make the base I used my food processor to whizz up the digestive and ginger nuts into crumbs. I mixed them with the melted butter and pressed them into a loose bottomed tart tin. Then I baked it for 10 minutes. To make the filling, I whisked the egg yolks together, then whisked in the condensed milk with my electric hand mixer.
Then I added the juice and the zest of the limes and whisked it for a few minutes. I poured the lime filling into the base and baked it for 15 minutes until it was set, but it still wobbled in the centre.
To decorate the Key Lime Pie I whipped up the cream with the icing sugar and the vanilla, and I piped it onto the pie. You can of course just dollop it on with a spoon. I sprinkled over some more lime zest too.
The Key Lime Pie filling is so zingy and sour, it makes your mouth tingle in such a good way! The whipped cream balances it out perfectly and the base adds crunchy texture. Start by preparing the crust. In a large mixing bowl, add the crushed cookies, sweetener, and melted butter and mix well. Can You Substitute Lime For Key Lime
Yes and no. Honestly? The flavor of the key lime pie just isnt the same with Persian limes as opposed to key limes. But okay, yes, its doable good even.
Please, nobody excoriate me in the comments for making such a declaration. If key limes arent available, I would first recommend looking for bottled key lime juice, which you will find next to the regular lime juice.
If that doesnt work, you could certainly make this recipe with just regular lime juice. But I would definitely recommend using fresh-squeezed lime juice as opposed to bottled if going this route.
