Can You Make The Pie Dough In Advance And Keep It In The Fridge Or Freezer
Yes! You can make the pie dough ahead of time and then wrap it tightly in cling film and keep in the the fridge or freezer until needed.
It keeps in the fridge for about 1 week and in the freezer for about 2-3 weeks. When you want to use it, allow it to thaw at room temperature before using. If you press down on it with a finger, it should leave an indentation but it should feel firm, not too soft to the touch.
And there you have it, friends! That covers pretty much everything you need to know to make the flakiest gluten free pie crust. Ive used it in numerous recipes and it always amazes me just how flaky, buttery, crisp and delicious it is.
Its wonderful both in sweet and savoury recipes, so there are really endless possibilities of how you can use it in fruit pies and savoury quiches, in galettes and hand pies honestly, Im drooling just thinking about it.
I really hope youll love it as much as I do.

Shortening In Gluten Free Pie Crust
Yes. I use palm shortening to keep my gluten-free pie crusts dairy-free and vegan. You can use butter or regular shortening in this gluten-free pie crust recipe. I haven’t personally tried dairy-free butter in this recipe.
This gluten-free pie crust recipe is the go-to recipe for all things pie in our house. I like to use Bob’s Red Mill 1-to-1 gluten-free flour blend when making pies, but you can also use a similar blend, or my gluten-free flour blend.

Fortunately, there are a few options from which you can choose. I looked into what’s available both online and in supermarkets, and here are the details.
Leadbetters All Natural French Picnic Flaky Pastry Sheet
Leadbetter’s is San Francisco based company that distributes their products to Whole Foods and other grocers in the Bay Area. Many urban areas have local bakery brands that produce high quality packaged butter crusts.
- 8 ounces each
- $10.99 for a package of 2
- Frozen rolled out and flat
- Organic flour, salted butter, water
Tasting notes: Extremely buttery and flaky. Like eating a croissant.
Structure Notes: More of a pastry crust than a pie crust. Very flaky, not very sturdy.
RECOMMEND WITH CAVEAT. The most delicious of all the pie crusts I tested. Best if you need a light and flaky pastry crust. Donât recommend it if you need a sturdy crust.
This particular crust is only available in the San Francisco Bay Area, but is a good example of the excellent packaged crusts that may be available from local bakeries.

Safeway Brand Signature Kitchens
This is the Safeway grocery store generic version of the Pillsbury Pie Crust. By the way, many national grocery chains make generic versions of national brands. You can tell which brand they are imitating by looking at the ingredient list.
- 7.5 ounces each
- $2.99 for a package of 2
- Comes refrigerated and rolled
- Enriched bleached flour, wheat starch, lard and hydrogenated lard with BHT added to protect flavor, water, sugar, salt, xanthan gum, yellow 5, red 40, citric acid, sodium propionate, potassium sorbate, soy flour
Tasting notes: A little less flavorful than the Pillsbury Pie Crust it is imitating. A little less yellow and a little more red in color. The flavor and consistency reminds me more of a cracker than a pie crust. Edible.
Structure notes: Unrolls easily and presses into the pie pan easily. A little cracking at the very end of the unrolling. Bakes up well without cracking.
OKAY. Similar enough to the Pillsbury brand, not quite as flavorful. Edible, nothing special. Uses preservatives and food dyes.

Tips For Making Gluten Free Pie Crusts:
- Roll the dough out on a lightly floured piece of parchment paper to prevent sticking.
- For a beautifully browned crust, brush the dough with egg wash before baking .
- Using a glass pie plate allows you to see the bottom of the crust, ensuring that it is nicely browned before removing the pie from the oven.
- If the top of the pie gets too dark before the filling is fulling cooked, tent it with aluminum foil.
