One of my fondest summer memories, when I was young, was picking blackberries for Grandmas Old Fashioned Blackberry Cobbler.
Hot summer day, getting pricked by the stickers, watching for snakes. ah, what fun!!
The worst and the best were picking wild blackberries in random places in the pasture. Wild blackberries have half inch long stickers and a bigger chance of snakes. However, wild blackberries are much better, in my opinion, than blackberries that horticulturists have improved. They have smaller seeds and more intense flavor.
Making Grandmas Old Fashioned Blackberry Cobbler is a two-step process. First, you need to make the crust which is an easy dough to make. This top crust is similar to sugar cookie dough and easier than pie crust dough to make. Next, youll boil the berries with sugar to sweeten and thicken them. Finally, you put the two components together for the most amazing dessert.
Baking & Serving Tips
Make sure to get the most enjoyable and best experience out of our pies by following the baking instructions and serving tips below. These instructions are specific to Apple Blackberry Pie. If you would like instructions for a different pie, please check that page.
If your Apple Blackberry Pie is already baked, please store it in the fridge. For best results, the pie should be consumed within 4 days of purchase. Before serving please remove from fridge and leave at room temperature for 45 minutes. To warm, bring to room temperature for 45 minutes, and then place in preheated oven at 350°F. Warm a 9 pie for 20 minutes and a 5 for 10 minutes.
If your Apple Blackberry Pie is frozen, please store in the freezer until you are ready to bake and consume. For best results, the pie should be baked within 3 months of purchase. To bake, place pie on baking sheet and place in preheated oven at 350°F. Bake a 9 for 90-120 minutes and a 5 for 50-60 minutes.
Once baked, cool the Apple Blackberry Pie for a minimum of 1 hour before serving. The bottom of the pie tin should remain warm to the touch. If it is served too hot, the pie’s consistency will be too runny.

How To Make Perfect Berry Pie:
Cook berries: Simmer berries, sugar and lemon juice in a large saucepan over medium heat until warm and juicy, about 5-10 minutes, gently stirring occasionally.
Thicken filling: Spoon out about ½ cup of the juice from the pan into a bowl. Stir cornstarch into the juice until smooth. Bring pot of berries back to a simmer and slowly pour in the cornstarch. Gently stir mixture , until thickened, about 2-5 minutes.
Cool. Remove from heat and stir in the butter. Allow to cool for 15 minutes.
Add to pie shell: Pour mixture into unbaked pie shell . Add lattice top or a whole top with holes pricked on top for steam to escape. Pinch the edges of the top and bottom pie crusts together and crimp the edge, if you like.
Brush with egg wash: Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with sugar.
Bake at 400 degrees F for 40-45 minutes. Check it after about 25 minutes and place a piece of tinfoil over it if the top crust is getting too browned.
Serve or refrigerate. Remove to a wire cooling rack and allow to cool for several hours. Once cooled completely, you can cut into it or cover it and refrigerate it overnight to serve the next day.

Make Ahead And Freezing Berry Pie:
To make ahead: This pie can be prepared completely 1 day a head of time. You can also prepare the filling up to 3 months ahead of time and store it in the freezer. Thaw it overnight in the refrigerator before pouring in unbaked pie crust.

Primocane blackberries vs. Floricane blackberries: Primocane blackberries are the plants that fruit on the current year growth, such as: Prime-Ark45 Thorny, Prime-Ark Freedom Thornless and Prime-Ark Traveler Thornless. We recommend these varieties if you wish to have a fall crop: late August to November-depending on Hardiness Zone.
The other varieties of blackberries on our site are Floricane blackberries. Floricane berries fruit on the prior year growth and are considered summer fruiting varieties: beginning of June to August 15, depending on Hardiness Zone and spring weather conditions. If current spring is colder with late frost conditions it means that your blackberry crop will be delayed. Try to water thoroughly to save your crop through the dry hot season.

What Makes Fruit Pies Runny / How To Thicken Blackberry Pie
Pies will get soupy/runny if theres too much liquid in the filling. Some blackberry pie recipes use flour to thicken the filling, and others use cornstarch. Some even use tapioca but I never have that in the cupboard. I like to use cornstarch to thicken my fruit pies because it has 2x the power of flour. So you get better thickening with the same amount. Meaning that your pie filling wont taste like flour.
When transferring the berries to the pie crust, make sure NOT to add the liquid from the bottom of the bowl. This extra liquid can also make the crust extra runny. Dont worry your pie will still be super juicy.
You can use fresh or frozen berries for this pie. If using frozen, thaw the berries first then drain the excess water.
