    The only issue with a traditional shepherds pie is that they usually require 10+ ingredients and a lot of prep. No, thank you! Because my family enjoys this dinner recipe so much, I came up with a way to make it super quick and easy with just 6 simple ingredients.

    • ground beef

    • mashed potatoes

    In a large pan, simply brown the ground beef and and drain the excess grease. Add the tomato soup, frozen veggies, seasoning and about half a cup of water to the pan simmer for 5-10 minutes.

    Evenly spread the beef mixture onto the bottom of a greased 9×13 baking dish.

    Spread your mashed potatoes over the top and then sprinkle with 1-2 cups of shredded cheddar cheese.

    Bake in a 400 degree oven for about 30 minutes or until the cheese starts to brown.

    Even though this shepherds pie is incredibly easy to make, its not missing any flavor! I was pleasantly surprised at how good this simple recipe was, in fact, my husband thought it was better than the complicated recipes Ive made in the past.

    For the mashed potatoes, the recipe swaps in olive oil for butter, which means more heart-healthy fats in every bite. The sum total of these swaps is a lighter dish with no shortcuts on flavor.

    How To Make Deviled Eggs:

    • Cut the hard boiled eggs in half, lengthwise.
    • Pop out the yolks and put them in a mixing bowl.
    • Mash the yolks with the back of a fork until no large clumps remain.
    • Add the mayo, mustard, pickle juice, and pepper to the bowl. Mix it together.
    • Transfer the yolk mixture to a plastic food storage bag.
    • Squeeze and roll the bag around in your fingers until the yolk mixture is completely smooth.
    • Cut one corner off of the bag to create a piping bag.

    How Long To Boil Eggs For Deviled Eggs:

    • Fill a large pot 3/4 full of water.
    • Place the pot over high heat until the water comes to a rolling boil. This can take between 7-12 minutes, depending on the size of your pot and how much water you use. To speed things up, I use hot tap water and keep the lid on the pot until the water is boiling.
    • Carefully and gently add the desired amount of large eggs to the boiling water. A mesh strainer works well for gently lowering more than one egg at a time into the hot water.
    • Boil the eggs for 13-14 minutes. Adjust the heat as necessary so that the water doesnt boil over.
    • Remove the pot from the heat. Drain the hot water from the pot while keeping the eggs in the pot. You could use the lid of the pot or a strainer to help keep the eggs in the pot as you drain the hot water.
    • Add cold water to the pot until the eggs are covered in cold water. Pour that water out. Repeat with more cold water.
    • Add 2 cups of ice to the pot. Gently stir the eggs. If the ice melts, add more until the water stays ice cold.
    • Let the eggs rest in the ice cold water for 5 minutes.
    • Remove the eggs from the cold water. Store in the refrigerator for up to a week until you are ready to use them.
    • Gently crack the egg shells and peel the eggs.

  • Make the mashed potatoes: Chop the potato into quarters and place them in a small 1-quart saucepan. Add the milk and garlic and stir. Add a little extra milk if the potatoes are not almost completely covered by the milk. Cook for 15 minutes, until potatoes are tender.
  • Strain the potatoes with a fine-mesh strainer over a medium-sized bowl and reserve the milk mixture.
  • Return the potatoes to the pan and add ¼-cup of the milk mixture. Mash the potatoes with an immersion blender or potato masher and add additional reserved milk as needed until the potatoes are thick and creamy. Stir in butter and salt and set aside.
  • Make the stew: In a 10-inch skillet over medium-high heat, heat the oil and add the chopped onions and cook, stirring occasionally for 2 minutes. Add the garlic and ground lamb and season with salt and Italian seasoning. Cook, stirring occasionally, until lamb is cooked through, about 4 minutes. Stir in the Worcestershire sauce and vegetables.
  • Add the broth and bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for 10 minutes until most of the liquid has evaporated. Remove the pan from the heat and set aside.
  • Heat the oven to 350 degrees F . Grease a 10-ounce ramekin with butter or cooking oil spray. Add the beef mixture to the ramekin.
  • Top with the mashed potatoes. Bake for 20 minutes.
  • Remove from the oven and enjoy immediately.

    • Sauté some chopped onions in olive oil.

    • Add dried parsley, dried thyme, dried rosemary, salt, and pepper.
    • Stir and cook the meat mixture until the meat is browned.
    • Add minced garlic and Worcestershire sauce.
    • Cook the garlic for a minute.
    • Add flour and tomato paste.
    • Add beef broth, frozen mixed peas and carrots, and frozen corn kernels.
    • Simmer the meat gravy until it is thick.
    • Boil some peeled and chopped potatoes until they are soft.
    • Drain the potatoes
    • Add butter, half & half, parmesan cheese, garlic powder, salt, and pepper.
    • Mash the potatoes until smooth.
    • Pour the meat mixture into a casserole dish.

    • Bake until the meat is bubbling and the potatoes are golden.

  • Saute Beef saute ground meat in oil, breaking it up with a spatula. Season with salt and pepper. Add onions and saute 3 minutes until softened then add garlic and stir another minute.
  • Add flour and stir for a minute.
  • Pour in red wine and scrape the bottom to deglaze the pan.
  • Add broth, tomato paste and worcestershire sauce, stirring to combine.
  • Add frozen vegetables, bring to a light boil and season with more salt and pepper to taste. Cover and simmer 10 minutes until sauce is. slightly thickened.

    How To Freeze Healthy Shepherds Pie

    Once the shepherds pie is baked, cool completely and cover loosely with plastic wrap. Place it in the freezer until fairly firm, about two hours. Then, cover tightly with plastic wrap, followed by aluminum foil. Mark the date on the outside and store in the freezer for up to two months.

    When ready to serve, remove the foil and plastic wrap. Use the foil you just removed to loosely cover the pie. Make sure that your casserole dish can go straight from freezer to oven if not, set the casserole in the oven while the oven preheats so that the dish warms slowly.

    Bake the casserole for an hour, or until the pie is hot all the way through. Remove the foil for the last 15 minutes to allow the top to brown.
