    When I make chicken pot pie, I create a roux with butter and flour and then add chicken stock. Although it is fairly thick, after baking it seems watery when serving. Is there a proper ratio for roux to stock or a step in making the filling that I am missing?

    Im not sure what ratio youre using to make your sauce/gravy, but here are the standards:

    For one cup of thin sauce, use 1 TB each of butter and flourFor one cup of medium sauce, use 2 TB each butter and flourFor one cup thick sauce, use 3 TB each of butter and flour

    These ratios hold true whether youre making béchamel , velouté , a brown sauce, or gravy. So if youre using these ratios and youre making something between a medium-bodied and a thick sauce, there are a couple of other possibilities as to why your pot pie is coming out watery.

    Pot pie means different things to different people. Toppings can include pie crust, puff pastry, biscuit dough, or sometimes mashed potatoes. To me, for a chicken pot pie it means a single crust pie, that crust being a biscuit dough. If you want a crustless chicken pot pie, this Chicken Stew recipe is the perfect choice.

    Did you make the filling ahead and cool it? It will seem thicker when cold than it will be heated. Be sure to bring it back to at least room temperature before covering and baking the pie. Now is the time to adjust the thickening if necessary.

To bake, place pie on baking sheet and place in preheated oven at 350°F. Bake a 9 for 90-120 minutes, a 5 for 50-60 minutes and a hand pie for 35-40 minutes. When ready, the crust should be golden brown, and some filling should spill from the venting slits on the top.

    Once baked, cool the Chicken Pot Pie for a minimum of 15 minutes before serving.

    Tips

    • The pie should be able to lift from its tin when the crust is perfectly baked.
    • The savoury pie fillings are all pre-cooked. Only the pastry crust is raw.
    • If you insert a thermometer into the centre of the pie and it reads 165°F, your pie is ready.

    What Kind Of Pie Crust Should Be Used

    My homemade chicken pot pie recipe calls for a homemade or refrigerated pie crust because I find that they are easiest. Our preference is to have a top and bottom crust although I know some people just use a top crust.

    You could also buy frozen pie crust but that is usually just a bottom crust. One of our local grocery stores carries a frozen dough puck which is basically a mound of pie crust in a little bag and available in the frozen section. To me they are like a happy medium between fresh and pre-formed frozen because all you do is thaw the dough, roll it out and place it in the pie pan.

    When I was younger, I used to LOVE a frozen pot pie. You know, the kind that comes in a little red box in the frozen food section? Loved them.

    But as I got older, I realized they were full of extra calories and fat! Yikes! And some preservatives I didnt really want either.

    So, years ago I went searching for a frozen chicken pot pie recipe that I could make at home. I found this one in the 30 Day Gourmet Big Book of Freezer Cooking cookbook and I knew it would be a winner since everything Id ever made from that book we always loved.     Frozen Taken And Bake Instructions

    Frozen NST Fruit Pie Baking Instructions

    1. Pre-heat oven to 375 F. 2. Place FROZEN pie in oven on lined cookie sheet to catch any run over. 3. Cook at 375 degrees for 30 minutes then reduce heat to 350 degrees for 45- 60 more minutes. 4. Pie is done when filling is bubbling around the edges. 5. If crumb starts to brown before filling is done cover loosely with aluminum foil.**Manufactured in a facility that uses wheat, milk, eggs, soy, and tree nuts. No artificial colors or flavors. Keep frozen until use.

    Not So Tiny Chicken or Beef Pot Pie

    To Bake: Preheat oven to 425ºF. Place frozen pie on center rack and bake for 30 minutes with foil on top. Reduce heat to 350. Remove foil and bake 50-60 minutes more, until deep golden brown. The internal temperature should be 165ºF in the center of the pie.Allow to rest for 15-20 minutes before cutting. Leftovers should be chilled in less than 2 hrs, and reheated to 165 before consumption.
