Creamy Keto Peach Pie Filling
This wonderful cream pie filling is really easy to make. When you see that you need to stir the eggs with heavy whipping cream on the stove, it might sound scary, especially for an unexperienced baker. However, that just sounds scary. In reality, its so easy!
Just relax, follow my directions and you will be successful, 100%
For the beginning, you need a large heavy sauce pan. Add heavy whipping cream, eggs and sweetener, beat them well until smooth liquid is formed and put it on a medium high heat. Watch it all the time. When it starts simmering, reduce the heat to medium low and stir for 1-2 minutes. After 2 minutes, it starts to be thicker, but still liquid. Just remove it from the stove and set it aside.
Stirring part is important, as well as reducing the heat, because you dont want the scrambled eggs. You need to get smooth mixture. However, if it starts crumbling, just remove it from the stove and stir more vigorously.
Second step is to make peach puree. Thats easy part, just peal the peaches and blend them in a blender or with immersion mixer until puree is formed. Put the puree in a small sauce pan with 1 TBS of gelatin and bring it to simmer on a medium heat.
Combine it with 1 cup of mascarpone cheese and add it to previously prepared smooth mixture with eggs. Combine everything together, add vanilla and peach extract, stir, and pour on top of baked crust. Leave it to rest in the fridge for few hours.
Before serving put whipped heavy whipping cream on top.
Can I Blind Bake The Keto Pie Crust
Blind baking refers to pre-baking the crust, and this is not required for every recipe but some do. Often, dessert pies are blind baked until the crust is done and cooled before adding the filling.
The answer is, yes you can absolutely blind bake this keto pie crust. When blind baking this crust, I do suggest using pie weights.
If you do not have pie weights, simply line the bottom of the crust with parchment paper or foil and add dry rice or beans. This just weighs down the bottom of the crust so it does not create any bubbles and instead forms a perfect pie crust.

Low Carb Keto Pie Crust

Low carb pumpkin pie, pecan pie, cheesecakes, pudding pie, custard pies, tarts, tartlets, and even empanadas come out perfectly with this as the base.
It’s kind of funny that I chose a rolling pin for my blog header image since I’m not really a fan of rolling out dough. The rolling pin mentioned was my grandmother’s and whenever I use it I think of her.
I do, however, prefer not to use it.
I like to press out dough with my fingers much better than having to roll it out. But the best part of this keto crust is you can use it with either method! And this easy crust recipe is also gluten-free, grain-free, sugar-free, and Trim Healthy Mama friendly.
How To Make Keto Flaky Pie Crust
Ready to impress your friends and family by making a delicious pie crust from scratch?
First, in a large bowl, add all of the dry ingredients: almond flour, coconut flour, low carb sweetener, and salt. Mix everything together well.
Next, add the cold butter chunks. This is where you have the option to use two knives to cut the butter in a criss-cross motion, or use your hand beaters on a low setting to gently begin to mix the butter into the dry ingredients. Y
ou want the mixture to remain quite chunky. We are NOT going for smooth here!
Once the ingredients start to come together, youll want to switch to using your hands for the mixing process. Again, you still want to keep the small butter chunks.
Now, its time to include the wet ingredients. Add in the beaten egg, vanilla, and olive oil. This is where youll switch to the hand beaters until the mixture is well blended. Then youll form the dough into a ball, cover it with saran wrap, and refrigerate the dough for about an hour.
When youre getting close to bake time, preheat the oven to 350°F. Grease your pie pan with your oil of choice .
Once the dough has rested in the refrigerator for the full hour, take it back out and press it into the pie pan. Youll want to try to press it as evenly as possible to cover the bottom and sides of the pie pan. Poke a few holes in the base of the crust with a fork.
Bake for 10-12 minutes or until the edges become golden brown.
Then add your filling of choice and ENJOY!

What Are Pie Weights And How To Use Them
Pie weights are anything heavy that can keep your pie crust from puffing up when youre baking a pie crust without filling.
After making many keto pies, tarts and other low carb desserts, I figured out that I dont need to use pie weights when I follow a partial blind baking method my keto pie crust is so forgiving that I can just press all puffiness down with a spoon or the flat bottom of a cup before pouring in a pie filling and baking it again. However, we absolutely need pie weights when we want to fully bake it. To use them, line the inside of your crust with aluminum foil slightly greased with butter or other keto-friendly cooking oil . Next fill it with dried beans, rice, or special ceramic/metal balls – then bake according to instructions.
Tips For The Best Keto Pie Crust
As you can see from the video, its an incredibly straightforward recipe. But in case you hadnt noticed, my MO when it comes to recipes is accessibility. That means giving you as many options as possible so that you can make my recipes work for your lifestyle. So here we go:
Can this crust be made nut-free?
This is an almond flour pie crust. No, you cant use coconut flour in this recipe, but you can sub in some other options. You can use sunflower seed flour or pumpkin seed flour, or any other nut flour if youre only allergic to almonds. Just understand that your crust will not look the same, as these flours have their own particular color.
Can this crust be made dairy-free?
Yes, feel free to swap in almost any oil you like best. Coconut, avocado, ghee, what have you. I do find that it can brown a little more or a little less, depending on the oil, so keep your eye on it while its in the oven. I also find that it can stick a little more to the pan so you might consider greasing your pie plate.
Can this crust be made ahead?
Because it contains no eggs, it really does well when you make it ahead of time. I have one sitting down in my fridge, ready for a filling I plan to make soon! I do recommend still keeping it in the fridge or freezer, depending on how you plan to keep it. Just wrap it up tightly in plastic wrap, right in the pie plate itself.
Can I make it in a metal pan?

Can You Make Keto Pie Crust Ahead
Yes, definitely! You have 3 options:
- Make the almond flour pie dough ahead. Wrap it in plastic and store in a ball in the fridge or freezer.
- Press the crust into a pie pan. You can store the raw crust in a pie pan in the fridge.
- Pre-bake the crust. Since this almond crust recipe is best pre-baked anyway, you might as well prebake it in advance. Then, cover and store in the fridge, though its fine on the counter after baking for a day or so, too.
Pie Crust To Convert The Hater
For the sake of transparency, Im just gonna say it: I prefer cake over pie. I know, I know. What about pumpkin pie? What about chocolate pie? What about pie?. Ive heard it all. But, no matter what variety, I almost always prefer cake.
That is until I decided to tinker around the kitchen a bit I stumbled upon this slice of perfection. And BAM! Now, Im a pie enthusiast.
The thing that this recipe does right is the texture. The crust is the exact right mix of crumbly and moist, flaky and sturdy, flavorful yet not the star of the show.
It plays perfectly into every variety of pie that Ive made it with.
Want apple pie? This crust complements the apple flavor beautifully. Craving pumpkin? This crust will add just the right amount of texture, without overpowering the spice in the filling. Berry pie? This crust will support the juice, without becoming a soggy mess.
No matter what pie you decide to make, this recipe will not disappoint. Happy baking! Linds x

Should I Use A Sweetener In My Low Carb Pie Crust
Its not something you definitely have to have, but its ok if you dont want to add it. I would recommend you adding it only if you are making a sweet dessert pie. I dont think you need it at all if making a savory pie.
If you choose to add it, you dont need a lot. Only about a¼- cup. It will just give it a little extra sweetness to your crust. Its all about how sweet or not sweet you like things.

Can You Freeze Almond Flour Pie Crust
Yes, almond flour pie crust can be frozen! Just like the storage instructions above, you can freeze a ball of dough, raw crust pressed into a pan, or pre-baked crust. Up to you!
Whether or not you can freeze this paleo crust with filling inside will depend on the specific filling, so I recommend referring to the specific recipe to assess that. Like any crust, it can get soggy upon thawing with certain fillings.
To thaw the crust, simply place it on the counter, or in the fridge overnight.
