This wonderful cream pie filling is really easy to make. When you see that you need to stir the eggs with heavy whipping cream on the stove, it might sound scary, especially for an unexperienced baker. However, that just sounds scary. In reality, its so easy!

Just relax, follow my directions and you will be successful, 100%

For the beginning, you need a large heavy sauce pan. Add heavy whipping cream, eggs and sweetener, beat them well until smooth liquid is formed and put it on a medium high heat. Watch it all the time. When it starts simmering, reduce the heat to medium low and stir for 1-2 minutes. After 2 minutes, it starts to be thicker, but still liquid. Just remove it from the stove and set it aside.

Stirring part is important, as well as reducing the heat, because you dont want the scrambled eggs. You need to get smooth mixture. However, if it starts crumbling, just remove it from the stove and stir more vigorously.

Second step is to make peach puree. Thats easy part, just peal the peaches and blend them in a blender or with immersion mixer until puree is formed. Put the puree in a small sauce pan with 1 TBS of gelatin and bring it to simmer on a medium heat.

Combine it with 1 cup of mascarpone cheese and add it to previously prepared smooth mixture with eggs. Combine everything together, add vanilla and peach extract, stir, and pour on top of baked crust. Leave it to rest in the fridge for few hours.

Before serving put whipped heavy whipping cream on top.

Can I Blind Bake The Keto Pie Crust

Blind baking refers to pre-baking the crust, and this is not required for every recipe but some do. Often, dessert pies are blind baked until the crust is done and cooled before adding the filling.

The answer is, yes you can absolutely blind bake this keto pie crust. When blind baking this crust, I do suggest using pie weights.

If you do not have pie weights, simply line the bottom of the crust with parchment paper or foil and add dry rice or beans. This just weighs down the bottom of the crust so it does not create any bubbles and instead forms a perfect pie crust.

First, in a large bowl, add all of the dry ingredients: almond flour, coconut flour, low carb sweetener, and salt. Mix everything together well.

Next, add the cold butter chunks. This is where you have the option to use two knives to cut the butter in a criss-cross motion, or use your hand beaters on a low setting to gently begin to mix the butter into the dry ingredients. Y

ou want the mixture to remain quite chunky. We are NOT going for smooth here!

Once the ingredients start to come together, youll want to switch to using your hands for the mixing process. Again, you still want to keep the small butter chunks.

Now, its time to include the wet ingredients. Add in the beaten egg, vanilla, and olive oil. This is where youll switch to the hand beaters until the mixture is well blended. Then youll form the dough into a ball, cover it with saran wrap, and refrigerate the dough for about an hour.

When youre getting close to bake time, preheat the oven to 350°F. Grease your pie pan with your oil of choice .

Once the dough has rested in the refrigerator for the full hour, take it back out and press it into the pie pan. Youll want to try to press it as evenly as possible to cover the bottom and sides of the pie pan. Poke a few holes in the base of the crust with a fork.

Bake for 10-12 minutes or until the edges become golden brown.

After making many keto pies, tarts and other low carb desserts, I figured out that I dont need to use pie weights when I follow a partial blind baking method my keto pie crust is so forgiving that I can just press all puffiness down with a spoon or the flat bottom of a cup before pouring in a pie filling and baking it again. However, we absolutely need pie weights when we want to fully bake it. To use them, line the inside of your crust with aluminum foil slightly greased with butter or other keto-friendly cooking oil . Next fill it with dried beans, rice, or special ceramic/metal balls – then bake according to instructions.

Can this crust be made dairy-free?

Yes, feel free to swap in almost any oil you like best. Coconut, avocado, ghee, what have you. I do find that it can brown a little more or a little less, depending on the oil, so keep your eye on it while its in the oven. I also find that it can stick a little more to the pan so you might consider greasing your pie plate.

Can this crust be made ahead?

Because it contains no eggs, it really does well when you make it ahead of time. I have one sitting down in my fridge, ready for a filling I plan to make soon! I do recommend still keeping it in the fridge or freezer, depending on how you plan to keep it. Just wrap it up tightly in plastic wrap, right in the pie plate itself.

Im going to teach you how to make the BEST keto chocolate pie ever and its all made with keto-approved ingredients. I say this because Ive taste-tested a LOT of keto pies over the years and Ive taken the good parts and applied it to my own recipe. Today, Im finally sharing the recipe!

  • Combine the gelatin and water in a small saucepan. Melt it over low heat, stirring constantly until the gelatin is completely dissolved.
