How to make a French Apple Pie – Recipe by Heart & Food

Grocery Bags/ Regular Paper You can easily find parchment paper in the baking section of a supermarket, along with its substitutes such as aluminum foil. You can always buy more parchment paper than you are likely to use, especially during festival season, when you know you will be doing a lot of cooking and baking.

How I Tested The Apple Pies

I bought as many frozen apple pies as I could find in a few different grocery stores. Then, I baked the pies in batches, according to the directions on the boxes: Several had identical instructions, while others needed a bit more coddling. Because there was so much frozen pie being baked at once, I rotated them around and found that some needed to be left in the oven a bit longer to reach bubbly and golden-brown perfection.

All of the boxes called for letting the pies cool completely. So I let them cool before I sliced them up. To cleanse the palate between bites, I reached for a spoonful of vanilla ice cream. Because ice cream is pretty sweet, it helped identify some of the pies that had a little more tartness in contrast. It also helped me and my friends pick a winner, as we sat eating pies picnic-style on a tablecloth spread on my living room floor.

Most of the pies we tasted were good. There was one clear winner, though. Not only did it stand out as the best of the bunch, but it also tasted the closest to homemade.

Pie Crust For The French Apple Pie

Make the pie crust first. This recipe needs to be refrigerated for at least an hour. Make it the day before if you like. This makes enough for two pies or one double-crust pie. You could half it for this recipe.

  • 1 cup of unsalted butter,
  • 1/4 cup of ice water,

Directions:

Measure the flour, sugar, and salt into the food processor bowl. Pulse a couple of times to combine the two. Then, cut the butter into pieces and add to the mixture. Pour the water into the feed tube and process until the mixture comes together and the dough almost cleans the side of the bowl. If needed, add more water a tablespoon at a time.

Dont process for more than 30 seconds!

Divide the dough in half and place each half on a piece of plastic wrap. Shape the dough into a ball. Then, fold the plastic wrap over the dough, flatten, and shape into a disc. Refrigerate these for at least one hour. This can also be made the day before the pie is made.

I like to use granny smith because they dont break down when baked & the tart flavor is offset by the added sugar in the recipe. You can also use golden delicious, crisps pink, honeycrisp, gala, fiji or McIntosh red. The sweeter apple varities tend to be too soft, which are better for recipes like homemade applesauce instead.

Spiced Apple Pie French Toast Bake

You can use just about any variety of apples to make this Dutch Apple Pie recipe, but I do have a few favorites.

Granny smith and golden delicious have a tartness that holds up wonderfully to the sweet brown sugar and cinnamon. I like to use a combination of Granny Smith and Golden Delicious apples in my apple pies!

Braeburn, Honeycrisp and Fuji apples are other great choices for pie baking.

How To Make Apple Crumble Pie

To assemble the Dutch Apple Pie:

STEP 1. Place the pie crust into a deep dish pie plate.

STEP 2. Spoon the filling over the pie crust, distributing evenly.

STEP 3. Sprinkle the crumble topping across the filling.

STEP 4. Cover the edges of the crust with foil and bake for 45 minutes. Remove the foil and bake for another 25 minutes or until the crust is golden brown and the filling is bubbly.

What Is The Difference Between The Types Of Apple Pie

It is really interesting how different a pie can be from region to region. You will find that a Dutch apple pie has a streusel-like topping, which is really delicious & I may be making one of those here soon. This French apple pie topping is more like sugary sweet bread crumbs since it is made with flour & brown sugar combined with butter.

However, a German apple pie doesnt have any topping nor a pastry top & the filling includes heavy cream with is absolutely heavenly. An English apple pie has the apples layered into a dome shape to allow for downward shrinkage as they bake & it is also topped with shortcrust pastry or additional crust layer.

But the scandinavian roots that run though the hubs side of the family have them all favoring a Swedish style apple pie. Those are more like an apple crumble, rather than a traditional pie. Often, breadcrumbs or rolled oats are used instead of flour & it is usually flavored with cinnamon & served with vanilla custard or ice cream.

There is also a very popular version called äppelkaka , which differs from pie altogether. It is a sponge cake baked with fresh apple pieces in it.

How To Make A French Apple Tart

Begin by making the pastry. In a food processor fitted with the steel blade, combine the flour, salt and sugar.

Pulse briefly to combine, then add the pieces of cold butter.

Process just until the butter is the size of peas, about 5 seconds.

Sprinkle the ice water over the mixture and process just until moistened and very crumbly, about 5 seconds.

Transfer the dough to a lightly floured work surface.

Knead a few times, just until it comes together into a cohesive ball.

Pat the dough into a disk.

Flour your work surface again and dust the dough with flour, as well. Using a rolling pin, roll into a circle 8 to 10 inches in diameter, turning and adding more flour as necessary so the dough doesnt stick. Transfer the dough to a parchment-lined baking sheet and refrigerate while you prepare the filling .

To make the filling: Peel, core, and cut the apples into 1/8-inch-thick slices and place in a large bowl. Add the sugar, vanilla, cinnamon, melted butter, and salt.

Toss to combine.

Take the dough from the fridge and slide the parchment paper onto the countertop. Roll the dough, directly on the parchment paper, into a 14-inch circle about 1/8 inch thick. Its fine if the edges are a little ragged.

Place the parchment and dough back on the baking sheet the pastry should curve up the lip of the pan.

Sprinkle 1 tablespoon of flour evenly over the pastry.

Using a pastry brush, brush the pleated dough evenly with the beaten egg.
