For the full list of ingredients and measurements please see the recipe card at the end of the post.
- Devils food or dark chocolate fudge cake mix* | I do not recommend using an all natural or the Ghirardelli cake mixes for this recipe, as the volume is different and will yield a very dense cake.
- Instant chocolate pudding mix | used Godiva Dark or Milk Chocolate, available with regular pudding mixes
- Sour Cream | I use full fat sour cream, and have also substituted with whole milk Greek yogurt
- Vanilla Extract | Love using my homemade vanilla extract.
- Eggs | I use large eggs in all of my baking, room temperature is best
- Milk | Whole milk is what I used, but may substitute plant based milk, water, or buttermilk
- Vegetable Oil | I love using heart healthy Avocado oil
- Chocolate chips | try mini chocolate chips, chocolate chunks, semi-sweet, milk chocolate, white chocolate, dark chocolate

Everything Everything + Vanilla Bundt Cake
December 30, 2017 by Megan
Though its not my typical choice, Im no stranger to YA fiction. I like to pick them up for a quick read, and often – as with John Greens Turtles All the Way Down – they bring difficult topics to the forefront and make them relatable, which I always appreciate. My latest YA read, Nicola Yoons Everything, Everything, tells the story of Maddy, a girl who lives in a bubble, and was captivating from the beginning.
Like many YA novels, it centers around a love story. Maddy watches from her window as new neighbors move in – one of them, Olly, a distractingly handsome teenage boy. That part of the novel was pretty predictable, in my opinion, but well-done and entertaining. Aside from the consequences of Maddys precarious health problem, it is with Olly – and through the window – that this novel touches on some darker real-life situations.
What made the novel worth it for me was the twist that came about two-thirds of the way through. I definitely did not see it coming, but Im glad that it did. I wont spoil it for those of you that havent read it yet, but I thought it added some welcome heft to the story.
One of the funnier series of events comes early on in the book, when Ollys mom sends him over to Maddys house with what he describes as an indestructible bundt cake, which comes to be known as The Bundt. Olly and Maddy bond over this seemingly rock-hard inedible cake, and I found the whole thing endearing.
Nothing Bundt Cake Copycat Classic Vanilla Recipe
This Nothing Bundt Cakes copycat recipe is a take on their classic vanilla bundt cake — except with the addition of chocolate chips!
This past week, I craved a cake I’ve only had a couple of times. Isn’t that bizarre? Parents will sometimes drop off goodies to the main office randomly for staff to munch on — and when they have brought a Nothing Bundt Cakes bundt cake, my day is absolutely made. The bundt cakes are so moist, fluffy, and flavorful…I just don’t know what’s not to like.
Have you had one?
Their business model is ingenious and clearly they have a niche. There’s only a handful of flavors done well. I can’t say that I’ve had all of them, but the ones I have had are so good.

Bundt cakes refer to cakes that have been baked in a special donut-shaped pan. The pans often have unique patterns within the round shape and can create everything from simple circles to beautiful terraced creations. This type of cake has its origins in Europe, where it was likely inspired by the Gugelhupf cake of Central Europe .
While the Gugelhupf is a yeast-based cake often cooked with raisins, bundt cakes in the United States are not linked to any particular recipe. They rose to popularity in the U.S. in the 1960s and have remained a popular cake for parties and formal gatherings.
Nothing Bundt Cakes was founded in 1997 by Dena Tripp and Debbie Shwetz, two women who were known among friends for their delicious bundt cakes. They now have locations all over the country and continue to be a fast-growing franchise. Their cakes are known for being flavorful, moist, and delicious. However, not every flavor can be a winner. Pineapple Upside Down Cake
Fun and retro, pineapple upside down cake features colorful pineapple rings and Maraschino cherries. When baked in the oven, the fruits form a sticky syrup that coats the cake. In Nothing Bundt Cakes’ version, the caramelized fruits soak into the yellow sponge cake, which then gets a smear of creamy frosting. Another raved about the cake’s texture, saying “The flavor is amazing and the cake is so moist!” Like an island getaway, minus the plane ticket!

How To Get A Cake Out Of A Bundt Pan
Taste of Home
The trickiest part of making a Bundt cake is getting the cake out of the pan in one piece. The best way to ensure your dessert comes out looking as pretty as your pans design is to learn how to grease a Bundt pan.
To grease the pan well, coat the inside with a layer of shortening. You can wipe it on with a clean dishcloth or paper towel. If you like, you can also melt the shortening and brush it on the inside of the pan with a pastry brush. Once you have all the nooks and crannies greased, dust the interior with flour, then tap out any excess. Your pan is then ready to fill.
When the cake is fully baked, remove it from the oven and place on a wire rack. Dont flip it yet! Let the cake cool for 10 minutes. Then you can invert it.
Peek under the pan and see if the cake has loosened. If it hasnt, dont worry. Youll just have to learn how to get a cake out of a Bundt pan with a few tricks from our Test Kitchen. Start by laying a clean kitchen towel on the counter and tapping the pan on top. A few firm taps on each side can help dislodge any bits of batter that might be keeping the cake from budging.
If this doesnt work, be patient! Leave the pan inverted and revisit in another 10 minutes. As the cake cools, it will contract and likely come free from the pan on its own.
