Instructions For Strawberry Buttercream

  • Cream the softened butter until smooth.
  • Gradually add the powdered sugar and pureed strawberries beating at medium speed until blended.
  • Continue mixing on medium speed another 3 to 4 minutes, scraping the sides of the bowl occasionally
  • Slow down the mixer to very slow and mixing another 1 to 2 minutes. This will eliminate air pockets. The buttercream will become very smooth.
  • If the buttercream is too thin add more powdered sugar, if too thick add more puree or a bit of milk.
  • Makes 4 to 4 ½ cups

This cake starts with fresh strawberry cake layers thats filled with strawberry buttercream and rich chocolate ganache. Then its completed with more strawberry buttercream, chocolate ganache dripping down the sides of the cake, and chocolate-covered strawberries on top!

The strawberry cake is made with fresh strawberries, but you can also use frozen strawberries that are thawed. These frozen berries are picked at their peak of ripeness, so they still make for a delicious cake.

The strawberries are pureed with strawberry jam and buttermilk, so it makes the best strawberry flavor. I also added a few drops of super red gel food coloring just to make sure the cake stayed pink when it baked otherwise, it bakes a dull beige color losing its bright red.

The buttercream is made with a strawberry gel that packs a punch of berry flavor. The strawberries are cooked down to a thick gelatin-like consistency, so it doesnt change the texture of the buttercream. It allows the buttercream to stay thick!

Then the chocolate ganache is so rich and smooth and perfect for dripping down the sides of the cake!

Just combine all your wet ingredients except the coffee in one bowl and then in another bowl, combine the dry ingredients .   • In the stand mixer bowl fitted with the paddle attachment, beat the butter until light and fluffy, about 2 minutes.
  • Turn the mixer to low and add the cold strawberry gel, salt, and vanilla.
  • Next, gradually add powdered sugar, followed by the cream. Mix on medium-high speed for about 5 minutes, until light and fluffy. Scrape down the sides of the bowl.
  • Before using turn the mixer on low and mix for 2 minutes to push out any air bubbles or use a rubber spatula to push out the air bubbles. .

    For The Strawberry Cake:

    Add 10 tablespoon of softened, unsalted butter and 1 ½ cups of granulated sugar to a large bowl. Cream the butter and sugar until light and fluffy.

    Next add in 4 egg whites and 2 teaspoon of vanilla and combine. Then mix in the cooled strawberry reduction.

    In a separate small bowl whisk together 2 ¼ cups of all purpose flour, ¼ teaspoon of baking soda, 1 ½ teaspoon of baking powder, ½ teaspoon of salt and ¼ cup of ground freeze dried strawberries. .

    Alternate adding the dry ingredients and 1 cup of buttermilk to the egg/sugar/butter/strawberry mixture until all is combined.

    Lastly, add a little pink food coloring, just enough to brighten up the batter a bit. It will already have a nice pink hue from the strawberries, but the food coloring will just enhance it a bit.

    Evenly divide the cake batter between three 6″ cake pans. Bake the cakes at 350 degrees for 34-36 minutes, or until a toothpick comes out clean from the centers/ the tops bounce back when they are lightly pressed. Let the cakes cool for a few minutes in the pans then transfer them to a cooling rack to completely cool.

    This frosting could be a dessert on its own! Its so, so, so silky and creamy and the white chocolate and strawberry make such a wonderful flavour combo, I cant get enough!

    As I mentioned above, this is adapted from my strawberry buttercream recipe. However, instead of using my homemade strawberry sauce, I used puréed strawberries that I cooked down and cooled. I didnt strain the purée because I wanted to have those beautiful strawberry seed specks throughout the frosting.

    With the strawberry purée, well also be adding melted pure white chocolate! No chocolate chips allowed, use a good-quality white chocolate bar and chop it up, melt it, let it cool, then mix it into the frosting!

    My strawberry frostings never pink enough for me, so I always add a little drop of pink food colouring. This is optional, so if you like the original pale pink colour, leave it out.

    I made this cake yesterday to bring to a party being thrown by one of my daughters classmates in celebration of their graduation from elementary school to junior high.

    It was great fun watching a bunch of 12 year olds dig into the chocolate dipped strawberries which were devoured before the cake was even cut.

    50% cocoa chips.

    I like to use dark chocolate chips in my ganache dip for the strawberries but you can use any kind you like. Ive used my standard chocolate scratch cake here and added an easy recipe for the frosting challenged.

    Fresh ripe perfect strawberries.

    This frosting is quite easy to make, starting with a base of silky melted chocolate.

    When youre off to a start like that, how bad can the finish be?

    I like to dip my strawberries in chocolate ganache which is similar to making chocolate truffles. I do this instead of plain melted chocolate because the cream in the ganache softens the chocolate.

    That makes the chocolate melt in your mouth faster and meld with the flavour of the juicy ripe strawberries even better.

    How To Make Chocolate Ganache

    Ganache is very simple to make as its only two ingredients: chocolate and heavy whipping cream. In a small bowl, heat the heavy whipping cream. Its best to heat the cream and not the chocolate so you cant burn it. You can microwave the cream for 30 seconds or you can heat the cream over the stove and take it off the heat once it starts to simmer. Add in chocolate chips and stir until smooth.

    First, the cake layers will be so much easier to frost if they are cold. Stick them in the freezer while you make the frosting.

    Use 1 cup of frosting in each cake layer. Use an offset spatula to smooth the frosting down.

    To avoid crumbs getting into the frosting, apply a very light layer of frosting over the cake. Then, freeze for 15 minutes to lock the crumbs in.

    Then, you can frost the rest of the cake.

    Heat ½ cup of heavy cream just until about boiling. Add ½ cup of chopped dark chocolate or dark chocolate chips to a bowl and pour the cream over. Let sit for a few minutes to melt the chocolate and then stir to combine. Let the ganache cool on the counter for around 15 minutes to allow it to thicken before using in/on the cake.
