Kristie and Bob Thomas always knew their frozen Key lime pie on a stick was good. But good enough to be featured in the current issue of âEvery Day with Rachael Rayâ?
A few months ago, the Thomases, owners of Key Largo Chocolates, received an email from editors of Rayâs magazine asking if theyâd send a few of the dark chocolate dipped treats to their New York offices. It seems someone had suggested them for an upcoming feature.
Kristie Thomas didnât think twice about getting the national exposure. But not before she upgraded her recipe.
Frozen Key lime pie on a stick was among the first things the Thomases made when they opened for business five years ago at Mile Marker 100.5 in Key Largo. But chocolatier Kristie got too busy making everything from truffles to frozen yogurt that they contracted with a DeLand pie maker. Once the Ray people came calling, she stepped back from chocolate making to polish her original recipe. The new treats feature her signature Key lime pie that is coated in dark chocolate from Barry Callebaut chocolate in Chicago.
The $6 chocolate dipped pie slices are included in a story that features the best mail order treats from each of the 50 states. The pie leans more tart than sweet. The dark chocolate isnât too thin or too thick. Theyâre definitely worthy of Rachael Ray.
âOther people have done them,â says Kristie. âBut my pie and everything is hands down better. Itâs very labor intensive and we canât make enough of these.â

So for chocolate dipped key lime pie you need to start with a delicious key lime pie. I highly recommend this one. It’s super simple, and freezes wonderfully. The filling is sweet, creamy & tart essential for a traditional key lime pie. The graham cracker crust is thick and gives great texture to compliment the filling and goes well with chocolate.
The one thing about this recipe is that you have to wait between chilling the pie after it’s baked and then, freezing the slices. You definitely want to make sure the pie has had the right amount of time to chill and then you really want to slices to be frozen. The last thing you want is for the key lime pie slices to be falling apart when you dip them in chocolate. It’s worth the wait but it’s the one thing I wanted to mention before you get started.

Im from Minnesota, so food on a stick is not new to me. You can find basically anything on a stick at the Minnesota State Fair from a standard corn dog to more truly bizarre options. This frozen Key lime pie on a stick, however, is something Ive never seen before. It makes total sense its like a pie, in popsicle form, covered in chocolate.

Can I Use Bottled Key Lime Juice
Yes. You will find it in the fruit juice aisle next to the lemon juice or sometimes in the canned fruit section of your grocery store. Since key limes are not available all year round, this is a good option when you are craving key lime pie in the winter.
If you canât find bottled key lime juice, reconstituted lime juice will work in a pinch.

You know youre a food blogger when you decide you want to make Key Lime Pie bars and you already have everything you need. Labor Day is the official end of summer.
It makes me so sad. I embrace the beach days with no schedules. I thought I would squeeze one more summer treat in before I bring on the soups and casseroles.
Were an hour and a half from the Florida Keys and take advantage of the tropical atmosphere as often as we can.
At certain gas stations along the long road down to the keys they sell slices of key lime pie, frozen, and dipped in Belgian chocolate. They are one of my favorite treats ever.
I realize that not everyone is a fan of the tart key lime pie but if you are, you will appreciate this dessert as well as these Coconut Lime Swig Cookies.
I used this key lime juice. They sell it by the lemon and regular lime juice.
You could definitely squeeze it yourself with fresh key limes but theyre not available in all areas. You could even use regular limes but it wont be quite as potent.
Start by making your key lime pies. I started with my favorite graham cracker crust and then filled it with the easiest key lime pie filling ever only 3 ingredients. I bake mine for 15 minutes and they were perfect.
Using cupcake tins is the perfect way to make small versions of the key lime pie. Im sure you could make an actual pie and then slice it but that seemed way too involved. You could probably get away with not using paper liners but I thought it made it easier.

How To Make Chocolate Dipped Key Lime Pie
So you’ve baked your key lime pie. It’s been chilling in the fridge and is ready to be sliced. Before you start slicing, line a cookie sheet with parchment paper. This way you can evenly space out the slices while they freeze. And, you can return them right to the cookie sheet once they’ve been dipped.
Slice the pie like you normally would. Place the slices on the cookie sheet and cover with plastic wrap. Place the cookie sheet in the freezer for 4 to 6 hours or up to overnight. When you’re ready to dip the slices, take then out of the freezer and stick a popsicle stick through the crust side of the slice and return the slices back to the freezer for 30 minutes.
Prepare the chocolate: For the recipe I highly recommend dark chocolate it compliments the tart of the key lime pie filling so well but you can use whatever you have. I think milk chocolate would be great with this too. Melt the chocolate in a glass, microwave safe bowl until it is silky smooth but before not to over do it – chocolate can burn easily. Once the chocolate is completely melted it’s time to dip!

Steves Authentic Key Lime Pies originated in a tiny hole in the wall on the industrial Pier 41 in Red Hook. For better or for worse, its still there. While their headquarters may be a bit out of the way for some folks, if you frequent block parties, outdoor markets, or certain retail locations in Manhattan and Brooklyn, you might be lucky enough to come across these famous treats. The Swingle, however, is maddeningly inaccessible, although I believe this could be part of its magic.
The Key Lime Pies are tart and crisp and never soggy. The crust is crushed graham cracker which perfectly counter-balances the spicy tartness of the filling. These hand-held delights are prefect for an afternoon snack or to finish off a meal.
