Yes, you can use a large , oven-proof pan with a well-fitting lid.As the sides aren’t as thick, and the lid isn’t as heavy as a dutch oven, you will get slightly different results.I’ve done a comparison image below. The middle column of images shows bread baked in a regular pan.

  • You can see it didn’t rise quite as high
  • The seams in the bread didn’t open out quite as much
  • The crumb texture is a little more dense.

This is likely because more steam was able to escape from the pan, so the crust of the bread set a little more quickly.It still tasted great, just slightly less fluffy.

The essentials for good artisan bread arent a wood fire and European bricks. Good artisan bread requires the following.

Radiant heat rather than convection. While convection is great for evenly browned pastry, radiant heat results in the color gradations and variations that are a part of what give artisan bread its visual appeal and complex flavors.

Baking directly on the hearth so heat transfers rapidly, helping loaves bake quickly and thoroughly. Bricks arent absolutely necessary. In addition, stone hearth has a romantic ring to it, but most often this really means a hearth of heat-tolerant cement thats specially made for bread ovens.

Adequate thermal mass to keep the oven temperature from dropping too much when bread is loaded into the oven. Insufficient oven heat can give a pale crust, gummy insides, and less volume.

Once the gluten free artisan bread rolls are puffy looking and 35-40% bigger than their original size preheat the oven to 475F. It will take at least 30 minutes for the oven to fully preheat. Arrange one oven rack in the middle of the oven and the second one the closest to the bottom of the oven

When the oven is fully preheated, bring water to boil in an oven-safe pot or pan. I like to use a cast iron pan for this. The boiling water creates steam in the oven which will help with the crust of the bread rolls.

While the water comes to a boil, score each artisan bread roll with a razor blade or a serrated knife somewhere between ¼ and ½ deep. Brush each bun with the cornstarch glaze .

Once the water is at a boil, CAREFULLY transfer the pot/pan with the boiling water to the oven placing it on the bottom rack.

Place the bread buns on the middle rack and bake at 475F for 10 minutes. After 10 minutes CAREFULLY remove the pan holding the water and reduce the oven temperature to 450F.

Finish baking the gluten-free artisan bread rolls at 450F for 12-15 minutes until golden brown and they have an internal temperature of at least 205F.

Remove the gluten free dinner rolls from the oven and allow them to cool on the baking pan for a few minutes before transferring them to a wire rack to cool completely.

    How To Make Easy Homemade Bread:

    1. In a large bowl, combine warm water and salt. Sprinkle yeast over the top and let it sit 2 min, then stir.

    2. Measure out exactly 3 1/4 cups of flour and add flour to the bowl. Stir together with a spatula just until it together . Cover and let rise at room temperature 2 hours .

    3. Line a cutting board with parchment paper and generously dust with flour. Turn dough out onto the floured surface.

    4. With well-floured hands, fold the dough in half, then fold in half again. Dust dough generously with flour, lift it up and form a ball in your hands. Sprinkle the parchment paper flour or cornmeal, extending 1-inch past the border of the dough since it will expand.Place dough over the flour, seam side down, and let it rise at room temp uncovered for 40 minutes.

    5. Meanwhile, prepare your oven: place one rack in the middle for the bread and one rack on the bottom for the water pan. Place a rimless cookie sheet on the center rack. Preheat the oven and cookie sheet to 450 F. Also heat 1 cup water.

    6. Just before baking, score the top of the bread 3 times. Place a metal or cast iron dish* on the bottom rack with 1 cup hot water . Slide dough with the parchment paper onto the hot cookie sheet and bake at 450 F for 25-28 min or until golden brown.

    *CAUTION: DO NOT USE A GLASS DISH to hold water or it may explode when you add water. Also, be careful not to splash water on a glass oven door to prevent shattering from strong temperature change.

    To Make Artisan Bread In A Dutch Oven

    Instead of baking two loaves of Artisan Bread, you can easily make this dough into one boule.

    After the first rise turn the dough out onto a lightly floured work surface. Fold the dough a few times using a bench scraper or lightly floured hands. Pull the sides up and pinch together in the center forming a round loaf. Turn the dough over, seam-side-down, onto a large sheet of parchment paper.

    Ease the parchment and dough into a large cold Dutch oven. Cover with plastic wrap and let rise at room temperature for 30 to 45 minutes.

    Remove and discard the plastic wrap. Score the loaf then cover the Dutch oven with a tight fitting lid. Place in a cold oven.

    Immediately turn the oven to 450 degrees F. After 30 minutes remove the lid and continue baking until the bread is golden brown, about 30 minutes more.

    The Dutch oven traps moisture inside which takes the place of the water pan in the bottom of the oven, noted above. This humid environment gives the loaf a nice open crumb and crisp crust.

    We enjoy making this bread both ways but if I had to pick a favorite, I think it would be making two loaves for more crusty surface.

    Theres also a third way to bake this bread.

    Carefully place the fully risen, scored dough round into a preheated Dutch oven and bake in a hot oven for 30 minutes. Remove the lid and bake for an additional 15 minutes or until golden brown.

    For some reason I find the cold oven method works best for me.
