  • White whole wheat flour looks and taste more like those made with all-purpose flour.

Can I substitute whole wheat flour for white flour in pie crust? Absolutely! I usually replace whole wheat flour with all-purpose flour in a 1:1 ratio. But keep in mind that all flours have different densities . As a result, you may need to add more water if the dough is too dry, or more flour is its too wet and sticky. In the end, you aim for a smooth, compact ball of dough.

Use Cold Butter Or Oil

In order to keep your crust from becoming tough, you need to use cold fat. This means chilling your butter, oil, or shortening. This way it will be easier to crumble into the flour, creating a perfectly shaggy dough.

This creates that flakiness that we look for in a good pie crust. If the fat is too warm, it will create too firm a dough that will be dense and hard.

This really is an easy recipe that even the kids can help with. All you need are a few ingredients, an ovenproof pie dish, and clean hands for kneading.

Begin by preheating the oven to 375°F.

Next, youll need to make a little oat flour. You can always purchase oat flour, but why do that when its so easy to make your own in about 2-minutes?

Simply place the whole oats in your blender and blend or pulse them until they are ground into powdery flour, approximately 1-minute or less.

If youre using walnuts, add them to the flour and pulse briefly to break up the nuts. The walnuts are completely optional.

My favorite blender is the Vitamix 5200 because it is so powerful, it can blend anything. I actually own two of them because I use them in the Food for Life classes I teach for the Physicians Committee for Responsible Medicine.

In a large mixing bowl, add the fresh oat flour, cocoa powder, baking powder, salt, and brown sugar and whisk together well. This is not a very sweet crust, so if you like things sweeter, youll need to add more sugar.

In a smaller bowl, combine the applesauce and vanilla. Then combine the dry ingredients with the wet ingredients in the larger bowl.

This is going to be a very thick batter, so youll need to roll up your sleeves and knead the dough a bit with your hands. It will form into clumps, so keep kneading.

When I first started reading about pie crust techniques, like, a year ago, I was super intimidated about blind baking it. That just seemed like a complicated thing that bakers do.

But its actually really simple and easy.

All you really need to do is bake the crust for about 10-20 minutes in a 375 degree Fahrenheit oven, but heres a few tips for the best pie crust:

  • In addition to the holes in the crust, use pie weights or dried beans in a layer of parchment paper for the first half of the baking process. Then take them out and bake the bottom for the rest of it.
  • Add warm filling to your warm crust and bake it right away. Turn down the oven to the heat you need for the pie but dont let too much time pass in between the process.
  • You only need to FULLY blind bake a pie crust if youre making a no-bake pie. Thats because youd need it to hold up to a potentially wet filling, and also just because raw flour is unsafe to eat.
  • Partial blind baking is what Im recommending here and this is what you do if your filling requires a shorter baking time, is wet like a custard or pumpkin pie, or if you want it extra crispy so it can hold up to something like an apple pie filling .

Structure notes: Unrolls easily and presses into the pie pan easily. A little cracking at the very end of the unrolling. Bakes up well without cracking.

OKAY. Similar enough to the Pillsbury brand, not quite as flavorful. Edible, nothing special. Uses preservatives and food dyes.

How Does It Taste

Though I have strong opinions about pizza and its crust content, I also love eating pizza, maybe too much, and realized perhaps this was a way to have it more often without feeling guilty about it. So I relented and took that first steper, biteinto experimental pizza crust. Whole Foods is my jam, so I thought I would give its own brand of 365 Cauliflower Pizza Crust a try. Its gluten-free, has half the sugar of traditional crusts, and is packed with vitamin C. My pizza oven was ready to be fired up.

So when I pulled this pie crust out of its packaging, I was surprised to find it softer than I had expected, something I took to be a good sign. I had this idea of cauliflower crusts having the crunchiness of hardtack. The instructions were simple: remove from packaging, bake for 6-8 minutes, voila. So I lightly lathered its surface with tomato sauce, and proceeded to top it with a proportionate amount of mozzarella, a sprinkle of parmesan, and some basil, and let it do its thing.

I tossed the za in at 425 degrees for a good 6-8 minutes then pulled it out. Slice by slice, I was in awe of its pliancy. In one bite, then two, then six, cauliflower pizza crust gained one serious new fan.

How To Measure Almond Flour

Even though this crust is seriously easy, we are still baking. For a successful pie crust, it’s important to measure accurately and pay attention as you move through the steps.

For the easiest prep and most consistent results every time, I highly recommend using a kitchen scale. I use this affordable Escali digital scale. It’s currently $25 on Amazon, and there are plenty of other inexpensive options out there, too.

If you don’t have a scale, thankfully, measuring almond flour is different than measuring other flours. So it’s pretty easy to get an accurate amount even without a scale. Instead of whisking the flour and then spooning it into the measuring cup, like you would with all-purpose flour, measure almond flour like you would brown sugar. Scoop it up, and then lightly pack it into the measuring cup.

How To Make A Gluten

I have tested making this crust two different ways.

  • The first way I tried was the traditional method of cutting the butter into the flour mixture and then adding the wet ingredients, mixing it and forming it into a ball.
  • The second way I tried was using a stand-up mixer. I found that by adding all of the ingredients to my stand up mixer and using the paddle attachment it makes the pie dough smoother and easier to work with.
  • If you dont have a stand-up mixer or hand mixer you can still make this crust the traditional way.

    You will be amazed at how easy it is to make your own gluten-free pie crust at home!
