You can see from the ratings and comments on this post over the years that it is a very popular and delicious recipe! Sometimes people will share their own variations and that often includes adding potatoes.

Since the original recipe never included potatoes, I left them out of my modified version. I think its just a matter of preference. If you want to include diced potatoes, go for it! Id probably add one to two cups. I would also suggest using frozen potatoes such as diced hash brown potatoes that can be found in the frozen section of the grocery store.

Potatoes can be kind of finicky when it comes to freezing them and its best to use a parboiled potato. Since the other vegetables in this chicken pot pie recipe are also sautéed, stirring in frozen potatoes just before filling the pie crust would work best.

Rolling Out The Crust

Roll out the pie crust first and place it in the refrigerator before making the filling. This process gives the butter in the dough plenty of time to firm up so that the warm filling doesnt cause it to melt before baking. This recipe uses a double-crust pie to encase the chicken mixture.

Roll out the bottom and top crusts to ¼-inch thick. This provides a sturdy base and cover. Use a 9-inch pie dish to lay one portion of the dough inside, then trim off the excess. Place the top crust on a baking sheet, it will be further shaped later.

Roasted Vegetables Vs Steamed Or Boiled Vegetables

My original method for this homemade chicken pot pie called for steaming the potatoes and butternut squash. Unlike boiling, steaming helps the vegetables retain their shape and prevents them from getting mushy. However, it also requires digging out and cleaning my steamer basket and an extra pan.

Instead I now roast the vegetables in the oven alongside the chicken and the bacon. The potatoes, butternut squash, and chicken all go in for about the same amount of time. While you can use a baking sheet for this step, I prefer to place the chicken and veggies in a five quart oven safe stainless steel saute pan. With the pan drippings left behind, the same pan can be used to make a richer, more flavorful gravy.

I separate the bacon so that the chicken and vegetables roast, instead of frying in bacon grease.

Increase The Temperature To 375 F

To get that beautiful crispy finish, you need to increase the temperature a bit. Now, set the oven to 375 degrees F and let the pie bake for an additional 10 minutes.

During these 10 minutes, keep an eye on the pie so that the crust does not accidentally start to burn.

If you notice that the fine brown gold color has appeared earlier, take the pie out of the oven even before the 10 minutes have elapsed. Now your pie is fully heated and ready to be served.

How to Bake Chicken Pot Pie

Our homemade chicken pot pie calls for a double crust, which means crust on both the bottom and top. My recipe for Millies Perfect Pie Crust hasnt failed me yet and includes instructions for making it by hand, with a stand mixer, or with a food processor. It comes together quickly, but its best to make the crust first and let it chill while you make the filling.

My post on pie crust should cover all of your questions about making homemade pie crust, including tips to rolling it out evenly without tearing. I like to fold both edges inward to create a more rustic looking edge on my chicken pot pie. Alternatively, you can crimp them with a fork or pinch them with your fingers if you prefer.

While not necessary, Im partial to decorating the top crust with leaf shaped cutouts, done freehand with a knife. If you dont have a steady hand, a cookie cutter works too, or you can skip them all together. The egg wash gives you the shiny, golden finish so dont skip it! Whats more important is to cut four one inch slits in the top crust to allow the pie to vent. Do this after the egg wash to prevent tearing or resealing of the crust.

Make Ahead Chicken Pot Pie

Can you refrigerate Chicken Pot Pie before baking?Yes! Simply make as directed including adding the pie crust. Cover with plastic wrap or foil and store in the fridge for up to 5 days. When you are ready to bake it, preheat your oven, remove from the fridge, and add the egg wash . Bake at 400°F for 20 minutes covered with foil, then remove foil and bake an additional 35-40 minutes until crust is golden brown and sauce bubbling inside.

Do You Cook Chicken Pot Pie Before Freezing

This is such a great questions because yall know I LOVE freezer meals! You can actually do it either way: baked or unbaked. If you freeze an unbaked pot pie, make sure its assembled in a pie plate or dish and cover it well with freezer-safe plastic wrap before placing in the freezer for up to 3 months. You can pop it right in the 375 degree F. oven frozen, and just add about 10 minutes of cook time.

If you freeze an already baked pie, be sure to let it cool completely before freezing for up to 3 months. You can also put it straight into the oven frozen, but only bake for 30 to 35 minutes.

How To Cook Costco Chicken Pot Pie In The Air Fryer

  • Preheat the air fryer at 350°F for about 3 min.
  • Place the frozen Costco chicken pie in the basket.
  • Cook for 20min continually.
  • Then increase the temperature to 400 degrees F for 2 minutes to brown top.
  • Serve and enjoy.
  • Frozen chicken pot pies should be cooked for 20- 25 min at 350°F in the air fryer. For thawed chicken pot pie, it will take about 15 min.

    The Best Homemade Chicken Pot Pie

    DIRECTIONS:

  • In a large pot, add butter, potatoes carrots, onion, celery and garlic. Sauté until tender. Stir in flour until blended.
  • Gradually add broth.Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in peas, 1/2 cup cream, parsley, garlic salt and pepper. Stir in chicken.
  • Spoon into two ungreased 9 in pie plates. In a small bowl, whisk egg and 1 Tbsp or cream, set aside.
  • Roll out the pastry to fit the top of each pie. Place over filling and trim, seal and flute edges. Cut slits in pasty to vent. Brush top of pies with egg mixture.
  • Bake at 375 for 30-35 minutes or until golden. Let stand for 10 mins before cutting.
  • NOTE: You can bake both pies, or cover and freeze one potpie for up to 3 months. To use frozen potpie, remove from the freezer 30 minutes before baking. Cover pie loosely with foil.     Baking Chicken Pot Pie

    Chicken pot pie should generally be baked, uncovered, in the center of a 350 degree oven for 30 40 minutes. The internal temperature should be bubbly, reaching 160 degrees, and the top should be golden brown.

    This recipe fits comfortably into a 10.25 cast iron skillet, but it can also squeeze into a 9 pie plate. Since the filling comes right up to the edge, there is a potential for it to bubble over and make a mess. Make things easier on yourself by placing a baking sheet on the rack below your chicken pot pie to catch any drips, no matter which size pan you use. We all know its easier to clean a baking sheet than to clean the oven.

    If you notice that the top is browning too quickly, cover loosely with aluminum foil.

    Easy Chicken Pot Pie Recipe Variations

    • If you don’t want to use the store-bought pie crust, you can prepare your own homemade pie crust to use with this recipe.
    • Top the pot piewith puff pastry instead of pie crust by following these instructions.
    • For an old fashioned chicken pot pie with a double crust , follow these instructions.
    • Use leftover turkey instead of chicken.
    • Add different vegetables to the filling, such as frozen mixed vegetables, frozen corn kernels, or crisp-tender steamed broccoli.
    • Season the filling with fresh or dried herbs such as thyme, parsley, oregano, rosemary, or chives. Garlic powder would also be a great addition.
    • Brush the top of the crust with an egg wash for an even deeper brown color and a bit of shine.
    • Turn this recipe into individual chicken pot pies! You can divide the filling evenly among individual ramekins or oven-proof bowls and cut the pie crust to fit over each smaller dish. You may need to use 2 pie crusts, since you are cutting the dough and will likely have some waste from the scraps. The baking time will remain about the same.

  • Spray pie dish with non-stick cooking spray. Carefully lay the first pie crust in the dish. Gently press the pie crust so its touching the entire pie dish. Add the pot pie filling.
  • Carefully lay the second pie crust over the pot pie filling. Take scissors and trim any pie crust that is hanging over the sides of the dish.
  • You can close the sides of the pie crust to your preference. The easiest way is with a fork. For the edges I used above, take your index finger and thumb of your left hand and your pointer finger of your right. Push them together to meet and create a point. Repeat all the way around.
  • Whisk one egg in a small bowl and brush the egg over the entire pie crust. Cut 4 holes in the middle of the pie crust so the steam can escape while baking.

    How To Freeze Chicken Pot Pie & Bake It Up Later

    This recipe was one of the first freezer meal recipes I ever developed! In fact, its part of my 50 Freezer Meals in a Day menu and continues to be a family fav today. I usually make 3-4 batches of this easy chicken pot pie freezer meal and stick em all in the freezer for busy nights. You can see more of my freezer meal recipes here.

    Here are some frozen pot pie cooking instruction & tips.

    • If you are planning on doing an egg wash, dont add it before freezing. Instead brush it on right before adding the pie to the oven.
    • To freeze chicken pot pie wrap tightly it in aluminum foil, trying to minimize any air exposure. Then place in freezer. You can then bake it according to my instructions below for the best quality crust and pie.
    • Use a metal or foil pan if going from freezer to a hot oven, as glass pans can shatter.

    How to cook a pie from frozen and how long will it take to cook it?The best way is to take the frozen 9-inch pot pie, cover it in foil and bake it for 30 minutes covered. Then remove the foil and finish baking for another 35-40 minutes until the pie crust is golden brown and sauce is bubbling inside. If you are using a family sized pot pie in a 9Ã13 baking dish this will take longer.

    Can I cook chicken pot pie if its not fully thawed?Yes! You can cook this recipe even if it is only partially thawed. Just cook the recipe as if it was frozen, and watch it often to see if it gets done early.
