Make Two Sizes Of Mini Pies
When I was deciding to share this recipe with you, I couldnt decide what size to make my little pies, so I made both:
- Mini Pecan Pies made in a mini muffin tin
- Small Pecan Pies made in a cupcake pan
They both have the same recipe and same process, you just have to use a different size cookie cutter and one bakes longer.

When our daughter and SIL came up to Dallas from Houston recently, I talked my man into driving half-way home with them on Sunday afternoon so we could all pay a visit to Rattlesnake Ranch Pecans, a beautiful pecan orchard near Crockett, Texas.
What a beautiful drive, and what a fun time we had.
The orchard at Rattlesnake Ranch does its thing while Clint Craycraft and his wife run the pecan store. Its in a perfect location, just across the road. She decorates and runs , while he crunches the numbers and talks pecans with all the store customers.
Other places to find Texas pecans include holiday markets like Neath the Wreath in Plano, Nutcracker Market in Houston, at a cute little store on US-287 in Chillicothe, and, of course, in San Saba, the pecan capital of Texas. Classic Texas Pecan Pie

My dad has been known to steal an entire pecan pie while it is cooling and hide it in his nightstand. However, when required, the family joins forces to sleuth out the location of any and all missing pecan pies, and ceremoniously return them to the family table where they belong. Since we only make this dessert in November and December, we take our annual pecan pie feast seriously.
A Texas Favorite
Purchase store bought pecan pies so we have more on the table? Pshaw. We only eat homemade pecan pies in my family. My grandmother learned how to make pecan pies from her mother, and my mother still makes it using the same recipe. Even though there are new-fangled, modern recipes with chocolate bottom crusts, whiskey maple flavor or coconut sprinkles, at the ranch we only make the same classic recipe every year. Perfection just cant be improved.
The Secret Ingredient
The recipe that we traditionally use is based on an old Karo Syrup recipe that requires heating dark corn syrup, sugar and tempering the eggs before adding the filling to the crust. Most pecan pie recipes today are simpler and dont require a candy thermometer. But the deeply caramelized filling and buttery vanilla scent sets this recipe for old-fashioned pie apart from the rest. The delectable aroma enveloping the kitchen is what the family will remember forever. A store-bought pie just cant do that.

Tips For Easy Removal From The Pan
First, once the pies are baked, immediately check if any mixture spilled over to the pan. This sometimes happens, and its totally fine, but the mixture dries sticky, so make sure and carefully scrape it away from the pan if you notice it.
Second, let them cool completely before removing. Use a butter knife to help loosen the pies and theyll pop right out.

If you need to make your Thanksgiving or Christmas pies ahead of time a pecan pie is a perfect dessert to make ahead and freeze. Just make the pie as directed, cool completely, and freeze. Place the cooled pie in a ziplock pie and remove as much air as you can and freeze.
