Christina Tosis Milk Bar Will Rename Crack Pie
Cambridge, MA When Christina Tosi opened the Harvard Square location of her national bakery chain Milk Bar in February, it filled a niche for local customers with both a sweet tooth and a need to indulge in childlike nostalgia. After two months, many customers described the bakery’s menu offerings with one loaded word “addictive.”
Equating food with addiction is a now familiar ploy in the industry, though not without criticism. Last year, Vices Hilary Pollack castigated the analogy of flippantly comparing food to crack cocaine without taking into consideration its tangible effects, particularly in historically distressed and impoverished communities. Highlighted in the article was Milk Bar itself, which has been offering a buttery concoction referred to as Crack Pie thats become their signature dessert since opening their first shop in 2008.
I baked the pie and the filling never quite set, but it smelled really good, Tosi explained in a 2018 episode of the Netflix series Chefs Table: Pastry. And this Australian cook was like, I dont know what you just did, but this pie is like crack. Its crack pie.
Yet the name change has not been without criticism itself, with anonymous social media users weighing in on Tosis decision as another example of PC retoric and noting that the name of a pie does not affect a drug epidemic.

Crack Pie Is No More As Milk Bar Changes Name Of Famous Dessert
From this day forth, Crack Pie is no more.
The famous pie, served at the New York-based bakery Milk Bar, will change its name, according to a letter written by the bakerys founder, Christina Tosi.
Weve made the decision to stop using the name Crack Pie. Starting today, it will be known as Milk Bar Pie, Tosi wrote. While change is never easy, we feel this is the right decision.
Crack Pie is a butter pie with an oat crust.
The change comes after continued controversy, with the names reported allusion to the addictive nature of crack cocaine, which decimated mostly African-American communities in the 1980s and 90s.
Devra First, food writer for the Boston Globe, wrote a column blasting the name last month.
A bakery would never try to market something called Fentanyl Cake, and the name Crack Pie feels offensively off-key, she wrote.
Other food writers have also written about the name before Firsts column.
Tosi wrote in her letter that showing respect, having integrity and loving the job were the fuel of her employees whose mission is to spread joy and inspire celebration.
The name Crack Pie falls short of this mission, she wrote.
She decided on the name Milk Bar Pie because its been on the Milk Bar menu since day one and that the old name was getting in the way of letting the gooey, buttery slice bring happiness my only goal in creating the thing in the first place.

Milk Bar Renames Crack Pie
Milk Bar, the New York bakery that opened a Cambridge location in February, is making a change. In a memo to her staff, Milk Bar founder Christina Tosi explained her decision to rename Crack Pie one of the bakerys signature dishes Milk Bar Pie, effective Monday.
When we do anything, from implementing a new company policy to creating a new layer cake, we do it because its important to us, Tosi wrote. Our mission, after all, is to spread joy and inspire celebration. The name Crack Pie falls short of this mission. Thats why starting today, Crack Pie will now be Milk Bar Pie.
The renaming comes less than a month after Globe Food writer Devra First wrote a column titled Theres nothing cute about crack pie, in which she argued, The language of addiction is frequently deployed when it comes to food, and its time to stop.
If it seemed funny a decade ago to name a dessert after an addictive drug, the joke was one of privilege. The crack epidemic of the 1980s hurt largely poor, largely black communities, not the people who were heading to the East Village to spend $5 on a slice of pie , First wrote.
Others have made similar arguments, including Grub Streets Chris Crowley and San Francisco Chronicles Soleil Ho, who wrote, No matter how delicious something might be, its effect on me is nothing close to what crack does to people and their families.
Tosi was listening.

Milk Bar Renames Crack Pie For This Important Reason
For over a decade, the Crack Pie from pastry chef Christina Tosis famed New York-based bakery Milk Bar has been one of the citys most beloved desserts. But its name has garnered some backlash because of its percieved insensitivity, and earlier this week Tosi posted a letter on the bakerys website announcing a name change: It will now be called Milk Bar Pie, though it will be made with the same classic recipe.
Milk Bar, which was founded by James Beard Award-winning Tosi in 2008 , is known for its many dessert innovations, including its cereal milk-flavored ice cream.
Crack Pie was one of the eaterys first famous desserts, a buttery pie with an oat-based crust. When the treat was created as part of the opening menu, Tosi and company probably didnt consider that jokingly comparing an addictive food to crack cocaine might be considered insensitive. But recently Milk Bar has been criticized for being blithe in equating a sugary sweet with a deadly drug.
On March 19, for instance, The Boston Globe published a thorough criticism of the pies name. In it, staff writer Devra First called to mind the tragic epidemic of crack cocaine in the 1980s, which mostly affected poor, African American communities not the people who were heading to the East Village to spend $5 on a slice of pie, she wrote.

Momofuku Milk Bar Pie
This pie is a homely little dessert.
But theres a reason it was formerly named crack pie.
Its since been renamed simply Milk Bar Pie, which is a fine name for a pie thats come to be synonymous with Momofuku Milk Bar itself.
It is rich and sweet and salty. Its a pie for the sweet-toothed who like a generous dose of salt in their desserts.
It has enough sugar to bring on a high and crash. So slice it into slivers, and proceed with caution.
First, they omit the corn powder, which is probably not such a big deal.
I assume someone somewhere along the line decided to leave it out because it seems like a strange ingredient for the home cook, but really, its not so hard to find.
All you need is freeze-dried corn and a food processor or coffee grinder or a blender.
The corn powder helps to round out the flavor and firm up the texture, but you can leave it out and leave all the firming up to the milk powder and have a good Milk Bar Pie.
In my opinion, the corn powder is optional, but the freezing is not.
This pie is pretty easy to make, even if some of the steps are unconventional.
Its sugary, oat-y, salty and so freakin good.
What Is Milk Bar Pie
