Homemade Gluten Free Bread Recipe Made EASY! (in Bread Machine)

As with all baking, I recommend using a kitchen scale to properly measure your gluten free flour. This is because using US cup measurements, while Ive provided those measurements, is just not as accurate.

Even measuring the flour properly using the spoon and level method can still not be as accurate as using a kitchen scale. This will ensure that you get the same gluten free bread over and over again. Ive personally made this recipe upwards of 10 times with the same results each time.

You can purchase a kitchen scale via Amazon for just $10. Ive used a $10 one for years before punching my OXO kitchen scale . Youll use it over and over again for all of your baking needs. Plus, no need to clean tons of measuring cups!

Letting The Gluten Free Bread Rise

To speed up the rising process, some people recommend letting the dough sit in a warm oven. I want to make it clear: I absolutely never recommend using an oven to proof bread.

Believe me, its not because I like sitting around waiting for my bread to rise. Instead, the reasoning is very simple: When you use a warm or hot oven to proof bread, you could easily kill the yeast, and dead yeast = no rise.

For best results when making this easy gf bread recipe, please dont use a warm oven for proofing. Instead, choose a naturally warm, draft free spot and let the yeast do its thing.

Can I Freeze Gluten

Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.

You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.

Can I Make This Recipe Without A Bread Maker

I guess it is possible to make this recipe without a machine, but I havent tried. I suspect the texture would be different, not least because a bread maker will knead consistently, and rise and bake to consistent temperatures, which may be less-easy to achieve using a kitchen and oven.

However, if you dont have a bread-machine and want to make incredible gluten free wholemeal bread, use one of my hand-baked recipes .

Gluten Free Bread Ingredients & Substitutions:

Easy Gluten

Millet Flour: Millet flour is such a wonderful gluten-free flour to bake with. Its high in protein, which actually helps to yield a really tall and fluffy gluten-free sandwich bread. This is why I tend to prefer to bake gluten-free bread with millet flour . If you dont have millet flour, you can also substitute in sorghum flour. However, I prefer millet!

Tapioca Flour: Sometimes, tapioca flour is referred to as tapioca starch. Bobs Red Mill has both, and they are identical, so you can use either interchangeably. This helps our gluten free bread to have a soft texture its really quite amazing! You can substitute in arrowroot starch if you cant find tapioca, but the best results will be with tapioca.

Buckwheat Flour: This helps to not only provide a bit more structure to our gluten free sandwich bread recipe, but to also add a depth of flavor. Buckwheat has a slightly nutty flavor without containing any nuts, and the result tastes almost like a hearty rustic sandwich bread. You can also substitute in more millet flour this would be especially good for making vegan French toast!

Instant Dry Yeast: I strongly recommend using instant dry yeast over dry active yeast. The reason being is that your gluten free dough will rise so much faster than using dry active yeast. Not only will you be able to make your gluten-free bread recipe faster, but youll also know whether or not the yeast is actually working with the gluten free flour blend!

Salt: You can use salt or sea salt.

What Breadmaker Do You Use To Make Your Gluten

As I said earlier, Ive worked with Panasonic to promote their breadmakers for years, but this is not a sponsored post.

However, that does mean that of course, I use a Panasonic breadmaker! More specifically, the Panasonic 2540 breadmaker.

Before they kindly gifted me with the fancier, newer model , I used the Panasonic 2522 breadmaker.

I can vouch for both being perfect for this recipe because Ive tested in both plus, they both have a gluten-free setting, which I use for this recipe.

What Bread Machines Are Best For Gluten Free Bread

There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.

Making Gluten Free Bread

  • Add the sugar and yeast to your warm water and stir set it aside for 5-10 minutes but no longer.
  • While your yeast is proofing, in the bowl of a stand mixer fitted with the paddle attachment, add the flours, flax seed meal, xanthan gum, baking powder, and salt. Turn your mixer to low and mix just until combined.
  • Add the oil, egg whites, vinegar, and proofed yeast mixture.
  • Turn the mixer to a medium speed and mix for an additional 2 minutes. The dough will be thick and sticky. Turn off the mixer and scrape down the sides.
  • Using a rubber spatula, add the dough to your prepared loaf pan making sure to fill in the corners of the pan and level the top. Wet your fingers and smooth the top.
  • Cover the dough with a lightly oiled piece of plastic wrap and allow it to rise in a warm place for 45 to 60 minutes, or until it has risen slightly above the loaf pan.
  • When the dough is near the top of the pan, preheat your oven to 350°F. Remove the plastic wrap and bake for 60 â 65 minutes. Half way through baking, cover the bread loaf with a piece of foil to keep it from over-browning.
  • Remove the loaf from the oven and let cool completely before slicing. Slice the entire loaf and store in a container at room temperature for up to 4 days or in the freezer for up to a month.

As you can see from my photos, this recipe produces a wonderful texture that is similar to traditional white or whole wheat bread. Its not dry and crumbly, nor is it moist to the point where it falls apart in your hand after you attempt to cut it.

    What If My Bread Machine Does Not Have A Gluten

    If your bread machine does not have a gluten-free setting, you will want the setting that only has one mixing cycle . Gluten-free bread does not need a second rise.

    If you dont have a feature with only one mixing cycle, try to see if you can override the pre-programmed settings for a 20-minute mix cycle, 1-hour rise cycle, and 1 hour-bake cycle.

    You can also check out your bread machines manufacturer website to see if they have a gluten-free setting suggestion for their bread machine. Some bread machine makers have instructions for a gluten-free bread setting for their older models.

    Why Isnt My Bread Rising

    There are 2 possibilities from my experience. The first is that your yeast is dead or that the water you used was too warm or too cool.

    The second is that youre not allowing the bread to rise in a warm enough place. During the summer, it works fine on the counter if its covered. However, during the cooler months, I like to let my bread rise in the oven right next to the oven light. It gives off just enough warmth to help the bread rise.

    Warm Almond Gluten Free Bread Machine Recipe

    Wet Ingredients:1/4 cup butter or earth balance natural margarine

    Dry Ingredients:1 1/3 cup instant nonfat dry milk1 cup white rice flour1 cup almond flour plus1/2 cup potato starch flour1/4 cup brown sugar3 1/2 teaspoon xanthan gum1/2 teaspoon salt2 1/4 teaspoons gluten-free active dry yeast

  • Add blanched almonds to a food processor or blender to make almond flour .
  • In one bowl mix all wet ingredients and add to machine.
  • In a separate bowl mix all dry ingredients and add to machine.

    Gluten Free Vegan Bread Machine Loaf

    These are bold claims. And lets be clear there are those who said it couldnt be done. Give up on the bread maker I was told They are utterly pointless when it comes to making gluten free bread

    To be fair, there are some revolting-looking specimens across the internet pertaining to be bread. You know the images The texture that looks brittle, hard, inflexible, flat-topped, mouse-nibbled, with the tell-tale crumb that looks nothing like bread. I am quite shocked that appliance companies in particular, have promoted the publication of some such unappetising recipes as show-casing what a GF bread maker can do.

    But maybe Im guilty too My early loaves look a little similar. Although better than many out there, even my previous gluten free breadmaker brown breadhas the signs. It makes amazing toast, but honestly? We can and should expect better!

    What Other Key Equipment Do I Need To Make This Recipe

    • It is essential that you use accurate measuring scales. A few grams either way on some of the ingredients will significantly alter the success of the bake. Good scales are worth their weight . I use Heston Blumenthal Dual Platform Scales, because they give the option to get accurate results using a micro-scale for light-weight ingredients such as yeast and salt.

    • The wet ingredients need a quick whisk before transferring to the bread machine. A hand whisk is all that I use and always, my which is brilliant for batters.
    • Lastly and to make absolutely sure all ingredients end up in the final mix, I use a spatula-spoon to properly scrape the mixing bowl.

    Easy Basic Vegan Bread

    This vegan bread is easy to make at home. You will also save money by making it instead of buying vegan bread. Also, bread from the store may have some preservatives that you need to avoid.     Helpful Tips For Making Gluten Free Bread

    3 Gluten Free Bread Recipes! NO YEAST OR BREAD MACHINE!

    Tip 1: You can leave out the xanthan gum if your brand of gluten-free flour contains it. Check the ingredient list to make sure. You can, however, still add a little xanthan gum without impacting the end result significantly if you’d like.

    Tip 2: There is a short preheat at the beginning of the gluten-free cycle . So don’t worry if you don’t see the machine actively working during this time.

    Mix-Ins: Seeds, nuts, and other optional mix-ins must be added with all other ingredients. Add mix-ins after the yeast, not during the mix-in signal.

    Storing: Store homemade gluten-free bread in a bread bag for up to 3 days. After this, it won’t be good for sandwiches but can still be used for toasting or making breadcrumbs. This recipe is freezer-friendly for up to 3 months when stored in plastic freezer-safe bags. Slice prior to freezing for easy individual thawing.
