Why Does My Banana Bread Fall In The Middle
If you find that your banana bread sinks in the middle as it cools, it’s likely because the bread was not completely cooked through. Banana bread forms a nice, dark crust on the outside that makes the loaf look “done” — even if the inside is still slightly raw. Before removing the bread from the oven, insert a toothpick deep into the very center of the loaf. If it comes out with any wet batter on it, return the bread to the oven to finish baking.
Nuts Or Chocolate Chips
My children cant stand nuts so we add in semi-sweet chocolate chips to our banana bread, but you can add in the following to make it your own!
Chopped pecansWhite chocolate chipsCaramel bits
You can also add a cinnamon sugar coating on top of your loaf and leave out the chocolate chips or nuts if you wish.
Once the cake batter is poured and spread into your loaf pan, sprinkle evenly with a cinnamon sugar mixture: 2 tablespoons white granulated sugar and 1/2 teaspoon ground cinnamon. The result is a crunchy, flavourful top with a decadent bakery-style finish.

How Many Cups Is 1 Mashed Banana
This can be tricky! If a recipe calls for 3 bananas, how much is that? We all know that measurements are important in baking, so the difference between a very small banana and a very large banana can be significant when baking a loaf of banana bread.
My recipe calls for 1 ½ cups of mashed banana. One large banana yields about ½ cup mashed, so I used 3 large bananas for a total of about 1 ½ cups. If you’re working with small bananas, you’ll need at least 4 . Measuring is always the safest way to make sure that your banana bread turns out perfectly moist, sweet, and delicious!
Freezing Bananas With The Peel
You can also freeze bananas with the peel, but its not my favorite way to do it. In the process of freezing, the frozen banana peel will turn very dark. Its still safe to eat, but it doesnt look very appetizing.
The banana will also turn very mushy. And even though you want mushy bananas for banana bread, it also makes it harder to remove the peel as its thawing.
So perfectly safe to freeze them with the peel in a freezer bag, but not quite as easy or good looking.

The Secret To Super Moist Banana Bread
The secret to getting moist chocolate chip banana bread is really just a couple simple ingredients. The main two being melted butter and Greek yogurt.
Using melted butter, as opposed to room temperature, helps to soaks up all the flour which gives you that smooth texture. The Greek yogurt adds even MORE moisture while still providing structure. Its my secret ingredient in so many of my dessert recipes.
Another reason why Greek yogurt works so well here is because its flavor. Greek yogurt is slightly sour which helps to balance out the sweetness of the bananas, chocolate, and sugar.
Its also very thick and contains less water than regular yogurt. This is the reason why I love baking with it so much, it provides tons of moisture without thinning the batter too much.
But if you dont have Greek yogurt available near you, sour cream will also do the trick.
We cant forget about the bananas. You have to add just enough to get that strong flavor but too much can turn your banana bread into banana pudding . Getting the perfect balance of flour, butter, yogurt and banana is the key to getting deliciously moist chocolate chip banana bread.

How To Make This Banana Bread
This bread is a riff on Elises classic Banana Bread with just a few adjustments to accommodate the peanut butter.
I use a creamy, commercial brand of peanut butter here. I dont usually bake with natural peanut butter because it tends to take a little more finessing to incorporate. I beat the peanut butter a bit before mixing it into the batter, just like you often do with cream cheese. I want it to soften and smooth out so it will incorporate more easily.
You could use chunky, but I prefer creamy. It shouldnt cause any issues if you were to substitute one for the other.
Since peanut butter can weigh down a batter, I also added some milk to the recipe to keep the loaf from being too heavy.
You can use mini or regular chocolate chips here, or even chopped bar chocolate. Its really your preference. If you do use bar chocolate, just know it will melt more readily than chips . I avoid topping the batter with bar chocolate, because it can melt off and burn as it bakes. Just add some to the top when it comes out of the oven.

Freezing Bananas Without The Peel
The best way to peel bananas is to remove the peel first. You can freeze it whole by just placing it in a freezer bag after youve removed the peel.
When youre ready to use it, just remove as many bananas as you need for your recipe. If youre using it for a recipe like this banana bread, youll want your bananas to thaw first before using them. Just place them on a plate at room temperature and once theyre thawed, you can go ahead and start baking.
Using The Double / Triple Function In The Recipe Card
You will notice that there is a ‘1X’ ‘2X’ ‘3X’ button in my recipe card. This can be used for doubling or tripling a recipe. However, please note that this only doubles the ingredient quantities in the ingredients list and NOT in the method. If there are quantities or pan sizes in the method of the recipe , you will need to scale this number manually. It will also not change the baking time in the recipe so you will need to adjust this yourself too. It is always a good idea to read through a recipe fully before doubling it just to check this. If you would like to scale this recipe or convert for another pan size, use my calculator!

Why Is This The Best Banana Bread
Let me explain why this is the last banana bread recipe youll ever need. First off, its outrageously moist . This recipe has butter as well as sour cream, which not only make it unbelievably soft, they also give great flavor, as opposed to a lot of banana bread recipes that are made with oil. Of course I use walnuts in this recipe, that you can omit if you must, but I urge you not to, at least the first time you make this recipe.
BUT the real secret to this recipe on supreme moistness and banana flavor iswait for itSLICED BANANAS. You add some mashed and some thinly sliced. Is your mind blown yet?
Adding the sliced bananas into the bread leaves little pockets of banana that you wouldnt normally have when its mashed. Not enough that it is mushy, that wouldnt be good just the exact perfect thing your banana bread has been missing all along. Im telling you, this is legit.

Another important tip is to not over bake it. Take it right out as soon as its done and itll be a moist bread, otherwise it can dry out.
